3 cups chopped celery
1 cup chopped onion
1 cup ketchup
1 cup barbecue sauce
1 cup water
2 tablespoons white vinegar
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 boneless beef chuck roast (3 to 4 pounds), trimmed and cut in half
18 hamburger buns, split

Steps:

  • In a 5-qt. slow cooker, combine the first 12 ingredients. Add roast. Cover and cook on high for 1 hour. Reduce heat to low and cook 6-8 hours longer or until meat is tender. , Remove roast; cool. Shred meat and return to sauce; heat through. Using a slotted spoon, fill each bun with about 1/2 cup of meat mixture.

1/4 cup chopped celery
2 tablespoons chopped onion
2 teaspoons butter
2/3 cup reduced-sodium tomato juice
4-1/2 teaspoons ketchup
1 tablespoon brown sugar
2 teaspoons lemon juice

1 teaspoon prepared mustard
1 to 2 drops hot pepper sauce
1-1/2 teaspoons cornstarch
1 tablespoon water
1/4 pound shaved lean deli ham

Steps:

  • In a small saucepan, saute celery and onion in butter. Add the tomato juice, ketchup, brown sugar, lemon juice, Worcestershire sauce, mustard and hot pepper sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes., Combine the cornstarch and water until smooth; stir into tomato mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Add ham; stir until coated. Cook 5 minutes longer or until heated through. Serve on rolls.

This is adapted from a crockpot cookbook I have. The original recipe contained water and cooked on high. We found that the meat is better cooked on low, and that the addition of the water makes it too soupy. We enjoy this on onion rolls from the bakery of our local grocery store. Sometimes we even spread the rolls with garlic butter and toast them under the broiler before loading with the meat. Great with Recipe #71203, #71203 or my Recipe #247747, #247747.

3 cups celery, chopped (I dice this pretty fine, as I'm not a big fan of celery and don't want to find recognizeable chunks )
1 cup onion, chopped
1 cup ketchup
1 cup barbecue sauce
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
1 teaspoon chili powder
1 teaspoon salt (I usually omit this)
1/2 teaspoon pepper
1/2 teaspoon garlic powder (I usually just throw in a healthy spoonful of the jarred minced garlic)
3 -4 lbs boneless chuck roast (trim any visible fat off first, to avoid having it liquified in your sandwich later)
14 -18 hamburger buns
pickle (optional)

Steps:

  • Combine all ingredients except roast, buns, and pickles in crock pot. Mix well.
  • Add roast. Roll the roast around to coat with the other ingredients.
  • Cover. Cook on Low 8-10 hours.
  • Remove roast. Cool enough to shred meat with two forks. Depending on the direction of the grain of the meat, you may want to cut into smaller pieces with a knife before shredding. The last time I made this, I had very long shreds of meat that didn't stay on the bun very well when I bit into it, because the grain ran weird on the roast, and I just shredded it anyway.
  • Return meat to sauce. Heat well.
  • Serve on buns with pickles, if desired.

Chipped Ham (aka Chip Chop Ham, Chipped Chopped Ham, Chip Chopped Ham) is deli chopped ham thinly shaved ("chipped") and combined with a tangy BBQ sauce and heated through in the slow cooker or on the stove top, then piled high onto fresh buns for a warm and satisfying sandwich like no other.

2 pounds chopped ham (thinly shaved)
BBQ sauce (Isaly's or recipe below)
10 - 12 buns
1 TBSP unsalted butter
1 TBSP all purpose flour
1/2 cup water
1/4 cup white vinegar (can use apple cider vinegar)
1 cup ketchup
3 TBSP brown sugar
1 TBSP Worcestershire sauce

Steps:

  • If making your own BBQ sauce, prepare that first. In medium to large sauce pan on medium heat, melt 1 TBSP unsalted butter. Sprinkle on 1 TBSP all purpose flour and cook, stirring constantly, for one minute. Add 1/2 cup water, 1/4 cup white vinegar, 1 cup ketchup, 3 TBSP brown sugar, and 1 TBSP Worcestershire sauce to flour mixture and stir constantly on medium heat until mixture thickens. It should still be somewhat thin, but thicker than water. At this point, you can take off heat and store in refrigerator until ready to use it, add in the ham (if making this dish in a pan vs a slow cooker), or add it to the slow cooker.
  • If preparing chipped ham in a pan, add the ham to the BBQ sauce and stir to combine. Continue to heat until heated through.
  • If preparing chipped ham in a slow cooker, combine the homemade BBQ sauce or the jarred BBQ sauce with the ham. Heat on LOW for about 1 1/2 hours, or HIGH for about an hour, stirring occasionally until heated through. (May heat quicker depending on whether the BBQ sauce is hot or not when combining).
  • Serve on warm, on buns.

Steps:

  • In large saucepan, combine all ingredients and bring to a boil over medium heat.
