16 bamboo skewers, soaked in water for 30 minutes
1/2 teaspoon grated tangerine zest or 1/2 teaspoon orange zest
1 cup tangerine juice or 1 cup orange juice
1/2 cup mirin (you can substitute 1/2 c white wine with 1/4 c sugar)
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon sugar
3 teaspoons grated gingerroot
2 garlic cloves, chopped
1 teaspoon cornstarch
1 teaspoon water
4 chicken breasts
salt & pepper
oil

Steps:

  • Line a broiler pan with foil and set the broiler to high.
  • Combine tangerine juice, mirin, soy sauce, the 2 sugars, ginger, garlic in a saucepan and bring to a simmer, cook until sauce reduces by half.
  • Mix cornstarch and water in a small bowl, add to sauce, cook stirring until thickened.
  • Pour 1/3 of the sauce in a bowl and set aside.
  • Cut chicken breasts lengthwise into quarters.
  • Thread each piece onto a skewer.
  • Brush with oil.
  • Place in broiler pan; season with salt and pepper.
  • Broil for 3 minutes, baste with sauce, broil, turn over, baste with more sauce, keep turning and basting until chicken is cooked through, 5-10 minutes.
  • Serve with reserved sauce.

I have been making this version of Teriyaki Chicken for years. It is great both indoors and out. We like this with Wild Rice and either stir fried vegetables or plain old green beans. Prep/Cook times does NOT include brine or marinade times.

4 boneless skinless chicken breasts
1/3 cup teriyaki sauce
1 (20 ounce) can pineapple slices (drain and reserve juice)
2 teaspoons ground ginger
2 teaspoons dry mustard
2 teaspoons garlic powder
1 tablespoon fresh ginger
3 tablespoons brown sugar
1/4 cup soy sauce
1/4 cup teriyaki sauce
2 large sweet onions, sliced

Steps:

  • Brine chicken in your favorite brining recipe for up to 4 hours. Rinse and pat dry. Place in glass dish and cover with Teriyaki sauce. Cover and let marinade for 1 hour.
  • Meanwhile, in small saucepan combine reserved pineapple juice, dry ginger, dry mustard, fresh ginger, garlic powder, brown sugar, soy and teriyaki sauces. Bring to a low boil and let cook approximately 5-8 minutes. Remove from heat and set aside.
  • Cook chicken on hot grill. Turn once and then brush with cooked sauce. Cooking time varies per the size of the chicken breasts. Continue to baste with sauce.
  • When chicken is almost done, add onion & pineapple slices. Brush with cooked sauce just till heated through.
  • Remove from grill and serve hot.

Delicious, gourmet, and pretty dang easy. Sometimes I like to use fresh mint in place of the basil. It may seem like a lot of ingredients, but it's still quick, easy, and really affordable.

1 lb of boneless skinless chicken breast tenders
1 cup low sodium soy sauce
1 tablespoon of grated gingerroot
3 garlic cloves, mashed and minced
2 limes, juice and zest of, divided
1/2 cup honey
1 tablespoon sesame oil
1 cup diced pineapple, in plastic boxes
1 jalapeno, seeded and halved
1/4 small onion
6 leaves fresh basil
salt, to taste

Steps:

  • Make a marinade of soy sauce, ginger, garlic, half of the lime juice and zest, honey, and sesame oil in a large bowl. Add chicken, and stir to combine. Place in the fridge for 30 minutes, and place remaining ingredients in blender. Chop until pineapple is a smaller costintency, and other ingredients get chopped finer as well. Do not puree. Preheat grill to medium-high heat, and cook chicken for 5 minutes on each side. Serve on a large plate with the pineapple salsa in a bowl right besides it. Serve hot.

1/3 cup soy sauce
2 teaspoons cornstarch
1 tablespoon peanut or canola oil
1 1/4 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 cup ready-to-eat baby-cut carrots, cut in half lengthwise in half
2 cups fresh broccoli florets
4 oz whole fresh mushrooms, cut into quarters
1 can (8 oz) sliced water chestnuts, drained
2 tablespoons water
1/4 cup finely chopped fresh cilantro

Steps:

  • In small bowl, mix juice, soy sauce and cornstarch until cornstarch is dissolved; set aside.
  • In 12-inch wok or nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 4 to 5 minutes, stirring frequently, until no longer pink in center. Add carrots; cook 2 to 3 minutes. Add broccoli, mushrooms, water chestnuts and water; cook 3 to 4 minutes longer, stirring frequently, until vegetables are crisp-tender.
  • Reduce heat to low. Stir juice mixture, then stir into chicken mixture. Cook and stir 1 minute or until sauce is slightly thickened. Sprinkle individual servings with 1 tablespoon cilantro.

1/4 cup red wine vinegar

Steps:

  • Brush grill rack with oil. Prepare barbecue(medium heat). Puree molasses and next 7 ingredients in blender until smooth. Season with salt and freshly ground black pepper. Spoon 1/4 cup sauce into pie dish. Add chicken; turn to coat. Marinate 15 minutes.
  • Brush plantains with oil; sprinkle with salt and pepper. Grill plantains and chicken, skin side down, 8 minutes. Turn chicken and plantains over. Grill until chicken is cooked through and plantains are tender, 8 minutes for chicken and 4 minutes for plantains. Serve plantains and chicken drizzled with remaining sauce.
