EASY WHITE SANDWICH BREAD



Easy White Sandwich Bread image

This Easy White Sandwich Bread is the easiest homemade bread recipe that's hearty and tender, and turns out perfectly every time with the best golden crust!

2 1/2 cups lukewarm water
1 tablespoon instant yeast ((or use active dry yeast))
1 tablespoon honey (or other vegan honey substitute)
6 1/4 cups all purpose flour
1 teaspoon salt
1 egg
1 tablespoon water

Steps:

  • Add the water, yeast and honey to the bowl of your stand mixer and mix with a fork just until the yeast is moistened and the honey is dissolved.
  • Let sit for about 4-5 minutes.
  • Add the flour to the bowl of the stand mixer on top of the water and yeast mixture and then add the salt.
  • Turn the mixer on low speed and mix until a soft dough forms.
  • Continue mixing on medium-low speed and let the mixer knead the dough for about 4 minutes. The dough should have formed a soft ball and the sides of the bow should be clean. Only if the dough is too wet and sticking to the side of the bowl, add a tablespoon or two more flour as it kneads.
  • Shape the dough with your hands into a ball and place it back into the bowl (oil the bowl, if you wish). Cover the bowl with plastic wrap and let rise for 60 minutes in a warm, draft-free place.
  • Grease 2 loaf pans with butter or a high-quality non-stick baking spray.
  • After the dough rises, punch it down and turn it out onto a floured work surface and divide it in half.
  • Roll each piece of dough into a ball with your hands, eventually shaping it into an oblong round shape.
  • Place each piece of dough into one of the greased loaf pans and cover the pans with a clean kitchen towel.
  • Let them rise again in a warm, draft-free place for about 20 minutes.
  • Preheat your oven to 400 degrees Fahrenheit.
  • Whisk together the egg and water to make the egg wash (if using).
  • Brush the egg wash over the tops of the loaves and bake at 400 degrees Fahrenheit for about 25-35 minutes until the tops of the loaves are a deep golden brown colour.
  • After baking, remove from the pans and place the loaves on a wire rack to cool completely.
  • Slice after the loaves have cooled completely to room temperature and use to make your favourite sandwiches or serve alongside soups or stews.

This recipe is from King Arthur Flour. This makes a great bread! This is the recipe from their website, I actually did not have the bread improver it calls for, but if you add a 1/4 vital wheat gluten I think it does the same thing, because it came out great when I made it (if you add the wheat gluten, then subtract 1/4 cup whole wheat flour) I also used their grain mix instead of the sunflower seeds and walnuts, but I'm sure whatever you like will taste great. 1 1/2 cups lukewarm water
3 tablespoons olive oil
5 tablespoons honey (or molasses, or maple syrup)
3 1/2 cups king arthur organic whole wheat flour
1 tablespoon king arthur whole-grain bread improver (optional)
1/4 cup sunflower seeds, chopped
1/4 cup walnuts, chopped
1 1/2 teaspoons salt
1 1/2 teaspoons instant yeast

Steps:

  • Combine all of the ingredients, and mix them till you have a shaggy dough.
  • Let the dough rest, covered, for 20 minutes, then knead till fairly smooth.
  • Allow the dough to rise, covered, for 1 to 2 hours, or until it's puffy and nearly doubled in bulk.
  • Gently deflate the dough, shape it into a log, and place it in a lightly greased 8 1/2 x 4 1/2-inch bread pan.
  • Cover the pan with a proof cover or lightly greased plastic wrap, and allow it to rise for about 1 hour, till it's crowned about 1 inch over the rim of the pan.
  • Bake the bread in a preheated 350°F oven for 45 minutes, tenting it lightly with aluminum foil for the final 20 minutes of baking.

Yield one 8 1/2-by-4 1/4-inch loaf of sandwich bread

1 1/4 cups warm water (100˚ F to 105˚ F)
1 1/4-ounce packet active dry yeast (about 2 1/4 teaspoons)
2 tablespoons sugar
3 cups all-purpose flour, plus more for kneading
1/2 cup whole-wheat flour
1/4 cup dry milk powder
1 1/2 teaspoons salt
1/4 cup vegetable oil, plus more for the bowl and pan

Steps:

  • Combine the water, yeast and sugar in a liquid measuring cup; stir gently to mix. Let stand until foamy, 5 to 10 minutes.
  • Whisk the 2 flours, milk powder and salt in a large bowl. Make a well in the middle; add the yeast mixture and vegetable oil and stir to make a shaggy dough. Bring the dough together with your hands, turn out onto a lightly floured surface and knead until springy and smooth, 6 to 8 minutes; add more flour, 1 tablespoon at a time, if the dough is too sticky.
  • Transfer the dough to a lightly oiled medium bowl, turning to coat in the oil. Cover with a kitchen towel or plastic wrap and set aside in a warm place until nearly doubled in size, about 1 hour.
  • Form the loaf: Lightly punch down the dough, then transfer to a clean surface. Form the dough into a wide smooth 8-inch log with your hands, tucking the ends underneath. Transfer to a lightly oiled 8 1/2-by-4 1/2-inch loaf pan; loosely cover with plastic wrap. Set aside until the dough rises 1 inch above the pan, about 1 hour.
  • While the dough rises, preheat the oven to 350˚ F. Bake the bread, rotating the pan halfway through the baking time, until the loaf is golden brown and sounds hollow when tapped, 30 to 35 minutes. When cool enough to handle, remove the bread from the pan to a rack and let cool completely.

1 c + 2 Tbsp warm water (90-100degrees)
2 Tbsp Brown sugar
2 Tbsp honey
1/4 c olive oil
1 tsp salt
1/4 c dry milk
2 c wheat flour
1 c unbleached flour
1 Tbsp vital wheat gluten
2 1/2 tsp active dry yeast

Steps:

  • If using a bread machine, add ingredients in order listed. If doing a timer on machine, add milk to top or middle of mix. Set machine on dough cycle. Machine will do first rise. Punch down and shape lightly and place in buttered or sprayed loaf pan. Cover with a towel and let rise. If mixing by hand, mix water sugar and honey and add yeast till dissolved. Add other ingredients, beginning with oil. Rise, punch down, shape lightly and place in buttered or sprayed loaf pan. You can butter top of loaf or spray with olive oil to make it a softer crust. After second rise, bake at 350 for 30 minutes. Cool completely before slicing. *Vital wheat gluten gives elasticity to bread and keeps it from being crumbly. *If it is cold in the house, turn oven to 170 degrees for about 5 minutes. Turn off, check to make sure it is warm but not hot inside and check bread in one hour. My loaves are usually ready by the first hour or I did something wrong. If you have to reheat the oven, take the bread out before you heat it.

  • Whisk the warm water, warm milk, yeast, and sugar together in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to sit for 5 minutes.
  • Add the butter, salt, and 1 cup flour. Beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add another cup of flour. Beat on medium speed until relatively incorporated (there may still be chunks of butter). Add the remaining flour and beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. *If you do not own a mixer, you can mix this dough with a large wooden spoon or rubber spatula. It will take a bit of arm muscle!*
  • Keep the dough in the mixer and beat for an additional 2 minutes or knead by hand on a lightly floured surface for 2 minutes. (See video tutorial above if you need a visual of kneading dough by hand.)
  • Lightly grease a large bowl with olive oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size.
