CINNIMON PORTUGUESE SWEET BREAD
My grandfather owned and ran a Portuguese bakery for thirty years, these are derived from his recopies, I have tweaked some, I also cook different kinds and nationalities of food and will slowly post, most of some of my recipes go back 30 to 40 years.

Steps:
- 1. Add butter and milk warm to 110 degrees( as with any recipe or directions read the entire list first)
- 2. Add all the rest of ingredients in a mixing bowl with a hook adapter, or bread hook
- 3. One thing I did not add to ingredients is flour, it varies, I usually start with about 7 cups, mix until fully incorporated, add flour as needed until it just comes off the side of the bowl. Turn onto floured surface and need till smooth (you will get it after a few tries, if tour not familiar with bread dough. I usually weigh it and divide in three equal parts, caver with towel and let rise until it doubles.
- 4. Mix the sugar and cinnamon together, working with the last three ingredients.
- 5. One at a time, take each dough ball and flatten, rub with softened butter sprinkle with cin-sugar mixture, roll up tightly and place in bread pan, do this to all 3. make 3 light slices on top of each, brush with an egg water mixture, place towel over and lit rise, at least double.
- 6. Preheat oven to 400, place bread in middle rack and bake for 22 minutes, ovens do vary but this timing should work for all ovens, if using a convection oven bake at 350 for twenty minutes. Let cool in pan for twenty minutes. awesome for French toast, and great just toasted with butter. hope you all enjoy.
CINNAMON ROLL WREATH RECIPE BY TASTY
Here's what you need: premade pizza dough, granulated sugar, brown sugar, cinnamon, butter, cream cheese, butter, vanilla extract, powdered sugar

- Preheat the oven to 350°F (180°C).
- In a medium bowl, combine the granulated sugar, brown sugar, cinnamon, and softened butter and mix until it becomes a spreadable paste.
- Roll out the pizza dough and evenly spread the cinnamon filling over it.
- Roll the dough back up into a tube.
- Cut the tube in half lengthwise.
- Twist the dough to form one long braid.
- Bring both ends together to create a circular shape.
- Bake for 35 minutes, or until the dough is cooked through.
- In a medium bowl, beat together the cream cheese, melted butter, and vanilla with a hand mixer. Add the powdered sugar and beat until smooth.
- Drizzle the glaze over the cinnamon wreath.
- Enjoy!

NACHOS

- Lay the whole tortilla chips in an ovenproof dish. Sprinkle over the cheese, add jalapeno slices of using and repeat the process until you have 3 layers. Bake until the cheese has melted.
CINNAMON TWISTS

Steps:
- Mix flour, butter (or marg), and baking powder like a pie crust.
- Add milk and eggs.(best to mix the milk and eggs together).Add about 3/4 of the milk mixture to the flour mixture first, since you may not need all of the milk mixture. (This would be like a pie crust)
- Mix well.
- Divide into 10 balls.
- Combine the sugar and cinnamon.
- Sprinkle some sugar/cinnamon mixture on counter.
- Place 1 ball of dough in sugar/cinnamon and roll into a circle, be sure to have sugar mixture on the top as well.
- Cut into 8 wedges.
- Roll up each wedge starting at the wide end.
- Place on an ungreased cookie sheet.
- Repeat with the remaining balls of dough.
- Bake at 375°F for 20 minutes.
- Note: Each wedge will be about 1 1/2" at the wide end.
- You may have more sugar mixture than you need. That all depends on how much mixture you like on the wedges.
- Prep time will vary.

- In a small bowl, dissolve yeast in warm water. In a large bowl, combine eggs, butter, sugar, salt, yeast mixture and 3 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a very soft dough (dough will be sticky). Do not knead. Cover with plastic wrap; refrigerate overnight., In a small bowl, mix brown sugar and cinnamon. Turn onto a floured surface; divide dough in half. Roll 1 portion into a 16x12-in. rectangle. Spread with 1/4 cup butter to within 1/2 in. of edges; sprinkle evenly with half of the brown sugar mixture., Roll up jelly-roll style, starting with a long side; pinch seam to seal. Transfer to a parchment-lined 12-in. pizza pan or 15x10x1-in. baking pan, seam side down. Shape into a ring; pinch ends together to seal. (Filling may leak slightly during baking; be sure to use a rimmed baking pan.), Using kitchen scissors, start at outside edge and cut two-thirds of the way through the ring at 1-in. intervals. Separate sections slightly and twist to show filling. Repeat with remaining dough and filling., Cover with kitchen towels; let rise in a warm place until almost doubled, about 1 hour. Preheat oven to 375°., For egg wash, in a small bowl, whisk egg and water until blended; brush over wreaths. - For the dough: Warm 1/2 cup water and the milk in a small saucepan over low heat until a thermometer registers 100 to 110 degrees F. Remove from the heat and sprinkle in the yeast and then a pinch of granulated sugar. Set aside undisturbed until foamy, about 5 minutes.
- Whisk together the salt, nutmeg, 2 3/4 cups of the flour and the remaining granulated sugar in a large bowl.
- Beat together the melted butter, vanilla and egg yolk in a stand mixer fitted with a whisk attachment on medium high until combined. Add the yeast mixture and continue to mix on low until combined. Add the flour mixture and mix on low until a thick and slightly sticky dough forms. Once the dough comes together, switch to the dough hook and knead on medium speed, adding up to 1/4 cup more flour if needed, to make a soft, smooth ball that sticks to the hook, 3 to 4 minutes.
- Coat a large bowl generously with cooking spray. Add the dough, turning to coat. Cover with plastic wrap and let rise at room temperature until doubled in size, about 1 hour. (The dough can also be tightly wrapped and refrigerated overnight. Let it come to room temperature before proceeding with the recipe.)
- For the filling: Combine the butter, granulated sugar, flour and cinnamon in a food processor and pulse until crumbly. Set aside.
- On a floured surface, roll out the dough into a 10-by-18-inch rectangle. Sprinkle the butter mixture over the dough, leaving a 1-inch border along the top edge. Tightly roll the dough into an 18-inch log. Pinch to seal at the seam and then put on the counter seam-side down. Form the log into a circle, pinching the ends together. Squeeze and roll the dough if needed so it is an even width throughout.
- Transfer the log to a parchment lined-baking sheet. Cut 16 slits across the log, about 1 inch apart; each slit should go about three-quarters of the way through the log so that it is still completely intact. Bend about a quarter of the log by turning some of the newly cut "tabs" out so that the pinwheels of filling are facing up. Continue turning the "tabs" out and bending the log until you have a ring. Butt the ends up against each other. Loosely cover the wreath with plastic wrap sprayed with cooking spray and let rise until doubled in size, about 30 minutes.
- Preheat the oven to 350 degrees F. Bake until the wreath is golden brown and puffed, 20 to 25 minutes. Let cool on a rack until just warm, about 10 minutes.
- For the glaze: Whisk the confectioners' sugar, milk and lemon juice in a medium bowl to make a thick but pourable glaze, adding a little more confectioners' sugar if needed to get the right consistency. Drizzle over the wreath and let harden before serving. To serve, decorate with candied cherries and mint leaves to resemble holly sprigs.

- Cream together butter and all but 2 Tablespoons of the sugar.
- Add egg yolks, one at a time and beat until light.
- Add sifted flour and salt alternately with sherry, mixing well.
- Fill cookie press with dough and press out each wreath onto ungreased or parchment lined cookie sheets.
- Bake at 375° for 8-10 minutes.
- Combine the cinnamon with the reserved 2 tablespoons sugar and sprinkle warm cookies with the mixture.

- Heat milk to about 95°F (35°C)– use microwave or stovetop. Pour the warm milk into the bowl of a stand electric mixer fitted with the dough hook attachment (OR you can use a handheld mixer OR no mixer, but a stand mixer is ideal). With a whisk, manually whisk in the sugar and yeast. Cover with a towel and let sit until the yeast is foamy, about 5-10 minutes. If the yeast does not dissolve and foam, start over with fresh active yeast. On low speed, beat in the softened butter until it is slightly broken up. Next add the eggs, one at a time, and then the salt. The butter won’t really be mixing into the mixture, so don’t be alarmed if it stays in pieces. On low speed, gradually add the flour. Once it is all added, beat on medium speed until a soft dough forms. Increase speed to medium-high and beat until the dough is soft and supple, about 6 minutes longer. *If you do not have a stand-mixer with a hook attachment, knead the dough by hand in this step.
- Transfer the dough to a lightly floured surface and knead it with your hands for 1 minute. Form the dough into a ball and transfer it to a lightly greased bowl. Cover the dough loosely with plastic wrap, a paper towel, or aluminum foil and let sit in a warm place until doubled in size, about 1 to 2 hours. Here’s what I do: turn the oven on to 200°F (93°C). Once heated to that temperature, turn the oven off. Stick the covered dough inside the oven and allow it to rise in this warm environment.
- Line a large baking sheet with parchment paper. Lightly flour the parchment paper. Place the dough on top and, with floured hands, pat down to roughly form a 10×20-inch rectangle. Make sure the dough is smooth and evenly thick.
- Spread the softened butter all over the dough. In a small bowl, toss the cinnamon and sugar together until combined and then sprinkle evenly over the dough. Tightly roll up the dough to form a 20-inch long log. Cut into 20 1-inch rolls, only slicing 3/4 of the way through so they are still connected at the bottom. Use kitchen shears if you need to.
