Tamale Pie is a simple to make homemade Mexican casserole recipe. Full of spices and lots of flavor, your family will love this for dinner!

Provided by Amy Locurto

Categories     dinner

Time 55m

Number Of Ingredients 14

1 pound ground meat
1 can enchilada sauce
1/2 can diced green chilies
1/4 onion (minced)
2 boxes cornbread mix- made following instructions on box
1-2 cups shredded cheddar cheese
1/4 teaspoon ground cumin
1/4 teaspoon garlic powder
salt and pepper to taste
Topping-
purple onion (diced (optional))
sour cream
chopped fresh cilantro
avocado (diced)

Steps:

  • Heat your oven to 375 degrees.
  • In a large skillet brown the ground meat and onions.
  • Add cumin, salt, pepper, and garlic powder to taste.
  • Add the diced green chilies and cook for about 5 minutes.
  • Now add the enchilada sauce and let it simmer for about 10 minutes stirring often.
  • While the meat mixture is cooking, make the two boxes of corn bread following the direction on the box.
  • In a 9x13 pan spray some cooking oil and add a little of the corn bread mixture to the bottom of the pan. Now spoon in the meat mixture, cover the meat with shredded cheese, then pour the rest of the cornbread mixture on top and spread it so it is totally covering the meat mixture.
  • Bake in the oven for 30-35 minutes or until the cornbread is golden brown. You may need to bump the oven up to 400 if it is taking too long. Just make sure it is cooked in the middle.
  • Garnish with toppings such as diced purple onion, sour cream, diced avocado, and fresh cilantro. It would also be fantastic with a tomatillo sauce!

TAMALE PIE

Tamale Pie image

Make the filling for this classic Southwestern casserole by cooking pork with roasted poblanos and pungent spices like chili powder, cinnamon and cloves. Top with an easy cornbread crust that gets baked to perfection.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h35m

Yield 8 servings

Number Of Ingredients 25

3 poblano peppers
3 tablespoons vegetable oil
1 1/2 pounds ground pork
1 pound fresh Mexican chorizo, casings removed
Kosher salt
1 white onion, diced
3 cloves garlic, finely chopped
1 tablespoon chili powder
1 1/2 to 2 teaspoons chipotle chile powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
2 15-ounce cans diced tomatoes
2 cups frozen corn kernels
1 teaspoon Worcestershire sauce
3/4 cup chopped fresh cilantro
1 1/4 cups yellow cornmeal
3/4 cup all-purpose flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
Kosher salt
6 tablespoons unsalted butter, melted
1 cup buttermilk
2 large eggs, lightly beaten
1 1/2 cups grated sharp cheddar cheese (about 6 ounces)

Steps:

  • Make the filling: Roast the poblanos directly over the flame of a gas burner or under the broiler, turning with tongs, until charred all over, about 10 minutes. Transfer to a bowl, cover with a plate and set aside until cool enough to handle, about 10 minutes. Scrape off the charred skin with a paring knife, then chop, discarding the stems and seeds; set aside.
  • Heat 2 tablespoons vegetable oil in a large pot over medium-high heat. Add the ground pork, chorizo and 3/4 teaspoon kosher salt and cook, stirring and breaking up the meat with a wooden spoon, until browned, about 8 minutes; transfer to a bowl.
  • Heat the remaining 1 tablespoon vegetable oil in the pot over medium-high heat. Add the onion, garlic and 1/2 teaspoon kosher salt and cook, stirring occasionally, until softened, about 5 minutes. Add the chili powder, chipotle powder, cinnamon and cloves and cook, stirring, until the spices are toasted, 1 minute. Return the meat to the pot and add the tomatoes, corn, Worcestershire sauce and the roasted poblanos. Bring to a boil, then reduce the heat to medium low and simmer 10 minutes; season with kosher salt and stir in the cilantro. Pour the mixture into a 3-quart baking dish.
  • Preheat the oven to 375 degrees F. Make the topping: Whisk the cornmeal, flour, sugar, baking powder, baking soda and 1/2 teaspoon kosher salt in a bowl. Whisk the melted butter, buttermilk and eggs in another bowl. Stir the dry ingredients into the wet ingredients until incorporated; stir in the cheese.
  • Dollop the cornbread mixture over the filling and smooth into an even layer with the back of a spoon. Bake until the filling is bubbling and the topping is golden brown, about 30 minutes. Let stand 10 minutes before serving.

Yummy Tamale Pie image

I found this recipe in a cook book by Sandra Lee from the Food Network. I made a dish of this and it was almost instantly inhaled by my DH and DS. Very yummy! At times I have topped this with a dollop of sour cream and fresh cilantro.

TASTY TAMALE PIE - CASSEROLE

Tasty Tamale Pie - Casserole image

This recipe is from our grammar school cookbook. Thank you Kathy G! My DH made this and I was truly impressed. This can be made as mild or as spicy as you like. Choose your salsa, cheese & amount of jalapeno according to your taste. Olives are optional. I also like to make the salsa smoother in the food processor to make it more kid friendly (no pieces!). I have used both condensed and regular whole milk with success, also combined bottled and fresh salsa.

Time 1h

Yield 6 serving(s)

Number Of Ingredients 12

1 lb lean ground beef, cooked and drained
1 small onion, fine dice
16 ounces bottled salsa, any heat preference I like medium
1/3 cup water
1 (7/8 ounce) packet taco seasoning, Chi Chi's Fiesta is my preference
3 ounces ripe black olives, chopped (optional)
1 cup cornmeal, dry
12 ounces evaporated milk, I have used whole milk
4 ounces green chilies, canned, diced
1 cup monterey jack pepper cheese, divided, grated, sub. cheddar
1 teaspoon salt
1 jalapeno, sliced

Steps:

  • Preheat oven to 400°.
  • Cook ground beef and onion in a large skillet until beef is browned, and onions tender, drain.

  • Reduce heat to low and stirring occasionally, for 3-4 minutes. Add olives, if using, and stir.

  • Bake for 25 minutes, sprinkle with remaining cheese and garnish w/ jalapenos. Bake an additional 5 minutes until cheese is melted.

AUTHENTIC MEXICAN TAMALE PIE

Authentic Mexican Tamale Pie image

We love tamales but they are such a pain to make so I came up with this recipe; its a combination of Recipe #191472 and Recipe #168006. I've made it with both masa harina and cornmeal, and prefer the cornmeal that has been ground very fine. Garnish the casserole with Recipe #171578
