Mushrooms and peas have a natural affinity for each other, and work beautifully with just a bit of chicken stock and herbs, to create a simple sauce for the penne.   • Penne pasta is a favorite of mine for mixing with seasonal vegetables and ingredients. For this recipe, along with the penne pasta, I use some mushrooms, peas, some chicken stock (and a couple other things) to make a very simple sauce. So simple in fact that you can make it in about 20 minutes, so it's perfect even on those nights when you home form work late, and you need to get something on the table quickly. Best of all, once you know this basic recipe you can easily add or swap out ingredients. Enjoy! Recipe Overview and Keys to Success Like all pasta dishes, make sure you good the penne Al dente. Overcooked = Bad I like to cook the mushrooms down for about 20 minutes, until they are golden brown, firm in texture, and concentrated in flavor. Undercooked, they seem a bit slimy to me Add the frozen peas at the last minute. They don't take long to cook. Finally, the sauce here is really the chicken stock, reduced with some of the other ingredient. Taste as you go to make sure the salt and pepper is right, and make sure there is enough sauce so the pasta doesn't seem dry Ingredients (for 2) 1/3 lb penne pasta 3 cups sliced crimini mushrooms 1/3 cup frozen peas 1 large diced shallot 2 minced garlic cloves 1/3 cup chicken stock 1 sprig rosemary 1 - 3 tablespoons grated parmesan cheese Olive oil Salt and pepper Penne with Mushrooms & Peas Put a large pot of water on the heat to bring to a boil Heat a large skillet over high heat, and coat the bottom with olive oil Add the mushrooms and season with salt and pepper Toss, and continue to cook, tossing every few minutes until the mushrooms are golden brown, and firm in texture (about 20 minutes) When the mushrooms have 5 - 10 minutes left, and the water is boiling, add the penne to the water, and stir occasionally to prevent sticking Add the shallot, rosemary and garlic to the mushrooms and cook for about 1 minute to soften Add the chicken stock to deglaze the pan, and allow it to start reducing at a hard simmer Once the pasta is cooked, add the peas to the mushrooms, and drain pasta from the water Add the pasta to the mushroom sauce and season with salt and pepper Toss together a few times over high heat to integrate all the ingredients, and then kill the heat Add the parmesan cheese, and a drizzle of olive oil Toss again, taste and adjust the seasoning if needed Serve it up, with a bit more parmesan cheese, and enjoy! Wine with Penne with Mushrooms & Peas I'm going to fall back on my love for combining Mushrooms with Pinot Noir for this recipe. The earthy notes of both complement each other, and the lighter pinot won't overpower the pasta.

1/2 cup fresh shelled peas
4 tablespoons butter
1/4 pound morels, about 8 medium
8 ounces pasta
1 cup finely grated Parmesan

Steps:

  • Bring to a boil 2 pots of water, one small and one large, and salt both. Cook the peas for 1 minute in the small pot; drain and cool quickly by submerging in ice water.
  • Meanwhile, melt half the butter in a skillet. Cut the morels into 4 pieces each, the long way, and brown them lightly in the butter, seasoning them with salt and pepper.
  • Cook the pasta until it is nearly done. Just before draining, toss the peas and remaining butter with the morels and turn the heat to medium. Drain the pasta, reserving a little of the cooking water. Toss the pasta with the morels and peas, adding a little water if necessary to make the mixture saucy. Toss with the Parmesan and lots of black pepper and serve immediately.

6 slices higher-welfare smoked streaky bacon or pancetta
1 small bunch fresh mint
100 g Parmesan cheese
1 organic chicken stock cube, optional
400 g dried mini shell pasta
olive oil
300 g frozen peas
2 heaped dessertspoons half-fat crème fraîche
1 lemon

Steps:

  • Finely slice the bacon. Pick the mint leaves and discard the stalks. Finely grate the Parmesan. Bring a large pan of salted water to the boil and drop in the stock cube (if using). Stir until it's dissolved, then add the mini shells and cook according to the packet instructions. Get a large frying pan over a medium heat and add a good lug of olive oil. Add the bacon to the pan, sprinkle a little pepper over and fry until golden and crisp.
  • Meanwhile, finely chop your mint leaves. As soon as the bacon is golden, add your frozen peas and give the pan a good shake. After a minute or so, add the crème fraîche and chopped mint to the bacon and peas. Drain the pasta in a colander over a large bowl, reserving some of the cooking water.
  • Add the pasta to the frying pan. Halve your lemon and squeeze the juice over the pasta. When it's all bubbling away nicely, remove from the heat. The sauce should be creamy and delicious but if it's too thick for you, add a splash of the reserved cooking water to thin it out a bit. Add the grated Parmesan and give the pan a shake to mix it in.
  • Divide your pasta between plates or bowls, or put it on the table in a large serving dish and let everyone help themselves. Lovely with a simply dressed green salad.

1 cup fresh basil leaves
1/4 cup fresh mint leaves
3 tablespoons pine nuts
2 cloves garlic

1/3 cup extra-virgin olive oil, plus more if needed
1/2 cup heavy cream
2 tablespoons butter

Steps:

  • Cook the peas according to the package instructions and drain. Cook the pasta until al dente according to the package instructions.
  • Meanwhile, add the basil leaves, mint leaves, pine nuts, garlic, 1/2 cup of the peas, 1/2 cup of the Parmesan and some salt and pepper to a food processor or blender. Turn on the machine, then drizzle in the olive oil while it mixes. Continue blending until combined, adding additional olive oil if needed. Set aside.
  • Heat the cream and butter in a small saucepan over medium-low heat. Stir in the remaining 1/4 cup Parmesan.
  • Drain the pasta and place in a serving bowl. Pour the cream mixture over the top, followed by the pesto. Add the remaining 1 cup peas, toss and serve immediately.

1 cup chicken broth
3/4 cup whipping cream
3 large garlic cloves
1/4 teaspoon crushed red pepper flakes
1/2 cup parmesan cheese, grated

12 ounces cremini mushrooms or 12 ounces button mushrooms, 1/2-inch pieces
12 ounces penne pasta
1 1/2 cups frozen green peas, thawed
8 slices prosciutto, cut crosswise, 1/4-inch strips

Steps:

  • Bring broth, cream, garlic, and crushed red pepper to boil in medium saucepan. Reduce heat and simmer until liquid is reduced to 3/4 cup, about 20 minutes. Remove from heat. Mix in 1/2 cup parmesan cheese; cover and keep warm.
  • Melt butter in large nonstick skillet over medium-high heat. Add mushrooms; saute until brown and tender, about 8 minutes. Remove from heat.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite.
  • Drain pasta and return to pot. Add cream mixture, mushrooms and peas and stir over low heat until well coated with sauce, about 3 minutes. Mix in prosciutto. Cover and let stand 1 minute. Transfer to bowl. Serve, passing additional parmesan cheese separately.

1 pound linguine or other long pasta
Coarse salt and ground pepper
2 tablespoons olive oil
2 pounds assorted fresh mushrooms, cleaned and sliced 1/2 inch thick
6 garlic cloves, thinly sliced
1 cup finely grated Parmesan cheese, plus more for serving

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1 cup cooking water; drain pasta, and return to pot.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Add mushrooms and garlic; season with salt and pepper. Cover skillet (it will be full); cook, tossing occasionally, until mushrooms have softened and released their liquid, 7 to 10 minutes. Uncover skillet, and reduce heat to medium; cook, tossing occasionally, until mushrooms are tender and browned, 10 to 12 minutes.
  • Add mushroom mixture and Parmesan cheese to pasta; toss to combine. Add as much reserved pasta water as necessary to create a light sauce. Serve immediately, topped with more Parmesan cheese.

2 teaspoons extra-virgin olive oil
1 small onion, chopped
8 oz. button mushrooms, sliced
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 (1 lb.) box penne pasta (whole wheat, regular or gluten free are fine)
3 cups low-sodium chicken broth
4 oz. plain cream cheese (I use 1/3 reduced fat)
2 cups shredded mozzarella cheese
1 (10 oz.) bag frozen peas, thawed
2 cups cooked, shredded chicken (see notes)
1/4 cup fresh parsley, chopped (optional)
Shredded Parmesan cheese (optional)

Steps:

  • Heat olive oil in a large pot over medium heat. Add onion and mushrooms and saute for 7-8 minutes, until onions are tender and the mushrooms have released most of their liquid.
  • Add garlic, salt and pepper and saute for another 30 seconds.
  • Add pasta and chicken broth and bring to a boil.
  • Cover, reduce heat to medium-low and cook for 8-10 minutes, until most of the liquid is absorbed and the pasta is nearly cooked. I lift the lid and stir it once or twice during the cooking time so the pasta gets moved around and can cook evenly.
  • Add cream cheese and mozzarella cheese and stir until melted and well combined. You can add an extra splash of chicken broth if needed to get everything to mix well.
  • Add thawed peas and shredded chicken and stir to combine. Turn off heat, cover and let sit for a few minutes.
  • Taste and adjust seasonings.
  • Serve with fresh chopped parsley and Parmesan cheese (if using).

140g spaghetti
100g frozen petits pois or garden peas
2 tsp olive oil
1small onion , finely chopped
100g low-fat soft cheese with chives and onion
1 lemon , finely grated zest
3 tbsp finely grated parmesan (or vegetarian alternative)
1 tbsp chopped fresh flatleaf parsley

Steps:

  • Bring a large pan of lightly salted water to the boil. Feed in the spaghetti and cook for about 10-12 minutes, until just tender. (Check the pack instructions for timings - 'quick cook' spaghetti takes only 3 minutes.) Add the peas for the last 2-3 minutes.
  • At the same time, heat the olive oil in a saucepan and fry the onion gently until softened and cooked, but not brown. Stir in the soft cheese and warm it through, adding 3 tbsp of the pasta cooking water to thin it down. Now stir in the lemon zest and 2 tbsp of the Parmesan.
  • Drain the spaghetti and peas really well, return them to the pan and gently stir in the sauce. Season with salt and pepper, then pile it into 2 serving bowls. Sprinkle the parsley and the remaining Parmesan over the top and serve right away, with a mixed leaf salad.

2 tablespoons margarine
1/2 cup onion
2 garlic cloves
1/2 cup mushroom

1/2 cup frozen chopped spinach

  • Put water onto boil for pasta. Salt water and cook according to package.

4 cloves garlic, minced
3 large egg yolks, beaten

Fresh lemon zest and juice, to taste

Steps:

  • Bring a large pot of salted water to a boil. Cook pasta according to package directions, until al dente.
  • Drain pasta, reserving 1 ¼ cups pasta water for later use. Coat pasta with 1 Tbsp. olive oil and set aside.
  • Place ¼ cup olive oil in the large pot on medium-high heat. Add garlic and cook until fragrant, about 30-60 seconds. Add pasta back in to the stock pot, then the pasta water and simmer until liquid is reduced by half. Remove from the heat and stir in the beaten egg yolks until it starts to thicken.
  • Stir in peas and half the Parmesan cheese.
  • Season with salt, black pepper and lemon zest and juice, to taste. Remove from heat and place in bowls.
  • Garnish with remaining Parmesan cheese.

One 16-ounce package pappardelle nests or 1 recipe for Cracked Black Pepper Pasta
One 6-ounce piece pancetta, cut into cubes
6 ounces fresh chestnut or cremini mushrooms, cleaned and finely sliced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Freshly ground black pepper

Steps:

  • Bring a large pot of water to the boil and cook the pappardelle according to the package directions.
  • While the pasta is cooking, put a large skillet over medium-high heat. Cook the pancetta until it starts to brown, about 5 minutes. Add the mushrooms and cook for 2 to 3 minutes, then add the cream. When the cream is hot, add the Parmesan and stir.
  • Drain the pasta and add it to the skillet. Stir well and season with some pepper. I find it does not usually need salt because of the salty pancetta and Parmesan. Serve immediately. I like to serve it with an arugula salad.
