TSAO MI FUN (TAIWANESE FRIED RICE NOODLES)

Tsao Mi Fun (Taiwanese Fried Rice Noodles) image

My mom's been making me tsao mi fun, in Mandarin, or tsa bi whun, in Taiwanese, since I was a little girl. Tsa bi whun literally translates to 'fried rice noodles'. You'll most likely find all the ingredients at your local supermarket except for the five spice powder, dried Chinese black mushrooms and rice vermicelli which can be found at your local Asian food mart. All the measurements here are pretty much to taste, some people like more pork, some less, some more soy sauce, some less, etc.

Time 1h10m

Yield 4

Number Of Ingredients 18

½ pound thinly sliced pork loin
¼ cup soy sauce
¼ cup rice wine
1 teaspoon white pepper
1 teaspoon Chinese five-spice powder
1 teaspoon cornstarch
4 dried Chinese black mushrooms
1 (8 ounce) package dried rice vermicelli
¼ cup vegetable oil, divided
2 eggs, beaten
¼ clove garlic, minced
1 tablespoon dried small shrimp
3 carrots, cut into matchstick strips
½ onion, chopped
3 cups bean sprouts
4 leaves napa cabbage, thinly sliced
salt to taste
3 sprigs fresh cilantro for garnish

Steps:

  • Place the pork into a mixing bowl and pour in the soy sauce and rice wine. Sprinkle with the white pepper, five-spice powder, and cornstarch. Mix well, then set aside to marinate. Soak the mushrooms in a bowl of cold water for 20 minutes, then pour off the water, cut off and discard the stems of the mushrooms. Slice the mushrooms thinly and reserve. Soak the rice vermicelli in a separate bowl of cold water for 10 minutes, then pour off the water and set the noodles aside.
  • Heat 1 tablespoon of the vegetable oil in a wok or large skillet over medium heat. Pour in the eggs, and cook until firm, flipping once, to make a pancake. Remove the egg pancake, and allow to cool, then thinly slice and place into a large bowl. Heat 2 more tablespoons of the vegetable oil in the wok over high heat. Stir in the garlic and dried shrimp, and cook until the shrimp become aromatic, about 20 seconds. Next, add the pork along with the marinade, and cook until the pork is no longer pink, about 4 minutes. Stir in the carrots and onion, and cook until the carrots begin to soften, about 3 minutes. Finally, add the bean sprouts, napa cabbage, and sliced mushrooms; cook and stir until the vegetables are tender, about 3 minutes more. Scrape the pork mixture into the bowl along with the eggs, then wipe out the wok and return it to the stove over medium-high heat.
  • Heat the remaining vegetable oil in the wok, then stir in the drained rice vermicelli noodles. Cook and stir for a few minutes until the noodles soften, then stir in the reserved pork mixture. Scrape the mixture in to a serving bowl and garnish with cilantro to serve.

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 14

1 pound fresh Shanghai noodles, or Japanese udon noodles
2 tablespoons Chinese rice wine
1 tablespoon hoisin sauce
1 teaspoon cornstarch
12 ounces flank steak, sliced into 1/4-inch strips
3 tablespoons dark soy sauce
1 tablespoon soy sauce
1/2 teaspoon sugar
2 tablespoons peanut oil
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
1/2 teaspoon minced green onions, plus 1 cup cut-on-a-bias green onions
3 cups julienned Napa cabbage
1/2 teaspoon minced jalapeno

Steps:

  • In a large pot of boiling salted water, cook the noodles until al dente, about 8 minutes. Rinse under cold running water and drain well. Set aside. In a small bowl, combine the rice wine, hoisin, and cornstarch. Add the beef, toss to coat, and marinate for 15 minutes. In another bowl, combine the dark soy, soy sauce and sugar, and stir well to dissolve the sugar. Place a wok over a high heat and add 1 tablespoon of the peanut oil, swirling to coat. Transfer to a platter and return the wok to a high heat. Swirl the remaining tablespoon of peanut oil in the wok and once hot, add the noodles to the pan and stir-fry for 1 minute. Add the sliced green onions and jalapeno and sauce and toss all for 1 minute. Add the beef and stir to heat through. Serve immediately.

TAIWANESE PAN-FRIED RICE NOODLES RECIPE

Taiwanese Pan-Fried Rice Noodles Recipe image

Perfect for feeding a crowd or fixing a solo meal on the fly, this simple home-style Taiwanese noodle-and-vegetable dish may look bland, but hidden within are layers of flavor, thanks to plenty of white pepper, black vinegar, and broth.

Provided by Cathy Erway

Categories     Entree

Time 45m

Yield 6

Number Of Ingredients 14

½ pound boneless pork shoulder, cut into thin 2-inch strips
½ teaspoon cornstarch
¼ cup plus 1 teaspoon soy sauce (or more to taste)
1 teaspoon sesame oil
6 to 8 dried shiitake mushrooms
½ pound very thin dried rice noodles (see note)
3 tablespoons vegetable or peanut oil
1 large carrot, julienned (about 1 cup)
1 cup bamboo shoots from one (15-ounce) can, rinsed and julienned
2 cups pork stock (or substitute with chicken or vegetable stock or low-sodium broth), warmed
¼ teaspoon ground white pepper (or more to taste)
Kosher salt
2 tablespoons black vinegar (or more to taste; see note)
2 to 3 scallions, white and light green parts only, thinly sliced

Steps:

  • Combine pork, cornstarch, 1 teaspoon soy sauce, and sesame oil in a medium bowl and mix thoroughly. Cover and chill for at least 20 minutes, or up to overnight.
  • Meanwhile, cover dried shiitake mushrooms with warm water and let stand until soft throughout, about 20 minutes. Squeeze excess water out of mushrooms and trim off their stems. Slice thinly and set aside. (The soaking liquid may be reserved for making soups, stocks, or braises.)
  • Cook rice noodles according to the instructions on the package. Drain and set aside.
  • Add 1 tablespoon vegetable oil to a large wok or skillet and heat over high heat until shimmering. Add pork and cook, stirring, until no longer pink, about 2 minutes. Remove from pan and set aside.
  • Add remaining 2 tablespoons oil to same wok or skillet and heat over high heat until shimmering. Add mushrooms, carrots, and bamboo shoots, along with a pinch of the salt. Cook, stirring occasionally, for 1 minute. Return the pork to the pan.
  • Pour in warm stock and remaining 1⁄4 cup of soy sauce and bring to a boil. Add rice noodles and stir to combine. Stir in white pepper, season with salt, and cook, stirring frequently, until stock is mostly absorbed, about 2 minutes. If desired, add extra soy sauce, salt, or white pepper to taste. Remove from heat and sprinkle in black vinegar; toss to combine. Garnish with scallions and serve immediately.

CRISPY FRIED RICE NOODLES

Crispy Fried Rice Noodles image

I made this recipe because I cannot eat wheat gluten and wanted a crispy fried noodle. Most store-bought crispy noodles are wheat-based. Also, it is fun and easy to make these and they are very decorative and versatile. Can be seasoned with salt if desired, or can be dusted with powdered sugar and cinnamon for an interesting treat!

Categories     Chinese

Time 20m

Yield 6 serving(s)

Number Of Ingredients 4

1 large egg
1 cup sweet rice flour
1/4 cup water
1/2 quart canola oil (for frying)

Steps:

  • Heat oil in a skillet to about 370°F.
  • Mix together egg, water, rice flour.
  • Put batter into a pastry bag with a narrow tip and extrude into the hot oil making zigzag, spiral, or flower petal formations- try to maintain a steady flow to create a single noodle with a decorative design.
  • Fry until stiff, then flip the whole noodle with a metal spatula and fry until desired crispness.
  • Using the spatula, remove the noodle from oil to a plate with towels or paper towels to allow oil to drain.

CHINESE "FRIED" RICE NOODLES

Chinese

Healthier than wok-fried noodles, these are microwaved and full of flavor. Very delicious and reminescent of the fried rice-noodle dish at our local Chinese restaruant. I used reduced-sodium soy sauce and it turned out really well. Designed to be a vegan recipe, but for non-vegans, a dash of worcestershire sauce is a nice touch. Also, if you are making this gluten-free, be sure the bottled sauces don't contain wheat products unless you know you can tolerate them.
