2/3 cup hulled wheat
3 cups yogurt
3 cups water
1 egg
2 tablespoons flour
1/2 teaspoon salt
1 medium onion, chopped
4 tablespoons butter or 4 tablespoons margarine
1 tablespoon chopped mint
1/3 tablespoon chopped parsley

Steps:

  • Cook wheat in 4 cups of water until tender.
  • Blend yogurt, water, egg and flour with beater.
  • Cook until it boils, stirring constantly with wooden spoon.
  • Add salt, cooked wheat and remove from heat.
  • Saute onion in butter, add mint and parsley.
  • Combine with soup.
  • Simmer 5 minutes.

6 cups water
1 beef bouillon cube
1/2 cup rice, washed and drained
2 cups yogurt
1/2 cup milk
1 egg yolk
1/4 cup flour
2 tablespoons butter
1 tablespoon dried mint
sea salt

Steps:

  • In a large pot boil the water, rice, salt and bouillon. Cook on medium high, until the rice is done.
  • Meanwhile in a bowl, mix yogurt, milk, egg yolk and flour. After the rice is cooked, take a few spoons of liquid from the pot and mix into the bowl. Then slowly pour your mixture into the pot while stirring very slowly. Cook for 10 more minutes on low heat.
  • Place the butter in a frying pan. When it begins spitting, stir in the mint and pour into your soup.
  • Serve immediately.

I originally posted this with the wrong name, so please ignore the bad review. It doesn't seem the reviewer tried making the soup and is posting based on mistaken name only. This recipe is passed down from my grandmother to my mother to me and it is fantastic! The challenge of making this soup is in keeping the yogurt from curdling. It needs to be stirred consistently while cooking. Enjoy!

1/2 lb ground beef
1 small onion, grated
1 1/2 teaspoons salt
1/2 teaspoon pepper
4 cups plain yogurt
1/4 cup rice, uncooked
1 egg
1 tablespoon flour
4 1/2 cups water
1/2 cup parsley, chopped
1/2 cup green onion, chopped
1/2 cup cilantro, chopped
1/2 tablespoon dill (optional)
1 (16 ounce) can garbanzo beans
1 (16 ounce) can white beans
2 garlic cloves
1 tablespoon dried mint

Steps:

  • Put the meat in a bowl. Add grated onion and salt and pepper and mix well. Make meat balls the size of walnuts.
  • Put yogurt in a 3-qt pot. Add rice, egg, flour and mix well. Add water. Cook over low heat, stirring constantly for about 20 minutes or until it thickens and rice cooks.
  • Add meat balls to the yogurt mixture and let simmer for 10 minutes.
  • Add greens and beans and let simmer for 15 minutes. Can substitute fresh beans for canned.
  • Stir often to avoid curdling.
  • As a soup garnish, chop one or two cloves of garlic and saute in butter, add dried mint, about 1 tablespoon, and put a teaspoonful of this hot garlic sauce on each plate of yogurt soup when serving.

2 tablespoons oil
2 large onions, chopped
1 cup barley (uncooked)
5 cups well-seasoned stock
2 cups buttermilk or 2 cups yogurt
1 teaspoon dill weed
1 pat margarine (or butter)

Steps:

  • Heat oil in a heavy pot and saute onions until translucent.
  • Add barley and saute, stirring lightly, until translucent and slightly toasty-smelling.
  • When onion is well browned, add stock and cook until barley is well done, 45 minutes to an hour (or 25 minutes in a pressure cooker).
  • Remove from heat, let cool a bit, and slowly add buttermilk and more stock to thin it if necessary. Sprinkle in dill and add butter or margarine.

I threw this together for my infant son and my "big girls" all thought it was a treat and begged for a taste. At supper, I had to break up fights of girls stealing spoonfuls from each other. My grandmother made soup like this when I was growing up, but this is a healthier version.

6 medium potatoes
1 cup plain yogurt
3 cloves fresh garlic
1/4 teaspoon dill seed

Steps:

  • First peel and slice potatoes and rinse in cold water.
  • Place potatoes in a heavy large pan and cover with water, just to cover.
  • Boil until soft but not mushy.
  • Pour about half of the water off of the potatoes, but save half, the starch that boils off the potatoes helps the soup to thicken and holds more nutrients.
  • Add yogurt and spices and simmer 5-10 minutes to let the flavors mingle, and serve.
  • I like a little shredded cheese in mine, Grew up with Cheddar, but like Mozzarella now.
