- Blend all ingredients together very, very well (mangoes tend to be stringy), and serve in a tall, frosted glass. Enjoy! *TIP: When fresh mangoes are out of season or hard to obtain, cut dried mango into small pieces and soak in water for 1?2 hour to hydrate. One-half cup of soaked mango will equal 1 fresh mango. This works with any other dried fruit, such as papaya, pineapple, apples, and figs. VARIATIONS Substitute fresh pineapple for the mango when in season. Substitute yogurt for the coconut milk. Add a handful of raw cashews before blending. Some might like to add 1 tablespoon protein powder or 1 teaspoon bee pollen.

SUNSHINE TROPICAL SMOOTHIE
Made this for breakfast today from stuff I had on hand. Freezing over-ripe bananas is a great way to always have them on hand for breakfast smoothies, and it's another great use for bananas that are beginning to turn brown other than the ol'standby: banana bread! Simply peel your over-ripe banana, break into pieces that will blend in your blender, and place in a ziplock freezer bag. They are ready to go! For this recipe, be sure to use coconut WATER, not milk, which gives this smoothie just the perfect "hint" of tropical coconut flavor. Coconut water has 15 times more potassium than that found in sugary sport drinks, and that it contains five key electrolytes. It is the water found inside the coconut after it has been filtered through the coconut's husk.

- In a blender add the raspberries (or a mix of raspberries and strawberries), banana, coconut meat and coconut milk. Blend the mixture until smooth. Pour the smoothie into two glasses.
- Preheat oven to 325 degrees F. In a large bowl combine the oats, shredded coconut and almonds. Toss well. Melt the coconut oil in the microwave for 30 seconds, stir in the maple syrup. Place the mixture back in the microwave for another 30 seconds. Sprinkle the espresso powder over top and stir to dissolve. Add the cinnamon and salt. Stir in the vanilla. Pour the warm mixture over the dry oat mixture and stir to fully combine. I normally stir for a good 3 to 5 minutes.
