Steps:
- get a pan hot (medium heat)
- add oil to the pan.
- slice the potatoes any you would like.
- when the oil gets hot add the potatoes (test with a splash of water - it will sizzle when hot).
- sprinkle Lawry's salt on the potatoes (a little goes a long way).
- when they are done they will be brown - dark brown and hard.

- First, start caramelizing the onions: heat 2 tablespoons oil in a large skillet over medium heat for 1-2 minutes. Place the onions in the skillet and let cook, without stirring, for 5-8 minutes, until the bottom sides have started to brown. Once the bottom sides have started to brown, reduce the heat to low and continue cooking, stirring occasionally, until the onions are thoroughly browned, about 20 minutes.
- After the onions have been cooking for about 15 minutes, start cooking the potatoes. Heat remaining 2 tablespoons oil in a separate skillet over medium heat for 1-2 minutes. Add potatoes and cook, covered, until the potatoes are easily pierced with a fork, about 15 minutes. Stir occasionally.
- Stir the Thousand Island dressing into the potatoes and stir gently to coat. Tear each slice of cheese into four pieces and place on top of the potatoes. Place the lid on the skillet and cook 1-2 minutes, until the cheese has melted.
- Top with caramelized onions and serve.

SKILLET ROASTED POTATOES

Steps:
- Prepare potatoes and wash well in cold water.
- Arrange in one layer in a large skillet so they are almost touching - they'll need room later when they are cracked open (nonstick pan works best).
- Add rosemary, broth, oil, butter and salt.
- Bring to a boil over high heat, reduce to medium, cover the pan, but leave the lid a lttle aside, and boil until potatoes are fork tender, about 20 minutes.
- The liquid should still be about halfway up surrounding the potatoes; if not, add more broth or a little water until it does.
- Remove the pan from heat, press on each potato with a spoon or 1/4 cup measure just until it cracks open.
- Set the pan over medium-high heat and cook uncovered until the liquid has evaporated, let the potatoes sizzle until the bottoms have browned on one side, about 10 minutes.
- Gently turn the potatoes and brown the other side, another 4 to 5 minutes.
- Remove the pan from the heat and let rest for 5 minutes before serving.
- Sprinkle with chives and serve.
- Pass the fleur de sel so diners can sprinkle some on if they want!
SKILLET POTATOES
I came up with this recipe for the 11th RSC contest. I used red skinned potatoes but other types would work just as well. I boiled mine, but leftover baked potatoes would work also. These worked well with as a side dish with steak or with eggs for breakfast. We've also eaten them as the main dish. If you want a little more kick, increase the cayenne pepper to 1/4 teaspoon.

- Boil cubed potatoes until tender, about 15 minutes.
- Heat olive oil and oil from sun-dried tomatoes over medium high heat. Add shallots and potatoes. Cook for 20-25 minutes until the shallots and potatoes turn golden.
- Mix in spinach, tomatoes, cayenne pepper, and salt. Stir to mix ingredients. Add tablespoon butter and continue to cook until butter melts and spinach and tomatoes are heated through, about another 5 minutes.
- Top with shredded asiago and crumbled bacon. Serve with additional salt and pepper if desired.

- Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Remove bacon slices, reserving grease. Crumble bacon and set aside.
- Add potatoes to bacon grease and season with garlic salt, seasoned salt and black pepper. Cook until potatoes are soft.
- When potatoes are tender, add crumbled bacon. Pour eggs over potatoes and cook until firm. Spread with cheese and cover with lid until melted.

- Using a 12" nonstick skillet, heat oil over medium heat. Add chicken and seasoning. Stir well to combine oil and seasoning and evenly coat chicken. Cook, turning once until browned on both sides.

- Place potatoes in a microwave safe bowl and cook on defrost for 3 minutes, cube chicken in 1 ½ inch cubes, cut the Brussels sprouts in half and finely shred the asiago cheese.
- In a deep nonstick oven proof pan sprayed with cooking spray on medium heat cook chicken 5 minutes turn chicken pieces and cook additional 3 minutes. - Preheat oven to 375º F. Remove skin from the salmon fillets.
- Fry the pancetta until crisp in a large, heavy skillet on medium-low, 7-8 minutes, and drain on paper towels. Add 1 tablespoon of the pan drippings to a small bowl with the cream cheese and mix well. Crumble the pancetta and mix into the cheese.
- Place the Simply Potatoes in a medium bowl. Dice the vegetables and mix with the potatoes.
- Use a small rubber spatula to evenly coat the top of a fillet with cream cheese mixture, then evenly cover with the Simply Potatoes mixture, pressing firmly, turn over and do the same on that side. Repeat for the remaining 3 filets.
- Heat the skillet with the drippings on medium-low and use a metal spatula to carefully set each fillet into the pan. Fry about 4-6 minutes each side, or until nicely browned. Place on a baking sheet and finish in the oven for 5 more minutes. Evenly divide the remaining cream cheese mixture to use as a topping for each piece of salmon and serve.
