Tacos Al Carbon are an easy and delicious grilled steak taco that will be your new favorite dinner. With delicious red chile tortillas, and fresh toppings, you will want seconds and thirds.

Steps:
- Preheat grill.*
- Sprinkle both sides of steak with salt and pepper. Place on grill and cook for 2 minutes, then flip and cook for 2-4 more minutes, until done.
- While meat is cooking, chop onion and cilantro, and cut limes into wedges.
- Remove cooked streak from grill and slice into small pieces.
- Heat 2 tsps oil in a small fry pan, once hot add a Fresh Red Tortilla. Fry* for 20-30 seconds, flip and repeat, then remove from fry pan. Repeat with remaining tortillas, adding 1-2 more teaspoons of oil when needed.
- Assemble tacos with meat, cilantro, onion, jalapenos and your favorite salsa.

- Put the onion, jalapeno, and garlic in a food processor and finely chop. Add the tomatillos, avocado, and salt and pulse until chopped but still chunky. Transfer to a bowl and stir in the cilantro.
- Heat a stovetop or outdoor grill to medium-high. Mix the olive oil, chipotle or chili powder, and salt in a large bowl. Add the shrimp and toss to coat. Grill the shrimp until translucent, about 1 1/2 to 2 minutes on each side.
- Grill tortillas, until slightly charred and pliable, about 20 seconds per side. (Alternatively, wrap in a damp paper towel and heat in a microwave.) Spoon sauce on the tortilla, then top with about 2 or 3 shrimp and a sprig of cilantro. Serve 2 tacos per person, with a lime wedge on the side.

- Place a large nonstick skillet coated with cooking spray over medium-high heat. Brown chicken. Add water, sugar and seasonings. Cook 4-5 minutes or until chicken is no longer pink, stirring occasionally., Meanwhile, in a small bowl, gently mix avocado, corn, tomatoes and lime juice. TACOS AL CARBON WITH AVOCADO SALSA
In the southwest and Mexico, there are little stands serving tasty meat, wrapped in a corn tortilla and topped with salsa. The Taquerias serve the best Tacos Al Carbon. This is a pretty authentic recipe for these tasty little tacos. It is flank steak marinated with all the flavours of Mexico. The avocado salsa is a great side dish by itself, but is excellant as a filling for the tacos. It does need to marinate for 4-6 hours. Don't forget the cerveza with lime!

Steps:
- Lightly sprinkle meat with seasoning salt.
- Cut into 3-4 large pieces.
- Mix lime and lemon juices, garlic, cilantro, and olive oil.
- Place meat and marinade in plastic bag or plastic bowl.
- Marinate 4-6 hours, turning occasionally.
- Discard marinade.
- Grill meat over medium heat@ 15 minutes, turning occasionally.
- Cook steak until desired doneness, the 15 minutes over medium heat creates medium done steak.
- Cut into strips and serve in corn tortillas.
- Top with 1-2 Tbl.
- of Avocado salsa.
- While meat is cooking chop up ingredients for Avocado salsa, sprinkle with lime juice and seasoning salt.
- I leave avocado pits in mixture to prevent discoloration.
- To warm tortillas you may wrap them in foil and place on grill or wrap in paper towels and microwave for 30-45 seconds.
- Sprinkle with a small amount of water if tortillas are very dry before warming them.

AL PASTOR TACOS WITH ROASTED TOMATILLO AVOCADO SALSA

- To a blender, add the orange juice, vinegar, chili powder, garlic, salt, cumin, paprika, chiles, adobo sauce, chopped onions and chopped pineapple. Blend until smooth. Pour the marinade into a large resealable bag, and add the pork butt and oregano. Refrigerate for at least 4 hours and up to 24 hours.
- Preheat the oven to 325 degrees F.
- Remove the pork butt from the marinade and set onto a rack set in a roasting pan. Pour the chicken stock into the bottom of the pan and cover the dish with foil. Roast until an internal thermometer reads 185 degrees F, about 4 hours.
- Increase the oven temperature to 425 degrees F and cook for an additional 20 minutes to caramelize the pork. Remove from the oven and rest for 20 to 25 minutes.
- Meanwhile, preheat a grill to medium-high heat. Brush the pineapple wedges with vegetable oil, grill 2 to 3 minutes per side, and once cool enough to handle chop into a small dice.
- When ready to serve, carve the meat into 1/4- to 1/2-inch slices. Serve the pork in warmed corn tortillas; garnish with the remaining finely diced white onion, cilantro, lime wedges, diced grilled pineapple and Roasted Tomatillo Avocado Salsa.
- Preheat the oven to 350 degrees F.
- Toss the tomatillos with olive oil, season with salt and pepper, and place on a baking sheet. Roast until nicely charred, about 10 minutes. Remove from the oven and set aside to cool.
- Combine the tomatillos, 1/4 cup water, cumin, salt, avocado, garlic, jalapenos, onions, lime juice and cilantro in a blender and puree until completely smooth. Place in the refrigerator and allow the sauce to settle before serving.

- Preheat a grill to medium high. Whisk together the chipotle powder, cumin, orange zest and 1/2 teaspoon salt. Toss with the salmon and set aside.
- Meanwhile, cut off the tops and bottoms of the oranges with a sharp knife. Place cut-side down, then cut off the peel and white pith. One at a time, hold each orange over a bowl and cut along the membranes to remove the segments, letting them fall into the bowl. Squeeze the juice from the membranes into the bowl. Chop the orange slices into small pieces, then return to the bowl. Add the avocado, red onion, cilantro, jalapeño, lime juice and a pinch of salt; toss well.
- Lightly oil the grill and add the corn. Grill, turning occasionally, until charred all over, 12 to 15 minutes. After a few minutes, add the salmon to the grill and cook until well marked and charred at the edges, about 2 to 4 minutes per side, depending on the thickness. Grill the tortillas until marked and warmed, 20 to 30 seconds per side.
- Cut the corn kernels off the cob and toss with the avocado-orange salsa. Divide the tortillas among plates and top with the salmon, salsa and more cilantro. Serve with the lime wedges.

- Heat the grill to high and line a large baking tray with foil. Mix the smoked paprika and cumin in a small bowl. Rub the spices over the salmon fillets and put them on the baking tray. Pop under the grill for 8-10 mins until cooked through.
- While the salmon cooks, combine the yogurt with the garlic and season to taste. In another bowl, combine the avocados, onion and tomatoes. Add the lime juice, season and scatter with coriander.
- Warm the taco shells in the oven, following pack instructions. Flake the salmon and serve with the tacos, avocado salsa, yogurt and lime wedges.
