4 10-12 inch flour tortillas ((XL burrito size))
4 tablespoons vegetable oil ((or any flavorless oil))

Steps:

  • Preheat the oven to 350 degrees F. Set 4 oven-safe cereal bowls on a large rimmed baking sheet. Then set a large 12-14 inch skillet on the stovetop over medium heat.
  • Pour 1 tablespoon oil into the skillet. Once hot, place the tortilla in the skillet. Use tongs to swirl the tortilla to coat it in oil, flip it over, and swirl it again. It needs to be coated in oil, on both sides, right away.
  • Pan-fry the tortilla for 30-45 seconds per side, allowing it to puff up with large bubbles. (The bigger the bubbles the better!) Flip and repeat. Make sure the tortilla isn't turning dark. It should be golden-brown.
  • Use tongs to move the tortilla to one of the cereal bowls. Tuck it down into the bottom of the bowl, to create a bowl shape with the tortilla. Take care not to deflate the bubbles.
  • Repeat with the remaining three tortillas. Once all the tortillas are flash-fried and shaped into bowls, bake for 9-10 minutes until very crispy. Cool and fill.

2 Tablespoons Taco seasoning (, or 1 packet)
½ cup water
1 can black beans (, drained and rinsed)
1 cup corn ((canned or frozen))
1 head romaine lettuce (, chopped)
6 (8 inch) flour tortillas (, or 1 bag tortilla chips)
2 cups cherry tomatoes (, halved)
½ cup Sliced Olives
½ cup shredded cheese
¼ cup chopped red or green onion
½ cup chopped cilantro
Salsa
Sour Cream
Guacamole (, or chopped avocado)

Steps:

  • Add ground beef to a skillet over medium heat. Cook, crumbling with a wooden spoon into small pieces, until cooked through. Remove grease. Add taco seasoning and water and cook for 5 minutes. Stir in black beans and corn.
  • Assemble: Add baked tortilla shell (recipe follows) or tortilla chips to the bottom of a shallow bowl. Top with a handful of lettuce, then taco meat and desired toppings. Add salsa, sour cream and guacamole (or avocado) on top.

4 tortillas of choice*, 8-10 inch size
cooking spray

Steps:

  • Preheat oven to 375°F (190°C).
  • Spray both sides of tortilla with cooking spray. Press tortilla into a 1-quart oven-safe bowl to make taco salad shell shape. Pinch edges of tortilla and create folds, following the rim of your bowl.
  • Place bowl on baking sheet. Bake on the middle or lower rack of the oven for 15-20 minutes, until edges are browned. (Bake on a lower rack in the oven so the edges don't brown too quickly.)
  • Allow to cool to room temperature before filling with taco salad. (It will crisp up more as it cools.)
  • Serve and enjoy!

4 large flour tortillas
2 romaine lettuce hearts
2 tomatoes
½ red onion
2 avocados
1 cup corn, canned, rinsed and drained
1 cup black beans, canned, rinsed and drained
¼ cup olive oil
¼ cup lime juice
1 clove garlic, minced
⅛ teaspoon cumin
½ teaspoon red pepper flakes
3 tablespoons fresh cilantro, chopped
½ teaspoon salt
½ teaspoon pepper

Steps:

  • Preheat the oven to 350°F (180°C).
  • Pour the vegetable oil (1 teaspoon per bowl) into medium (1.2 quart) oven-proof bowls and rub around to coat the surface. Press each tortilla into a greased bowl.
  • Bake for about 10 minutes, until golden brown. Let the tortilla bowls cool.
  • Make 3 cuts lengthwise on each of the romaine hearts, remove the stems, and chop into smaller pieces. Rinse, drain, and place in a large salad bowl.
  • Dice the tomatoes and add them to the bowl with the romaine.
  • Dice the onion and add it to the salad.
  • Cut the avocados in half, remove the pits, and dice. Add to the salad.
  • Add the corn and black beans.
  • In a small bowl or liquid measuring cup, combine the olive oil, lime juice, garlic, cumin, red pepper flakes, cilantro, salt, and pepper. Mix well.
  • Pour the dressing over the salad and toss well.
  • Fill each tortilla bowl with the salad.

2 (8 inch) flour tortillas
1 tablespoon vegetable oil
2 oven-safe ramekins, about 4 inches in diameter
Aluminum foil

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Brush both sides of tortilla with oil.
  • Invert ramekin on a work surface; center tortilla on the bottom of the ramekin. Gently shape the tortilla down around the sides. Place a double layer of aluminum foil over the tortilla and press to form the bowl around the ramekin. Place right side up on a baking sheet and leave about 1/2 inch of the edge of the tortilla above the foil so it gets browned and crispy when you bake it. Repeat with the second tortilla.
  • Place baking sheet in preheated oven for 5 minutes. Remove sheet from oven and use tongs to carefully remove the ramekins from inside the shells. Transfer sheet back to the oven. Bake shells until lightly browned, about 5 minutes. Remove baking sheet from oven.
  • Carefully remove foil from around the shells; reserve the foil. Flatten foil sheets and invert shells on them. Bring foil up just around the bottom of the shells to protect the top edge.
  • Transfer sheet back to the oven. Bake until browned and crispy, 8 to 10 minutes. Remove sheet from oven and invert the shells once again so they are right side up. Place on foil and transfer sheet back to oven for the final crisping, 3 to 5 minutes. Watch them carefully so they don't burn.
  • Remove sheet from oven; transfer basket burritos to a rack to cool completely.

1 tablespoon extra-virgin olive oil
4 10-to-12-inch flour tortillas
Kosher salt
1 teaspoon dried minced garlic or garlic flakes
1 teaspoon dried minced onion or onion flakes
1 teaspoon dried oregano
2 teaspoons ground cumin
2 teaspoons chipotle chile powder
3 scallions, finely chopped
4 teaspoons Worcestershire sauce
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
3/4 pound sirloin steak (about 1-inch thick)
1 green bell pepper, thinly sliced
1 large onion, halved and thinly sliced
1/4 cup mayonnaise
2/3 cup buttermilk
1 English cucumber, quartered lengthwise and sliced
2 romaine lettuce hearts, roughly chopped
1 15-ounce can black beans, drained and rinsed
2 2.25-ounce cans sliced black olives, drained
4 ounces cheddar or Monterey Jack cheese (or a combination), shredded
Fresh salsa, for topping

Steps:

  • Make the tortilla bowls: Position a rack in the lower third of the oven; preheat to 450 degrees F. Put 4 empty cans (labels removed) or small ovenproof bowls upside down on a baking sheet. Drape a square of foil over each can and coat with cooking spray.
  • Fill a shallow bowl with 1/2 inch warm water; whisk in the olive oil. Soak each tortilla in the water until soft, about 5 seconds, then drape over the prepared cans, pleating as needed. Bake until golden, about 5 minutes. Remove from the oven and invert the tortilla bowls onto the baking sheet; remove the cans and foil. Spray the inside of the tortilla bowls with cooking spray, season with salt and continue baking until crisp, 4 to 5 more minutes; let cool.
  • Meanwhile, make the steak: Whisk the dried garlic, onion and oregano, the cumin, chile powder, scallions, Worcestershire sauce, olive oil, 1 1/2 teaspoons salt and 1 teaspoon pepper in a bowl. Put the steak in a shallow dish and rub with 2 tablespoons of the spice mixture (reserve the rest for the dressing). Add the bell pepper and sliced onion and toss. Cover and refrigerate 30 minutes or up to 4 hours.
  • Heat a large cast-iron skillet over high heat. Add the steak and scatter the bell pepper and onion around it. Sear the steak about 5 minutes per side, then transfer to a cutting board. Continue cooking the pepper and onion until just tender, about 3 more minutes. Thinly slice the steak against the grain, then cut into 1-inch pieces.
  • Assemble the salad: Whisk the mayonnaise, buttermilk and the reserved spice mixture in a large bowl until smooth. Add the cucumber, lettuce, beans and olives and toss. Divide the salad among the tortilla bowls. Top with the steak, bell pepper, onion, cheese and salsa.

This tasty salad is made with baked tortilla bowls and Lawry's Taco Seasoning. I think there is a copycat version on this site somewhere for that. You could make that one, if you wish, instead of the store-bought. This was a fun dinner to make and very easy. Serve sour cream and salsa on the side. You can add more vegies or add peppers, if you wish.

4 (10 inch) flour tortillas, room temperature
nonstick cooking spray
kosher salt
1 (1 ounce) envelope taco seasoning (Lawry's)
1 lb ground beef
4 cups lettuce leaves
1 large tomatoes, chopped
1/2 cup sliced green onion, divided
1/2 cup sliced ripe olives, divided
1 cup shredded cheddar cheese (about 4 oz )
sour cream (optional)
salsa (optional)

Steps:

  • Spray one side of each tortilla with no-stick cooking spray. Lightly sprinkle with salt. Place oiled side of tortilla over ovenproof 7x3-inch mixing bowl. Place 6 oz. custard cup upside-down in center of tortilla; gently press custard cup and tortilla into bowl.
  • Bake in a preheated 375 F oven until edges are golden brown (12-15 minutes). Remove to wire rack. Remove custard cup. Invert shell; cool completely. Repeat with remaining tortillas.
  • In 12-inch skillet, brown ground beef over medium-high heat. Stir in Taco Spices & Seasonings and continue preparing according to package directions. (Note: I like to add a couple of Tbsp of salsa to the seasoned meat as I think it's too dry.).
  • TO SERVE:
  • Place 1 1/2 cups lettuce in each shell. Top each with 3/4 cup warm meat mixture; sprinkle with cheese, tomatoes, green onions and olives.

1 teaspoon vegetable oil

Steps:

  • Microwave Oven Method:.
  • Lightly grease bottom and outside of a 2 cup microwave-safe liquid measure measuring cup.
  • Turn measuring cup upside-down and press tortilla over bottom and sides.
  • Microwave on high (100%) for 1 minute.
  • Using clean oven mitts, again press tortilla around measuring cup and microwave on high for another minute until brown spots begin to appear.
  • If necessary, press tortilla against measuring cup again.
  • Turn out onto rack to cool.
  • Conventional Oven Method:.
  • Lightly grease bottom an outside of oven-safe 2 cup liquid measure measuring cup.
  • Turn measuring cup upside down onto a baking sheet and press tortilla over bottom and sides.
  • Bake in 325F oven for 7 to 10 minutes, occasionally pressing tortilla against measuring cup, until brown spots appear.
  • Turn out onto rack to cool.
  • Note:.
  • For larger bowl, use a 10 inch flour tortilla over a 4 cup liquid measure measuring cup.
