TACO NACHOS
My kids wanted nachos. I didn't have a recipe, so I created this one. It was a hit with us!

Steps:
- Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and mix in taco seasoning mix and water. Continue cooking 5 minutes. Remove from heat.
- Place processed cheese and milk in a small, microwave safe bowl. Microwave on high until melted, 1 to 2 minutes. Stir until blended and smooth.
- Place tortilla chips on a large, microwave safe dish. Spread with refried beans. Top with beef and cheese and mixtures.
- Microwave approximately 2 minutes on high, until the cheese has melted into the beef. Top with tomato and green onions. Serve warm.

- Cook the beef, onion and chili powder in a 10-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat.
- Stir 1/2 cup soup in the skillet and cook until the mixture is hot and bubbling.
- Heat the remaining soup in a 1-quart saucepan over medium-high heat until hot and bubbling. Spoon the beef mixture into the taco shells. Top with the soup, lettuce and tomato.

JACK-O-LANTERN SUPPER CASSEROLE
A "Taste of Home" recipe I found years ago, which has become a family tradition for our Halloween table. I also make it for potlucks during the month of October and it always gets lots of requests for the recipe.

Steps:
- Paint face on pumpkin with marker.
- Brown beef and onion. Drain.
- Add soup, sugar, soy sauce and mushrooms and simmer 10 minute
- Add rice and waterchestnuts.
- Spoon into pumpkin. Replace top. Bake on cookie sheet in center of oven at 350 degrees for 1-2 hours or until inside of pumpkin is tender.
- Serve on plate. Scoop cooked pumpkin out and serve.

- Preheat the oven to 400°F Cut the bread into 2 triangles for jack o' lantern eyes, 1 large mouth, and 1 stem.
- Bring a large pot of generously salted water to a boil. Add the cauliflower and cook until tender, about 5 minutes. Use a slotted spoon to transfer the cauliflower to a blender. Add the macaroni to the boiling water and cook until just tender, about 4 minutes. Drain and transfer to a 9-inch pie dish.
- While the macaroni cooks, add the cream, mustard, and 1 1/2 cups cheese to the blender. Puree until smooth. Season to taste with salt and pepper. Pour over the macaroni and gently stir until well-combined. Top with the remaining 1/2 cup cheese, then the pumpernickel croutons.
- Bake until bubbling, about 15 minutes.

- Prepare pizza dough according to package directions. Coat a 12-in. pizza pan with cooking spray; sprinkle with cornmeal. With floured hands, press dough onto pan. - Spray counter lightly with non-stick cooking spray. Flatten 1 Texas roll or 2 dinner rolls combined into a 5-inch circle. Repeat with remaining rolls. Place on large sprayed baking sheets. Cook ground beef with taco seasoning according to the directions on the packet. Mix ground beef mixture, beans and salsa together. Divide evenly between dough circles. Toss chips with enchilada sauce and spoon evenly over hamburger mixture. Top with cheese and bake at 350°F 20-25 minutes or until edges are lightly browned.
