A great recipe from the Weight Watchers community boards. 2 points for a half cup. Use taco junk for nachos, taco salads, or served over pasta or rice. This recipe is core.

Number Of Ingredients 6

1 lb ground turkey, browned
1 (5 ounce) can whole corn, drained
15 ounces great northern beans, drained
1 ounce dry ranch dressing mix
1 (15 ounce) can diced tomatoes with green chilies
16 ounces salsa

Steps:

  • Mix all ingredients together.
  • Place in a crockpot.
  • Cook on high for 4 hours.
  • Note: I didn't use the beans. It was milder than I thought it would be so next time I would add some taco seasoning, mild green chilies or olives.

Make this a lot for my family and they love it. Its quick, easy and doesn't cost a lot. The quantity of this recipe feeds my family of 4 with some left over.

2 lb ground beef
2 can(s) corn with juice
2 can(s) pinto beans drained and rinsed
1 can(s) rotel with juice
1 can(s) fire roasted diced tomatoes with juice
1 pkg taco seasoning
1 pkg dry ranch dressing
shredded cheese (optional)
sour cream (optional)
crackers (optional)

Steps:

  • 1. Brown your ground beef and drain
  • 2. In large pot combine meat, corn with juice, rotel with juice, diced tomatoes with juice, pinto beans, dry ranch, and taco seasoning.
  • 3. Stir all together and let simmer until heated through. Serve topped with cheese and sour cream if you like.
