BEEF AND BEAN TACO CASSEROLE
Food Network Kitchens nicknamed this the "broken enchilada" casserole because the soft layer of cooked tortilla chips on the bottom reminded us of enchiladas. But this dish is much easier to make!

- Preheat the oven to 375 degrees F. Lightly oil a 9-by-13-inch casserole dish.
- Heat the oil in a large skillet over high heat. When the oil is shimmering, add the beef and sprinkle with the chili powder, cumin, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, breaking up the meat into smaller pieces, until browned, about 5 minutes. Add the onions and garlic and cook until the onions are soft, about 5 minutes more. Add the beans, salsa and 1/2 cup water and bring to a simmer; cook until the sauce thickens and coats the meat, about 5 minutes. Add salt and pepper to taste. (This beef-and-bean mixture can be made up to a day ahead of time.)
- Lay half the tortilla chips on the bottom of the oiled casserole dish. Spread half the meat mixture on top. Sprinkle half the cheese blend over the meat. Repeat with the remaining chips, meat and cheese. Bake uncovered until the cheese melts and the casserole is hot, about 20 minutes.
- Top with sour cream, lettuce, tomato, avocado and pickled jalapenos if desired. Serve with more salsa and tortilla chips on the side.

- Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often. Pour off any fat.
- Stir the soup, salsa, milk, tortillas and half the cheese in the skillet. Spoon the beef mixture into a 2-quart shallow baking dish. Cover the baking dish.
- Bake at 400 degrees F for 30 minutes or until the beef mixture is hot and bubbling. Sprinkle with the remaining cheese.

- Preheat oven to 400 degrees F. Spray 13x9-inch glass baking dish with cooking spray. Place uncooked noodles in baking dish.
- Heat large skillet over medium-high heat. Add beef; cook 5 to 7 minutes or until crumbled and no longer pink. Drain. Add vegetables, undrained tomatoes, enchilada sauce and water to skillet; stir. Bring to a boil. Pour mixture over noodles.

- Heat oven to 350°F. In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in refried beans, salsa and taco seasoning mix. Reduce heat to medium. Heat to boiling, stirring occasionally.
- In ungreased 2-quart casserole, place 2 cups of the broken tortilla chips. Top evenly with beef mixture. Sprinkle with bell pepper, onions, 1 cup of the tomato, the cheese and olives.
- Bake uncovered 20 to 30 minutes or until hot and bubbly and cheese is melted. Top baked casserole with lettuce, remaining 1/2 cup tomato and remaining 1/2 cup tortilla chips.

- Preheat the oven to 375° F.
- Break 12 thinly sliced sandwich steaks into a skillet, cook and toss until browned without overcooking.
- Season with 1/4 tsp.
- of salt, pepper and 1/2 tsp.
- of chili powder.
- Add one (11 oz.) can of tomato soup and one (14 oz.) can of chili beans.
- Cook slowly for a few minutes to heat and blend the flavors.
- Spread a (10-1/2 oz.) package of corn chips in a baking dish, pour the steak mixture over the chips, top with 1/3 cup of sliced ripe olives, 1/2 cup of chopped onions and one cup of grated cheddar cheese.
- Bake in the oven until the cheese melts, and serve piping hot.
- I usually use Philly-Gourmet Sandwich Steaks for this because they are convienantly sliced and 100% pure beef.

- Brown ground beef, adding Taco seasoning when nearly browned with juice from tomato can, I leave in the fat from the burger, drain of you like before adding the seasoning.
- Add tomatoes, cheese soup, and corn.
- Meanwhile, crush the bag of tortilla chips, using more or less of the bag to line the bottom of your casserole dish.
- Pour the heated beef mix on top and bake at 350 degrees for 15-20 minutes, adding shredded cheese to top for 5 minutes or so.
- Serve with whatever you like to accompany mexican dishes - sour cream, fresh tomatoes, lettuce, salsa, etc.
