TACO SOUP (OAMC)
I found this recipe at a Pampered Chef "Power Cooking" show. It was served there and was so good. I came home and made it as part of my OAMC. It was great, even after being frozen. For my family, I make the whole recipe and then halve it when I put it into my freezer. Each bag makes about 6-8 servings, so this recipe will feed my family multiple times. Cook time doesn't include the cooling time before freezing.

Steps:
- Brown the meat with the onions in an 8-qrt stockpot.
- When cooked all the way through, add remaining ingredients and cook over medium heat for 30 minutes.
- Eat now if you are not freezing it. Top with grated cheese, sour cream, tortilla chips, etc.
- If freezing, let cool completely and pour into freezer bags. First mark the bags with "Taco Soup, Reheat to Serve" and the date.
- I usually let the bag partially thaw, enough to get it out of the bag and then heat over low until warmed through.

PIZZA BAGEL BITES (OAMC)
Great to have on hand for a quick lunch or appetizer. You can add any of your favourite pizza toppings to the mix, onions, peppers, sausage, cheddar cheese, etc. my family prefers plain old pepperoni--boring but they love it)

Steps:
- Lay bagels on large cookie sheet.
- Combine remaining ingredients and mix well.
- Top each 1/2 of the bagel with about 2-3 tbsp of mixture.
- Flash freeze on cookie for about 3 hours or until topping on bagels is firm.
- Transfer to large freezer bag, label and freeze.
- To serve: Bake from frozen at 350 degrees for 20-25 minutes or until heated through and cheese melts.

SAM'S HAMBURGERS (OAMC)
I have had these burgers dissapear right before my very eyes. Warning, they are hot, but youcan cut out the chilis and add something else. I mark this as a kid pleaser because my kids love them, but they may be too spicy for others. I never measure, so they turn out differently every time, but this is a rough estimate of them. Freeze them individually for 1 hour, then pack them into freezer bags for up to 2 mths. Thaw and BBQ them or fry on the stove top.

CRISPY TACO BITES
I used this recipe at my first Pampered Chef party a few years ago. I have made it for several football game parties, and for the holidays. It is always a HUGE hit. Who doesn't like cream cheese? :) Before this recipe, I hadn't cooked a lot with wonton wrappers, but they make this appetizer crispy and chewy too!

- Preheat oven to 350.
- Spray a mini-muffin pan lightly with vegetable oil.
- Seperate wonton wrappers and place one in each cup of the pan. Using the pampered chef mini tart shaper, press each wonton into the cup, keeping the cup area open. (If you don't have the tart shaper, just press down with your fingers, being careful not to tear the wonton).
- Combine all filling ingredients into a mixing bowl, and blend until smooth.
- Fill the wonton cups with a teaspoon each of the filling mixture.
- Bake for 10-12 minutes, or until edges are slightly brown. Garnish with toppings of your choice.

DURANGO POTATO CASSEROLE
For those who like it spicy, it's easy to turn up the heat on these potatoes by adding more chili powder or jalapenos for extra kick. O.K. Although this looks tasty, it also sounds like a lot of trouble! A pan for cooking te potatoes, another for cooking bacon, another for baking?! Surely this could be modified for less mess. Cooking a dish before having to cook it again is a little much. But it not hard at all with leftover and less clean up on the dish to do.

Steps:
- 1. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender.
- 2. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; set aside.
- 3. Drain potatoes and transfer to a large bowl; add the tomatoes, cheese, onions and peppers.
- 4. In a small bowl, whisk the mayonnaise, lime juice, seasoned salt and pepper; add to potatoes and gently stir to coat. Transfer to a greased 9x13 -in. baking dish. Coarsely chop bacon; sprinkle over the top. Sprinkle casserole with chili powder.
- 5. Bake, uncovered, at 350*F. for 25-30 minutes or until heated through. Sprinkle with cilantro. Let stand for 5 minutes before serving.
- My Note: It is great for breakfast or brunch, but it also is great served for dinner and guests love it! Don't be swayed from preparing this because of having to clean a few dishes and utensils. Any dish worth making is easily overlooked by having to clean up afterwards. I just clean as I cook, doesn't bother me at all.
