1/4 cup fresh ginger, peeled and chopped
1/2 cup vegetable oil
1/2 cup tahini (sesame paste)
1/2 cup smooth peanut butter
1/2 cup good soy sauce
1/4 cup dry sherry
1/4 cup sherry wine vinegar (or try 1/8 balsamic vinegar,1/8 red wine vinegar)
1/4 cup honey
1/2 teaspoon hot chili oil
2 tablespoons dark sesame oil
1/2 teaspoon fresh ground black pepper
1/8 teaspoon ground cayenne pepper
1 lb spaghetti
1 red bell pepper, julienned
1 yellow bell pepper, julienned
5 scallions, sliced diagonally (white and green parts)

Steps:

  • Place the garlic and ginger in a food processor fitted with a steel blade.
  • Add the vegetable oil, tahini, peanut butter, soy sauce, sherry, sherry vinegar, honey, chili oil, sesame oil, and ground peppers.
  • Puree the sauce.
  • Add a splash of oil to a large pot of boiling salted water and cook the spaghetti until just done, not soft.
  • Drain the pasta in a colander, place it in a large bowl, and while still warm, toss with 3/4 of the sauce.
  • Add the red and yellow bell peppers and scallions; toss well.
  • Serve warm or at room temperature.
  • The remaining sauce may be added, as needed, to moisten the pasta.

I omitted the oil called for in the original recipe and replaced it with water instead. I also gave alternate ingredients to replace the honey as a sweetener in order to make this vegan friendly. Steps:

  • Place the first thirteen ingredients (garlic through cayenne pepper) into a blender, and blend until smooth.
  • Cook the noodles of your choice according to package directions.
  • Drain pasta and place in a large serving bowl.
  • While still warm, toss the pasta with about 3/4 of the sauce.
  • Add the julienned bell peppers and scallions and toss well.
  • This dish is great served warm or even at room temperature.
  • Remaining sauce can be added if pasta seems too dry.

1 1/2 cups chopped onions
2 teaspoons minced garlic
1 1/2 teaspoons minced fresh ginger
1/2-1 1/2 teaspoon dry crushed red pepper (start off with just a little and work your way up)
2 tablespoons sesame oil
2 tablespoons cornstarch
3/4 cup beef broth
1/3 cup hoisin sauce
2 tablespoons soy sauce
8 ounces vermicelli, cooked
1/2 cup sliced green onion

Steps:

  • Brown ground beef in a large skillet, stirring until it crumbles; drain and keep warm.
  • Pour sesame oil in pan and heat till hot. Saute onion and next 4 ingredients hot sesame oil until tender.
  • Combine cornstarch and beef broth, whisking until smooth.
  • Stir broth mixture, hoisin sauce, and soy sauce into onion mixture.
  • Bring to a boil, stirring constantly; boil, stirring constantly, 1 minute.
  • Stir in ground beef.
  • Toss with hot cooked pasta, and sprinkle with sliced green onions.

250 g skinless, boneless fish fillet (9oz (see note 1))
1 pinch salt
1 pinch white pepper
1 tsp Shaoxing rice wine
1 tsp corn starch
1/2 tsp cooking oil
15 dried chilli
2 tsp Sichuan peppercorn (see note 2)
1 tsp cooking oil
250 g celery, cut into thin strips (or bean sprouts)
2 tbsp cooking oil
2 clove garlic (minced)
1 tsp ginger (minced)
1 stalk scallions (chopped)
1.5 tbsp Sichuan chilli bean paste (see note 3)
1 tsp chilli powder
400 ml hot water (or chicken stock)
Coriander (chopped)
2 tbsp cooking oil

Steps:

  • Slice the fish fillet diagonally. Marinate with salt, white pepper, rice wine & corn starch.
  • In a wok (or a deep frying pan), fry dried chilli and Sichuan pepper in oil over a low heat until fragrant (do not burn them). Chop coarsely when cooled. Set aside.
  • In the same wok, heat up oil over a medium heat, stir in celery. Cook for 1.5 minutes or so (30 seconds if using bean sprouts instead). Transfer to a serving bowl. Set aside.
  • Heat up oil in the wok, fry garlic, ginger and spring onion. Add Sichuan chilli bean paste and chilli powder. Pour in water (or chicken stock). Bring it to a full boil.
  • Gently place the fish slices into the wok. When cooked, pour the fish and the soup onto the vegetable.
  • Top with fried spices and coriander. Heat up oil then pour over to sizzle the spices. Serve immediately with plain rice.

I usually double the sauce ingredients. I do not find these are spicy, so you may want to add in some red pepper flakes or ground Szechuan peppercorns if you want some heat. Preparation time is an estimate.

4 green onions, chopped

handful cilantro (chopped)

1 to 2 Tablespoons Szechuan chili flakes (or to taste)
3 Tablespoons vegetable oil
1 Tablespoon dark soy sauce (substitute with regular soy sauce)
2 to 3 teaspoons Chinese black vinegar (substitute with balsamic or rice wine vinegar)
½ teaspoon ginger (grated)
¼ teaspoon salt (or to taste)
¾ teaspoon sugar ((optional))
1 teaspoon Lao Gan Ma Spicy Chili Crisp
1 teaspoon hot chili oil
finely chopped Thai chilis

Steps:

  • Garlic Chili Oil: Saute garlic with vegetable oil in a small pot until it becomes fragrant, about 30 seconds. Remove from the heat and add the rest of the sauce ingredients into the pot.
  • Boil noodles: Bring a large pot of water to a boil and cook your noodles according to the directions. Rinse under cold water and drain very well.
  • Add sauce: Add as much of the Szechuan chili oil sauce according to your liking and spice level.
  • Serve: Top with fresh cilantro, scallions, and a sprinkle of sesame seeds. Serve immediately.

3 cups water
8 ounces frozen shelled deveined cooked large shrimp
1 (3 ounce) package chicken-flavored ramen noodles
1 (3 ounce) package shrimp flavor ramen noodle soup (SEASONING PACKET ONLY!)

Steps:

  • In large saucepan, combine frozen vegetables and contents from sauce packet from meal starter, water and shrimp.
  • Cook over high heat until vegetables and shrimp are thawed, stir occasionally.
  • Bring to a boil.
  • Add noodles and contents of seasoning packet from chicken soup mix (WHEN I MADE THIS, I ADDED THE SHRIMP SEASONING PACKET AFTER TASTING. THIS OPTION IS UP TO YOU!).
