SYRIAN PEPPER

Syrian Pepper image

This spice blend is frequently used in Syrian and Armenian dishes. This recipe is derived from my grandmother-in-law's Armenian Orthodox church. The original made just over a pound of spice blend, which is far too much, so I've scaled it down by a quarter.

Number Of Ingredients 5

Ingredients

3 ounces whole allspice
1 ounce whole black peppercorn
5 whole cloves
1/2 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg

Steps:

Grind the allspice, pepper, and cloves in a food processor, coffee grinder or blender.
Add the cinnamon and nutmeg and pulse briefly to combine.
Store in a covered container.

Place the bell peppers skin side facing up onto the foil, roast in a broiler until the skins turn black and blistered this should take about 5-10 minutes.
Remove the peppers and place them in a bowl and cover with plastic wrap, set aside for about 15 minutes Meanwhile, toast the bread in a toaster and let cool.
Put the toast inside a plastic ziplock bag and seal then crush the toast with a rolling pin to make crumbs.
