Hoppin' John is a Southern rice and bean dish traditionally served on New Year's Day to bring prosperity and good luck.

1 pound dried black-eyed peas, soaked
1 medium yellow onion, diced
1 rib celery, diced
1 medium red bell pepper, diced
2 cloves garlic, minced
1 smoked ham hock
32 ounces low-sodium chicken stock
1 bay leaf
1 to 1 1/2 cups long-grained white rice
Hot pepper sauce to taste, for garnish

Steps:

  • In a large (6 quart) slow cooker crock, combine the soaked beans, onion, celery, bell pepper, garlic, and ham hock.
  • Pour the chicken stock into the slow cooker crock and stir to combine the ingredients. Add the bay leaf and push it into the liquid until it's submerged.
  • Cover the slow cooker and cook on low for 7 to 8 hours, until beans are tender. Discard the bay leaf and the ham hock. The stew can also be cooked on high for 4 to 5 hours.
  • Before serving, prepare the rice as you would normally.
  • To serve, spoon some cooked white rice into a bowl and ladle Hoppin' John over the rice. Pass hot pepper sauce at the table for everyone to season to their liking.

This is a mish-mash of several different Hoppin' John recipes and has been converted to be cooked in a crock pot. Cornbread and a green salad compliment this meal.

HOPPIN' JOHN
1 lb dried black-eyed peas, soaked
1 large white onion, diced
2 stalk(s) celery, diced
1 medium red bell pepper, diced
2 tsp garlic, minced
1-2 c ham, diced
32 oz chicken broth
1-2 Tbsp chicken bouillon granules
1-2 Tbsp cajun seasoning blend
1 bay leaf
4 slice bacon
salt, to taste
black pepper, to taste
1/2 bunch green onion, diced
RICE
3-4 c white rice, prepared

Steps:

  • 1. Combine the soaked beans (soak overnight), white onion, celery, red bell peppers, garlic & ham in a large crock pot.
  • 2. In a bowl, whisk the chicken bouillon granules and Cajun seasoning into the chicken broth. Pour into the crock pot and stir to combine the ingredients.
  • 3. Add one bay leaf, pushing it down into the liquid until it is sumerged.
  • 4. Lay the four strips of bacon over combined ingredients, side-by-side. It's okay if they sink.
  • 5. Cook on high 7-8 hours (or low 4-5 hours), until the beans are tender. Discard the bay leaf and rendered bacon. Taste and adjust seasoning, if necessary (add salt & black pepper to taste).
  • 6. Serve over white rice, garnished with a sprinkle of green onion.

2 smoked pork hocks (about 1 1/4 lb)
1 3/4 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
1 tablespoon dried chopped onion
2 cans (15.8 oz each) black-eyed peas, drained, rinsed
1/2 lb smoked sausage, cut in half lengthwise, then cut crosswise into 1-inch pieces
1/2 cup uncooked instant rice

Steps:

  • Spray 3 1/2- to 4-quart slow cooker with cooking spray. Place pork hocks in cooker. Add 1 cup of the broth (refrigerate remaining broth). Top pork with onion, peas and sausage.
  • Cover; cook on Low heat setting 8 to 10 hours.
  • Remove pork from cooker; place on cutting board. Pull meat from bones, using 2 forks; discard bones, skin and fat. Return pork to cooker. Add remaining broth and the rice. Increase heat setting to High. Cover; cook 10 minutes or until rice is tender.

This is a traditional Southern dish for bringing good luck into the New Year, consisting of black-eyed peas and rice. Eating Hoppin' John on New Year's Day is thought to bring a prosperous year filled with luck. The peas are symbolic of pennies or coins, and a coin is sometimes added to the pot or left under the dinner bowls. Greens along with this dish are supposed to also add to the wealth since they are the color of money. Eating this the day after represents frugality and savings. You are supposed to leave 3 peas to assure that the New Year will be filled with Luck, Fortune and Romance. Serve hot with corn bread.

1 cup dried black-eyed peas, sorted and rinsed
1 cube vegetable bouillon
¼ cup hot water
1 onion, chopped
1 clove garlic, minced
1 smoked ham hock
2 bunches collard greens, chopped
1 tablespoon dried oregano
1 tablespoon red pepper flakes
2 cups vegetable broth
5 cups water, or as needed to cover
1 cup long-grain white rice
salt and ground black pepper to taste

Steps:

  • Cover black-eyed peas with water in a large soup pot, bring to a boil, and boil for 2 minutes. Reduce heat to low and simmer peas for 1 hour. Drain.
  • Dissolve vegetable bouillon cube in 1/4 cup hot water in a small bowl; pour bouillon into slow cooker. Stir black-eyed peas, onion, garlic, ham hock, collard greens, oregano, red pepper flakes, and vegetable broth into the cooker. Add 5 cups of water or as needed to cover. Cook 5 hours on High. Stir rice into stew and cook 1 more hour.
  • Remove meat from ham hock, chop meat, and return to stew. Season with salt and black pepper.

Every New Years Day for about 5 years I sent this out the the Maintenance men at the Magic Kingdom at Walt Disney World, along with a big pan of cornbread, and the slow cooker always came home empty! It's good luck for New Years.

3 (14 1/2 ounce) cans black-eyed peas (I prefer Glory Brand)
1 (16 ounce) bag frozen chopped collard greens
1 cup chopped onion
3/4 cup chopped carrot
3/4 cup chopped celery
3/4 lb ham, cut in bite sized pieces
1 can chicken broth
2 teaspoons thyme
1/2 teaspoon red pepper flakes
1 cup uncooked rice

Steps:

  • In a 5 to 6 quart slow cooker put ham, carrots, onion and celery as first layer.
  • Add 3 cans blackeyed peas and collard greens as second layer.
  • Mix spices in chicken broth and pour over all.
  • Cook on low for 8 to 10 hours, depending on your slow cooker.
  • Cook rice according to directions on package and add to Hoppin' John just before serving.
  • Add more chicken broth if needed.
  • Makes 10 to 12 servings.

1 lb dried black-eyed peas
2 quarts water, plus
3 cups water
1 medium onion, finely chopped
3 garlic cloves, minced
1 (7 ounce) can diced green chilies
2 teaspoons ground cumin
1/4 teaspoon pepper
1/4 teaspoon baking soda
1 dried chipotle chiles or 1 canned chipotle chile
1/2 cup short-grain brown rice
3 large tomatoes, peeled & chopped
salt

Steps:

  • Rinse and sort through peas.
  • In a deep 3 1/2 to 4 quart pan, bring 2 quarts of the water to a boil over high heat.
  • Add peas.
  • Let water return to a boil; then boil, uncovered, for 2 minutes.
  • Remove pan from heat, cover, and let stand for 1 hour.
  • Drain and rise peas, discarding cooking water.
  • In a 3 1/2 quart or larger slow cooker, combine onion, garlic, green chiles, cumin, pepper, baking soda, and chipotle chile.
  • Stir in peas; pour in remaining 3 cups water.
  • Cover and cook at low setting until peas are tender and to bite (9 to 10 hours).
  • Remove and discard chipotle chile; stir in rice and tomatoes.
  • Increase cooker setting to high; cover and cook until rice is tender to bite (45 to 55 more minutes).
  • Season to taste with salt.
