GRILLED SWORDFISH WITH SALSA VERDE



Grilled Swordfish with Salsa Verde image

Grated zest of 3 lemons, plus 2 halved lemons
10 cloves garlic, smashed
2 cups olive oil, plus more for the grill
1/4 cup fresh thyme, chopped
1 tablespoon Ottoman spice or Aleppo pepper
8 1-inch-thick swordfish fillets (8 to 10 ounces each)
1/2 small red onion, sliced 1/4 inch thick
1 small jalapeno pepper
1 tablespoon sherry vinegar
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh mint
Juice of 1/2 lime
Kosher salt
2 avocados, pitted and quartered (skin on)
1 bunch watercress, trimmed
Flaky sea salt

Steps:

  • Combine the lemon zest, garlic, 1 cup olive oil, the thyme and Ottoman spice in a bowl; mix well. Divide the marinade between two 1-gallon zip-top bags, then divide the swordfish between the bags. Let marinate in the refrigerator for at least 1 hour or up to overnight.
  • Preheat a grill to high and oil the grates. Grill the red onion and jalapeno until marked, about 2 minutes per side. Transfer the red onion to a bowl, top with the vinegar and cover with plastic wrap, trapping the steam inside to finish the cooking process. Peel, seed and chop the jalapeno.
  • Make the salsa verde: Combine the jalapeno, parsley, cilantro, mint, lime juice and remaining 1 cup olive oil in a bowl. Once cool enough to touch, remove the onion from the vinegar and coarsely chop, then add both the vinegar and the onion to the salsa verde; season with 1/2 teaspoon kosher salt and combine well.
  • Remove the swordfish from the marinade, shake off the excess and season with kosher salt. Reduce the grill heat to medium. Grill the swordfish 2 minutes, then rotate 90 degrees and grill 2 more minutes to create crosshatch grill marks, then flip and grill until just opaque, about 2 more minutes. Increase the grill heat to high. Grill the halved lemons and the avocados cut-side down until marked, 1 to 2 minutes.
  • Dress the watercress with some of the salsa verde on a platter. Top with the swordfish, avocado and more salsa. Garnish with the grilled lemons. Finish with a sprinkle of sea salt.

4 8-ounce pieces swordfish (or 1 2-pound steak)
3 tablespoons olive oil
Juice 1 lemon
1 tablespoon fresh thyme leaves, chopped (or 1/2 teaspoon dried)
Coarse salt and freshly ground pepper to taste
2 shallots, coarsely chopped
4 ripe tomatoes, peeled, skinned and chopped (or 1 1/2 cups canned)
1 tablespoon fresh rosemary leaves, chopped (or 1 teaspoon dried)

Steps:

  • Wipe the swordfish dry with paper towels. Combine two tablespoons olive oil with the lemon juice, thyme, salt and pepper. Brush the mixture on the swordfish and marinate for one hour.
  • Preheat broiler to high.
  • Meanwhile, soften the shallots in the remaining tablespoon olive oil over low heat and add the tomatoes and rosemary. Cook for three to four minutes, stirring occasionally. Set aside.
  • Broil the swordfish for five to seven minutes, turn and broil for about three minutes longer. Place on a serving dish or individual warm plates and place the tomato-rosemary mixture on the side. Serve immediately.

11/2 cups extra-virgin olive oil 11/2 tablespoons grated lemon zest (from 2 medium lemons)
11/2 tablespoons grated orange zest
1 tablespoon chopped thyme
Four 12-inch rosemary branches, leaves removed and chopped, branches reserved (see Cook's Note)
2 pounds swordfish, cut into approximately 16 cubes

Steps:

  • Pour 1/4 cup oil into a wide, shallow, nonreactive dish. Stir in the lemon and orange zests, 1/2 tablespoon of the thyme and all but 1 tablespoon of the chopped rosemary. Add the swordfish to the marinade and turn to coat the fish completely. Refrigerate 2 to 24 hours.
  • Preheat gas grill to high or prepare a charcoal grill, letting the coals burn until white ash is visible. Remove the swordfish from the marinade, brushing off any solids. Skewer the fish pieces with the rosemary branches (about 4 pieces per branch). Season each kebab with salt and pepper. Place the skewers on the hot grill and cook, turning as needed, until cooked through, approximately 4 minutes total.

1 garlic clove, crushed through a press
4 swordfish steaks, 3/4-inch thick (about 1/2 pound each)
Salt and freshly ground pepper to taste
1 tablespoon capers, rinsed and drained
Lemon wedges for garnish
4 strips (1/2 by 3-inches) lemon zest

Steps:

  • Combine the lemon zest, oil, rosemary and garlic on a large, shallow platter or a tray large enough to hold the swordfish steaks in a single layer. Add the swordfish, sprinkle with salt and pepper and turn to coat with the marinade. Cover and marinate in the refrigerator for 1 to 2 hours.
  • Brush the grill or broiler pan with a thin film of oil. Just before serving time, preheat the grill or broiler. Transfer the swordfish to grill or broiler pan, reserve the marinade left on the platter. If broiling, adjust the oven rack so that the tops of the fish are about 3 inches from the heat source. 4 (4 ounce) swordfish steaks
¼ teaspoon salt

Steps:

  • In a small bowl, stir together the lemon juice, olive oil, and remaining rosemary. Set aside.

4 6-ounces swordfish steaks (each 1 to 1 1/2 inches thick)
2 tablespoons olive oil
2 1/2 teaspoons chopped fresh rosemary
6 tablespoons minced shallots
6 tablespoons dry white wine
3 tablespoons fresh lemon juice
1/2 cup (1 stick) chilled butter, cut into 8 pieces

Steps:

  • Prepare barbecue (medium-high heat). Brush fish with oil. Sprinkle with 2 teaspoons rosemary. Season with salt and pepper.
  • Combine shallots, wine and lemon juice in small saucepan. Boil until liquid is reduced to 2 tablespoons, about 5 minutes. Remove from heat. Add remaining rosemary. 2 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
2 green onions, thinly sliced

This is a wonderful recipe for swordfish. I received this recipe from Bon Appetit magazine years ago. I have tweaked it to my liking and it always seems to get raves when I serve it in summer. It is a light entree for a summer terrace meal. I have both grilled and broiled the fish depending on the season. The sauce is a nice compliment to the dish.

4 swordfish fillets, 1 1/2 inch thick
2 tablespoons olive oil
2 teaspoons fresh rosemary, minced
1 tablespoon parsley
1/4 cup shallot, minced
1/3 cup dry white wine
3 tablespoons lemon juice
2 tablespoons fresh lemon zest, grated
1/2 cup butter, cut into pieces
4 sprigs rosemary

Steps:

  • In a sauce pan combine parsley, shallots, wine and lemon juice. Bring to boil and reduce to about 3 tablespoons.
  • Add 1/2 tsp of minced rosemary and lemon zest.
  • Reduce heat to low and add butter a piece at a time, and whisk to combine well.
  • Remove from heat and add salt and pepper to taste. Keep warm.
  • Sprinkle swordfish fillets with remaining minced rosemary, salt and pepper.
  • Grill, over medium heat, about 3-4 minutes per side. Remove from grill and let set several minutes.
  • To plate fish, smear a bit of sauce in center of each plate. Place fillet on top, then drizzle more sauce on top. Serve with a sprig of rosemary as garnish.
