1/2 cup (1 stick) unsalted butter
3 tablespoons balsamic vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
6 6-ounce swordfish steaks (each about 3/4 inch thick)
Olive oil
2 tablespoons drained capers
Chopped tomatoes (optional)

Steps:

  • Simmer butter in heavy medium saucepan over medium heat until deep golden brown, swirling pan occasionally, about 6 minutes. Remove from heat. Whisk in vinegar, honey and mustard. Season sauce with salt and pepper.
  • Brush fish with oil; sprinkle with salt and pepper. Heat heavy large skillet over medium-high heat. Add 3 swordfish steaks. Sauté just until opaque in center, about 4 minutes per side. Transfer to plates; tent loosely with foil to keep warm. Repeat with remaining fish. Whisk sauce over low heat to rewarm if necessary. Spoon sauce over fish. Sprinkle with capers and, if desired, tomatoes.

  • Fill a small saucepan two-thirds full with water and bring it to a boil. Add the whole garlic cloves and boil them for 2 full minutes. Drain the garlic and, using a small paring knife, remove any tough ends. Set the poached garlic aside. To pit the olives, place them, one at a time, on your work surface and lay the blade of a chefs knife flat on top. Push down on the blade firmly, without overdoing it. You’ll feel (and almost hear) a dull “pop” as the olive meat releases from its stone. Slit the olive down one side, then open it to lift out the stone. Slice the olives in half.
  • Melt the ½ cup butter in a 10- to 12-inch nonreactive skillet over medium heat, and when hot and bubbling, reduce the heat to low. Continue to cook the butter, occasionally swirling the pan, until the milk solids turn light golden brown. Add the parboiled garlic cloves and cook, stirring occasionally, until the garlic turns golden, being careful not to allow them to burn. Add the sliced peppers, drained capers, and olives and swirl the pan so they intermingle with the garlic. Add the balsamic vinegar and put the pan on a cool burner for now.
  • If using a gas grill, preheat it to high, covered. If using a charcoal grill, heat the coals and get the food grate hot. If cooking indoors, position the oven rack as close as possible to the heat source and preheat the broiler. (Do not preheat the broiler pan.)

  • Make the blueberry balsamic reduction. Combine all ingredients for the blueberry balsamic reduction in a small saucepan. Whisk occasionally over medium heat until it reduces by half (approximately 5 minutes). Then whisk in 2 tablespoons of water and cook until the sauce reaches your desired consistency. You want it to be almost syrupy, but not too thick. Remove the reduction from the heat and keep warm.
  • Preheat the grill. Preheat your grill for 2-zone cooking (one side of the grill with indirect heat and the other with direct heat) with an overall grill temperature of 400 degrees F.
  • Grill hot. Drizzle both sides of the swordfish with your high temperature cooking oil and season with salt and pepper. Place your swordfish directly on the direct heat side of the grill and cook for 2-3 minutes per side, flipping carefully with a metal spatula.
  • Cook over indirect heat. Move fillets over to the indirect heat side of the grill. Grill for 5 minutes without filliping until the internal temperature of the swordfish reaches your desired temperature (FDA recommends 145 degrees F). You can likely remove the fish from the grill at 140 degrees F with carryover cooking increasing the temperature to the target 145 degrees F.
