2.5 lbs. round steaks (or bottom or top round roast cut into thick steaks (2-4 pounds will work fine in this recipe))
1/2 cup flour
1 tsp. salt
1/4 tsp. black pepper
4 Tbsp. cooking oil
10.5 oz. Campbell's beef consomme (or beef broth)
29 oz. petite diced tomatoes ((two 14.5 oz. cans) do not drain)
2 Tbsp. Worcestershire sauce
1 cup diced onion
1 green bell pepper
2 garlic cloves (minced)

Steps:

  • On a large plate add the flour and salt and pepper. Mix this together.
  • Dredge each steak in this mixture on both sides, transfer to another plate. Save any excess flour mixture, you will add this to the slow cooker with the meat later.
  • Set a large skillet to medium high heat. Add enough oil to coat the pan. Brown the steaks on both sides, no need to cook through. You may have to cook the meat in two batches if your pan is too small, add more oil inbewteen batches. Add the browned steaks to the slow cooker. Sprinkle over any excess flour from the plate.
  • Deglaze the pan that you browned the meat in with by adding the beef consomme and scrapping up any brown bits. Add to the slow cooker on top of the beef.
  • Add the remaining ingredients, stir.
  • Place the lid on the slow cooker. Cook on LOW for 7 hours or HIGH for 4 hours with out opening the lid during the cooking time.

One 4- to 5-pound beef chuck roast
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
4 cloves garlic, coarsely chopped
2 yellow onions, thickly sliced lengthwise
2 tablespoons tomato paste
2 cups reduced-sodium beef broth
1/2 cup dry red wine
2 tablespoons Worcestershire sauce
3 carrots, peeled and chopped
3 sprigs fresh parsley
3 sprigs fresh thyme
2 dried bay leaves
2 stalks celery, sliced

Steps:

  • Pat the beef dry with paper towels and sprinkle well on all sides with salt and pepper. Heat the oil in a large deep skillet or Dutch oven over medium-high heat (or if your slow cooker has a browning feature, preheat it). Sear the meat on all sides until browned, then transfer to a plate.
  • Add the garlic and onions to the pan or slow cooker and cook until softened, about 5 minutes. Add the tomato paste and cook, stirring, for 1 minute. Add the red wine and cook, scraping any browned bits off the bottom of the pan. If searing in a skillet, transfer the contents of the pan to a slow cooker set on low heat.
  • Nestle the beef into the onions and add the broth, wine, Worcestershire, carrots, parsley, thyme, bay leaves and celery, and stir well to combine. Cover and cook until the meat is fork-tender, about 8 hours.
  • Remove the roast from the slow cooker and cover to keep warm. Strain the cooking liquid into a large saucepan, and simmer over medium-low heat until thickened, about 10 minutes. (You can also puree some of the carrots and onions in a food processor and add it to the cooking liquid to thicken it.)
  • Slice the pot roast, ladle the gravy over it, and serve.

6 medium beef blade steaks*
8 oz fresh mushrooms (thinly sliced)
1 medium onion (sliced)
1 tbsp fresh thyme (minced)
1 1/2 tsp sweet paprika
3/4 cup chicken stock
1/4 cup dry sherry
1/4 cup flour
4 tbsp oil
salt and pepper to taste
2 tbs fresh parsley (chopped)
1/2 cup heavy cream

Steps:

  • Heat a heavy skillet or saute pan over medium heat. Add 1 tbs of the oil. Add the mushrooms; cover and cook for 5 minutes. Remove cover and continue cooking until mushrooms begin to brown. Remove from pan and place in the slow cooker.
  • Return the pan to the heat. Season the steaks with salt & pepper. Add 1 tbs of oil and brown the blade steaks nicely. Remove to a plate and set aside
  • Return the pan to the heat and add 2 tbs of the oil. Add the sliced onions, the thyme and the paprika. Stir and cook for about 1 minute. Add the flour and stir well, cooking for about 1 minute. Whisk in the sherry and chicken stock, scraping up all the browned bits at the bottom of the pan. Add the entire contents of the pan to the slow cooker.
  • Place browned steaks on top of the mushroom/onion mixture. Cover and cook on LOW for 6-8 hours, HI for 4-5 hours.
  • Remove steaks to a serving plate and cover with aluminum foil to keep them warm. Stir the cream and parsley into the liquid. Heat for another 10 minutes. Ladle gravy over steaks and serve

Steps:

  • In a large plastic bag, combine 1/2 cup flour, 1 teaspoon salt, 1/2 teaspoon pepper and garlic salt. Add beef, a few pieces at a time, and shake to coat. Remove meat from bag and pound with a mallet to tenderize. , In a Dutch oven, brown meat in oil until no longer pink. Add the green pepper, celery and onions; cook and stir for 10 minutes. Add garlic; cook 1 minute longer. Stir in the tomatoes, broth, soy sauce and remaining salt and pepper. Cover and bake at 325° for 2 hours. , Remove from the oven and return to stovetop. 2 pounds bottom round roast (Cut into 1/2" thick slices)
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
½ cup flour (all-purpose)
3 tablespoon olive oil
1 onion (sliced)
4 cloves garlic (minced)
1 tablespoon tomato paste
14.5 ounce diced tomatoes (1 can)
2 cups beef broth (low sodium)
2 teaspoon Italian seasoning
1 tablespoon Worcestershire sauce
1 tablespoon parsley (freshly chopped)

Steps:

  • Swiss the steak: Use a meat tenderizer mallet to poke holes into each slice of steak on both sides. You can also do with a fork or pairing knife.
  • Dredge through flour: Generously salt the beef slices with salt and pepper. Add the flour to a shallow bowl. Dredge each piece of beef well in the flour.
  • Sear the steak: Heat 2 tbsp of the olive oil in large, deep skillet over medium-high heat. Add the dredged beef to the skillet and cook for 4-5 minutes per side, or until seared and well browned. Remove the beef from the skillet and set aside.
  • Sauté onion: Add the remaining tbsp of olive oil to the skillet along with the onions. Cook for 3-4 minutes, until they soften and get translucent. Add the garlic and cook for 30 seconds or until aromatic.
  • Add the rest of ingredients: Stir in the tomato paste and cook for 1 minute, then add the diced tomatoes, broth, Italian seasoning, and Worcestershire sauce. Stir everything together well.
  • Braise: Bring the mixture to a boil, then reduce the heat to a simmer. Add the beef back to the skillet and make sure it's fully submerged. Cover and cook for 1 1/2 hours, or until the sauce has reduced to your liking and the beef is tender. Stir occasionally.
  • Finish & serve: Taste for seasoning and add salt and pepper if needed. Garnish with parsley and serve.

2 pounds beef bottom round roast
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 cup all-purpose flour
2 tablespoons canola oil (or other oil)
1 sweet onion (thinly sliced)
3 cloves garlic (minced)
2 celery stalks (chopped)
1 tablespoon tomato paste
1 14.5-ounce can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon Italian Seasoning
1 tablespoon Worcestershire sauce
1 1/2 cups beef stock

Steps:

  • Slice the roast with the grain into 1/2-inch thick slices.
  • Place a slice of meat between two sheets of plastic wrap and tenderize with a meat mallet until 1/4 inch thickness.
  • Repeat with remaining slices of meat. Season both sides of the steaks with the salt and pepper.
  • Add the flour into a shallow dish and dredge the meat on both sides in the flour mixture.
  • Add the oil to the Instant Pot and heat using the "Saute" function.
  • Add the steaks to the pot, working in batches so you don't crowd the pan. Cook until golden brown on both sides, approximately 2 minutes per side. Transfer the steaks to a plate and repeat until all of the steaks have been browned.
  • Add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine.
  • Add the tomatoes, paprika, Italian Seasoning, Worcestershire sauce and beef stock, do not stir!
  • Lightly scrape the bottom of the pot with a wooden spoon to release the brown bits.
  • Return the steaks to the pot, submerging it in the liquid.
  • Hit Cancel on the Instant Pot.
  • Place the lid on the pot and lock in place. Turn the valve to Sealing position, and hit PRESSURE COOK for 30 minutes. After 30 minutes of cooking time, allow a 10 minute natural release, then hit CANCEL and turn valve to Venting position to release the remaining pressure.
  • When the pin drops, open lid, and transfer the steak to a platter. Keep warm.
  • Turn the pot to Saute and boil for 4-5 minutes to reduce sauce.
  • Serve the steak over mashed potatoes, egg noodles or rice with sauce poured over top.
