Steps:
- On a large plate add the flour and salt and pepper. Mix this together.
- Dredge each steak in this mixture on both sides, transfer to another plate. Save any excess flour mixture, you will add this to the slow cooker with the meat later.
- Set a large skillet to medium high heat. Add enough oil to coat the pan. Brown the steaks on both sides, no need to cook through. You may have to cook the meat in two batches if your pan is too small, add more oil inbewteen batches. Add the browned steaks to the slow cooker. Sprinkle over any excess flour from the plate.
- Deglaze the pan that you browned the meat in with by adding the beef consomme and scrapping up any brown bits. Add to the slow cooker on top of the beef.
- Add the remaining ingredients, stir.
- Place the lid on the slow cooker. Cook on LOW for 7 hours or HIGH for 4 hours with out opening the lid during the cooking time.

Steps:
- Pat the beef dry with paper towels and sprinkle well on all sides with salt and pepper. Heat the oil in a large deep skillet or Dutch oven over medium-high heat (or if your slow cooker has a browning feature, preheat it). Sear the meat on all sides until browned, then transfer to a plate.
- Add the garlic and onions to the pan or slow cooker and cook until softened, about 5 minutes. Add the tomato paste and cook, stirring, for 1 minute. Add the red wine and cook, scraping any browned bits off the bottom of the pan. If searing in a skillet, transfer the contents of the pan to a slow cooker set on low heat.
- Nestle the beef into the onions and add the broth, wine, Worcestershire, carrots, parsley, thyme, bay leaves and celery, and stir well to combine. Cover and cook until the meat is fork-tender, about 8 hours.
- Remove the roast from the slow cooker and cover to keep warm. Strain the cooking liquid into a large saucepan, and simmer over medium-low heat until thickened, about 10 minutes. (You can also puree some of the carrots and onions in a food processor and add it to the cooking liquid to thicken it.)
- Slice the pot roast, ladle the gravy over it, and serve.

Steps:
- Swiss the steak: Use a meat tenderizer mallet to poke holes into each slice of steak on both sides. You can also do with a fork or pairing knife.
- Dredge through flour: Generously salt the beef slices with salt and pepper. Add the flour to a shallow bowl. Dredge each piece of beef well in the flour.
- Sear the steak: Heat 2 tbsp of the olive oil in large, deep skillet over medium-high heat. Add the dredged beef to the skillet and cook for 4-5 minutes per side, or until seared and well browned. Remove the beef from the skillet and set aside.
- Sauté onion: Add the remaining tbsp of olive oil to the skillet along with the onions. Cook for 3-4 minutes, until they soften and get translucent. Add the garlic and cook for 30 seconds or until aromatic.
- Add the rest of ingredients: Stir in the tomato paste and cook for 1 minute, then add the diced tomatoes, broth, Italian seasoning, and Worcestershire sauce. Stir everything together well.
- Braise: Bring the mixture to a boil, then reduce the heat to a simmer. Add the beef back to the skillet and make sure it's fully submerged. Cover and cook for 1 1/2 hours, or until the sauce has reduced to your liking and the beef is tender. Stir occasionally.
- Finish & serve: Taste for seasoning and add salt and pepper if needed. Garnish with parsley and serve.

SLOW COOKER SWISS STEAK
I threw this together in my crock pot one day and we loved it! A little time consuming because I sauteed the vegetables and browned the meat first, but it's well worth it. Browning the meat first gives it a better flavor. This is great with mashed potatoes!

- Place meat in slow cooker. (I recommend a large oval crockpot or the Ninja 3-in-1 cooking system for this recipe.)
- Add tomatoes, coconut milk, garlic, Italian seasoning, sea salt, and pepper to large mixing bowl. Mix ingredients well with hand mixer. If you have an immersion blender and like a very smooth sauce without chunks of tomato, you can use that. I recommend using it for about 30 seconds to further blend the mixture.

- Each blade steak has a line of gristle running down the center. To remove, cut each steak in half along the line of gristle and then with a sharp knife, slice off and discard the line of gristle on each piece. Then lay the steaks out on a plate and salt and pepper if cooking right away. If not cooking until the next day, do not season until then.
- In a large 12 inch skillet with a tight fitting lid over medium high heat, place one tablespoon of oil, all of the mushrooms and the salt. Stir, cover and cook for five minutes. The mushrooms will give up a lot of water. Remove cover and cook for 5-10 minutes until liquid has evaporated and mushrooms get dry and browned. Remove from heat and place in bottom of slow cooker.
