4 large potatoes, washed and sliced 1/2-inch thick
1 medium onion, peeled & sliced
2 tablespoons butter
1 (10 1/2 ounce) can cream of chicken soup
1/4 cup milk
salt & pepper

Steps:

  • In a 2 1/2 quart casserole layer some of the potatoes, top with onion slices, dot with butter; sprinkle with salt and pepper lightly. Repeat process until all potatoes and onions are used.
  • Combine soup and milk; whisk till blended; pour over potatoes.
  • Cover and bake at 325° for 45 minutes till hot and bubbly and potatoes test tender with a fork.

This Creamy Chicken and Potato Bake with extra veggies is a whole meal in one dish! Kind of like a creamy chicken, carrot and spinach casserole, topped with potato gratin!

1 tbsp vegetable oil
1 onion (peeled and chopped)
2 cloves garlic (peeled and minced)
3 medium carrots (peeled and chopped into small chunks)
4 tbsp white wine
215 ml (1 cup minus 2 tbsp) double/heavy cream
1 tsp Dijon mustard
100 g (1 packed cup) mature cheddar cheese (grated)
50 g (1/2 cup) Parmesan cheese (grated)
½ tsp salt
½ tsp pepper
Pinch of dried thyme
375 g (13oz) cooked chicken (approx. 3 chicken breasts, shredded)
100 g (3 1/4 packed cups) baby spinach leaves
350 g (3/4lb) baby new potatoes (thinly sliced (no need to peel))
1 tbsp melted butter
Fresh thyme to garnish

Steps:

  • Preheat the oven to 200C/400F.
  • Heat the oil in a large frying pan. Add the onion, garlic and carrots and cook on medium heat, stirring regularly until the onion softens.
  • Add the wine, bring to the boil, then simmer for 2-3 minutes. Add the cream and mustard and stir together. Heat through until almost boiling, then stir in both cheeses, along with a good pinch of salt, pepper and dried thyme.
  • Add the cooked chicken and spinach and heat through until the spinach wilts.
  • Spoon the chicken mixture into a large baking dish, then layer the potatoes on top, starting from the outside and working inwards. Once covered in the potato slices, brush with the melted butter and sprinkle on a pinch of salt and pepper.
  • Place in the oven to bake for 30-40 mins, until the potatoes are tender and golden brown.
  • Top with fresh thyme before serving.

3 medium-large potatoes
4 chicken thighs, (boneless & skinless)
1/2 cup shredded mozzarella cheese
1/2 cup shredded parmesan cheese
1/2 cup cream (approx 35% fat), ((can sub with cooking cream))
1/4 cup milk of choice
3 tsp sea salt, (divided)
1 tsp black pepper, (divided)
1 tsp rosemary leaves, ((dried or fresh))
4 tbsp olive oil

Steps:

  • Preheat broiler/grill to 200°C / 400°F.
  • Wash and peel potatoes. Use a mandolin, or a sharp knife to thinly slice potatoes into rounds. Arrange into a lightly oiled baking dish.Toss in olive oil, 1 tsp sea salt, ½ tsp black pepper, and rosemary.
  • Broil/grill potatoes for approximately 7 minutes, until edges begin to turn golden and slightly crispy.
  • Meanwhile, add milk, cream, parmesan and mozzarella into a bowl. Reserve half the mozzarella if you'd like to sprinkle a bit of cheese on top. Alternatively, use an extra ¼ cup of mozzarella for this.Add 1 tsp salt to the creamy sauce and mix well. Set aside.
  • Cut the chicken thighs into small bite sized pieces. Season with the last 1 tsp salt and ½ tsp pepper. Set aside.
  • Remove potatoes from the grill. Top with chicken and pour over the creamy sauce. Top with reserved mozzarella, if using.
  • Place baking dish in a preheated oven and bake at 220°C/425°F or 200°C/400°F fan forced until potatoes are tender and chicken has cooked through, approximately 30 minutes. If the cheese is browning too quickly, cover with aluminium foil and remove for the last five minutes of baking.

60g unsalted butter
6 skinless boneless chicken thighs, cut into bite-sized pieces
80g smoked pancetta, cut into small pieces
2 large onions, sliced
40g plain flour
500ml chicken stock
3 tbsp finely chopped tarragon
2-3 tbsp wholegrain mustard
4 tbsp double cream
2 x 450g packs fresh prepared mashed potato
drizzle of olive oil

Steps:

  • Melt 20g of the butter in a flameproof casserole dish over a medium heat. Season the chicken and add to the dish with the pancetta. Fry for 5 mins until the pancetta is crispy and the chicken browned and cooked through. Set aside in a bowl.
  • Lower the heat, add the remaining butter and, when it starts foaming, add the onions. Cook for 10 mins until softened, then stir through the flour and cook for another 2 mins. Remove from the heat and slowly whisk in the chicken stock. Return to the hob, bring to the boil and cook for 5 mins. Stir through the tarragon, mustard and cream, followed by the chicken and pancetta, and cook for another 5 mins until the sauce is thickened.
  • Heat the grill to high. Heat the mashed potato following pack instructions, then spoon on top of the chicken filling in the casserole dish. Smooth and swirl the potato over right to the edges, drizzle with a little olive oil and put under the grill for 8-10 mins or until the top is golden and bubbling.

  • In a large saucepan, combine cream, butter and salt. Cook and stir over medium heat until butter is melted. 2-3 chicken breast (boneless skinless, cut into 2 inch pieces)
4-5 potatoes (diced into large chunks)
2 cups baby carrots (cleaned )
10.5 ounces can cream of chicken soup
12 ounces evaporated milk
8 ounces cream cheese
3/4 ounce ranch mix
2 cups shredded cheddar cheese
optional toppings - crispy bacon, minced parsley or thinly sliced green onions.

Steps:

  • Preheat the oven to 375 degrees. Spray casserole dish with non stick cooking spray, set aside.
  • Cut the chicken breast into large chunks. Place in casserole dish.
  • Top the chicken with the quartered potatoes and carrots.
  • Combine the cream cheese, evaporated milk, cream of chicken soup, ranch mix and half the shredded cheese in a medium sauce pan. Place over medium high heat and whisk until smooth.
  • Pour cream mixture over the top of the potatoes. Finish with the remaining shredded cheese. Cover tightly with foil. Bake in preheated oven for 1 hour 30 minutes.
  • Remove foil, place under broiler for 4-6 minutes until the top of the casserole is golden brown. Watch it carefully so it doesn't burn, you just want it to get all golden and toasty!
  • Allow to rest 15-20 minutes before serving.

  • Heat olive oil in a skillet over high heat. Saute onion and garlic, stirring often, until fragrant, about 3 minutes. Add chicken.
