An old family favorite salvaged from our 30-plus-year-old cookbook. We like this served over egg noodles. I like to increase the tomatoes to a 15 ½-ounce can, and I use a full green pepper and add a teaspoon of paprika.

¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
1 (2 pound) beef round steak, 1 inch thick
2 tablespoons vegetable shortening
¼ cup water, or as needed
1 (8 ounce) can diced tomatoes
1 onion, minced
½ green bell pepper, chopped
salt and ground black pepper to taste

Steps:

  • Mix flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle half the flour mixture on one side of round steak pieces; pound steak until coating is absorbed. Flip steak and coat with remaining flour mixture; pound steak until coating is absorbed. Cut steak into 6 pieces.
  • Melt shortening in a large skillet over medium heat; place steak pieces in the hot shortening. Cook until browned, 7 to 10 minutes per side. Cover and simmer until tender, about 1 hour, adding water as needed.
  • Turn steak pieces over and add tomatoes, onion, and green bell pepper to the skillet. Season with salt and black pepper. Simmer until vegetables are tender, about 30 more minutes.

2 lbs round steaks, cut 1 ",thick
1 cup ketchup
1/4 cup flour
1 large onion, sliced thin
2 tablespoons lemon juice
salt and pepper

Steps:

  • Tear off a 5' length of aluminum foil: fold double.
  • Combine ketchup and flour.
  • Spoon about 1/3 of mixture in center of foil, spreading slightly.
  • Place steak on top of this.
  • Season with salt and pepper.
  • Cover meat with the onion slices, and remaining ketchup mixture.
  • Sprinkle lemon juice over everything.
  • Fold foil over and seal all edges securely.
  • Place in a shallow baking pan, and bake at 450 for about 1 hr.
  • or until meat is tender.

My Mom's version of Swiss Steak was cube steak in a rich thick gravy with mashed potatoes and corn. YUM! It's total comfort food, and brings my childhood back to me. Now if I can just get my girls to eat it we'd be all set!

4 cube steaks
1 cup flour
2 tablespoons sweet Hungarian paprika
2 tablespoons garlic powder
1 teaspoon seasoning salt
1 (8 ounce) packet Lipton Onion Soup Mix
1/4 cup olive oil
1/4 cup vegetable oil
1 cup milk
salt & pepper

Steps:

  • Mix flour, paprika, garlic powder, seasoned salt into a bowl. Place milk in another bowl.
  • Add 1/2" olive oil and veggie oil mixed into deep skillet and set to medium/high.
  • Lightly salt & pepper cubed steak, place in milk until it shows through the meat. Dredge in flour mixture and add to hot oil. Cook all cube steaks until golden brown. Remove from pan and place in 9 x 13 dish or pan. Drain all but a couple tablespoons of oil from the skillet, but keep the bits & pieces in the skillet. Cover the bottom of the skillet with flour and add onion soup mix to the skillet. Sprinkle with additional paprika, salt & pepper. Fill skillet 3/4 full with water and bring to boil stirring frequently until thickened. Pour over the cube steaks, seal tightly with foil and bake at 350 for 45 minutes to 1 hour. When you remove it from the oven, take the foil off and let it cool for a couple minutes. Serve with mashed potatoes and your favorite veggie and ENJOY!

Foiled again..!! The favorite part of this meal will be the easy clean-up. The foil holds the juices in while the soup mix flavors the meat. Great recipe for camping.

1 (1 1/2 lb) round steaks
1 (8 ounce) package beefy onion soup mix or 1 (8 ounce) package savory herb with garlic soup mix

Steps:

  • Place 1/2 package soup mix on foil. Place round steak on top of this.
  • Sprinkle rest of soup mix on top of round steak.
  • Seal foil completely over round steak, all around the edges too.
  • Bake in 350 degree oven for 2 hours.
  • Add mushrooms over top when serving if desired.

2 lbs beef chuck steaks, 1-inch thick, trimmed
1 medium onion, sliced
1 bell pepper, sliced
1 (10 ounce) can cream of mushroom soup
1 (14 ounce) can stewed tomatoes
1 tablespoon Worcestershire sauce
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
8 small new potatoes, unpeeled and quartered
1 (9 ounce) package green beans, frozen, fresh

Steps:

  • Heat oven to 425. Line 9 x 13 baking pan with heavy-duty aluminum foil, leaving 1 1/2 inch overhang all around.
  • Cut steaks into equal portions and place in prepared pan. Top with sliced onions and bell peppers. (I always use more onion and bell peppers, personal preference).
  • Whisk together soup, tomatoes with juice, Worcestershire sauce, thyme, salt, garlic powder, and pepper in a bowl until well blended. Pour over steaks, onions and bell peppers.
  • Cover pan with large sheet of heavy duty foil; roll edges tightly with overhang to seal.
  • Bake at 425 for 45 minutes.
  • Add potatoes; reseal with foil. Bake additional 45 minutes.
  • Uncover pan; add green beans. Reseal.
  • Bake an additional 15 minutes or until beans are tender and steak is cooked through.
  • Stir well before serving.

1 envelope onion soup mix
1/2 lb mushroom, sliced
1/2 green pepper, sliced
1 (16 ounce) can diced tomatoes, juice drained and reserved
1/4 teaspoon salt
fresh ground pepper
1 tablespoon A.1. Original Sauce
1 tablespoon cornstarch
aluminum foil, 20 inch sheet
1 tablespoon chopped fresh parsley

Steps:

  • Spread center of aluminum foil with butter.
  • Cut steak into serving portions.
  • Arrange on foil, slightly overlapping.
  • Sprinkle with onion soup mix, mushrooms, green pepper, tomatoes.
  • Season with salt and pepper to taste.
  • Mix reserved juice from the tomatoes, A-1 sauce and cornstarch.
  • Pour over meat and vegetables.
  • Bring foil up over and double-fold edges to seal tightly.
  • Bake 2 hours in 350 oven.
  • Carefully roll back foil and garnish with parsley.
  • Note- During the last 1 1/2 hours, bake potatoes along side the meat packet and serve with this dish.
