Ingredients

1 medium red cabbage, coarsely chopped
1 medium apple, coarsely chopped
2 medium onions, coarsely chopped
1/2 cup raisins
1/3 cup red wine vinegar
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup red currant jelly

Steps:

Combine all ingredients in a large container.
Cover and let marinate overnight.
Place in large saucepan.
Slowly bring to a boil.
Lower heat and simmer for 11/2 hours until cabbage is cooked and the liquid has evaporated.
Dish can be made ahead, refrigerated and reheated in the microwave when needed.

2 ounces butter
2 large red cabbages, cored and shredded
2 tablespoons black treacle
1 onion, grated
2 to 3 apples, peeled, cored and sliced
3 tablespoons lemon juice
4 fluid ounces red wine
Salt and freshly ground black pepper

Steps:

Melt the butter in a large heavy casserole. Throw in cabbage, add the black treacle and cook over a low heat, stirring constantly. Stir in the onion; apples and lemon juice; wine and salt and pepper. Simmer gently for 3 hours, stirring occasionally. Adjust seasoning.
