Spam is popular in Hawaii and is used in many different types of recipes. This one makes a great breakfast.

2 cup(s) frozen potatoes, diced or shredded
1/2 cup(s) chopped onion
1/4 medium green bell pepper, cut into 1-inch strips
1/4 medium red or yellow bell pepper, cut into 1-inch strips
2 teaspoon(s) oil
12 ounce(s) spam, cut into julienne strips
4 - eggs, or egg product substitute
1/4 teaspoon(s) dried basil
1/8 teaspoon(s) salt
1/8 teaspoon(s) pepper
- hot sauce, to taste
1/4 cup(s) cheddar cheese, shredded

Steps:

  • In large non-stick skillet, cook potatoes, onion, and peppers in oil over medium-high heat 5 minutes, stirring constantly.
  • Add spam; cook and stir 5 minutes.
  • In small bowl, combine eggs, basil, salt, pepper, and hot pepper sauce; blend well.
  • Pour over mixture in skillet. Cover. Cook over medium-low heat 8-12 minutes or until set.
  • Sprinkle with cheese; remove from heat.

A self-concocted recipe born from long nights and late mornings. A truly hearty, robust stand-alone meal. Known coast to coast thanks to wonderful friends. Likely one of my most memorable dishes according to said friends. Serve with a side of salsa, a tortilla, and your favorite glass of juice.

½ pound sage pork sausage (such as Jimmy Dean®)
1 ½ cups cubed red potatoes
½ onion, diced
1 tablespoon chopped garlic
1 cup sliced baby bella mushrooms
3 eggs
1 teaspoon parsley
½ cup shredded Mexican cheese blend
sea salt to taste
fresh cracked black pepper to taste

Steps:

  • Place sausage in a large cast iron skillet over medium heat; cook and stir until crumbly and starting to brown, about 5 minutes. Stir in potatoes; cook until starting to brown, about 5 minutes. Add onion and garlic; cook and stir until fragrant, about 3 minutes. Stir in mushrooms; cook until tender, about 5 minutes.
  • Push mixture to the sides of the skillet with a spatula to make space in the center. Crack eggs into the center and sprinkle with parsley. Sprinkle Mexican cheese blend around mixture on the edges. Cover skillet and cook until egg whites are set but yolk is still runny, 2 to 3 minutes. Remove from heat, pierce yolks and mix to combine. Season with salt and black pepper.

I found this recipe in a box of Velveeta cheese. I am sure you could substitute another type of cheese and still have a great breakfast. Feel free to add mushrooms, onions, peppers, etc. to suit your personal preferences. It is a quick and easy one pan breakfast. Enjoy!

1/2 lb pork sausage
2 cups frozen hash brown potatoes
1 (10 ounce) can diced tomatoes with mild green chilies, drained
1/2 lb Velveeta cheese, product cut up
6 eggs, beaten
2 tablespoons milk or 2 tablespoons water
salt & pepper

Steps:

  • Brown sausage in large nonstick skillet on medium heat.
  • Drain.
  • Add potatoes and tomatoes, cook 5 minutes or until the potatoes are browned.
  • Top with Velveeta.
  • Mix eggs and milk; pour evenly over ingredients in skillet; cover.
  • Reduce heat to Low.
  • Cook 10 to 12 minutes or until eggs are set and cheese is melted.
  • Let stand, uncovered, 5 minutes before cutting into wedges to serve.
  • Serve with salsa if desired.

A hearty breakfast that makes good leftovers (if there are any!). Although I've used bacon here, feel free to substitue any cooked sausage or ham or.... Same goes for the cheese and seasoning --- it's pretty versatile. (If I need to cook the bacon to make this dish, I just bake it on my broiler pan in a 325° F oven for about 20 min. while I'm working on the oninos and potatoes.)

1 tablespoon olive oil
1 medium onion, diced
1 large russet potato, peeled and diced
1 teaspoon red pepper flakes
1/2 large bell pepper, diced
6 slices cooked bacon, cut into bite-sized pieces
1 1/2 cups monterey jack cheese, grated
1/2 cup sour cream
6 eggs
1/2 teaspoon dried oregano
salt & pepper

Steps:

  • Preheat oven to 350°F.
  • Sauté onion in olive oil in an oven-safe skillet over medium heat until just starting to soften,.
  • Stir in potatoes and red pepper flakes, and continue to cook until potatoes are cooked through.
  • Add bell pepper to onions and potatoes for the last minute or two, just to get them started.
  • Meanwhile, whisk eggs into sour cream one at a time until all are smoothly combined.
  • Stir oregano into eggs.
  • Turn off heat under skillet and make sure no potatoes are sticking on the bottom.
  • Stir in cooked bacon, making sure everything is well-distributed.
  • Sprinkle in half the cheese, stirring just a bit to distribute.
  • Pour egg mixture over all, tilting skillet if nec. to get it covering the bottom.
  • Sprinkle remaining cheese on top.
  • Bake 20 min., or until eggs are set and edges are just beginning to brown.

1-1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup cold butter
3 to 5 tablespoons ice water
FILLING:
12 bacon strips, cooked and crumbled
1/2 cup shredded pepper jack or Monterey Jack cheese
1/2 cup shredded sharp cheddar cheese
1/3 cup finely chopped onion
4 large eggs
2 cups heavy whipping cream
3/4 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon cayenne pepper

Steps:

  • Combine flour and salt; cut in butter until crumbly. Gradually add 3-5 tablespoons ice water, tossing with a fork until dough holds together when pressed. Wrap and refrigerate 1 hour., Preheat oven to 450°. On a lightly floured surface, roll dough to an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of heavy-duty foil. Bake 5 minutes; remove foil. Bake 5 minutes longer; remove from oven and cool on a wire rack. Reduce heat to 375°., Sprinkle bacon, cheeses and onion over crust. Beat remaining ingredients until blended; pour over top. Bake until a knife inserted in center comes out clean, 30-35 minutes. Let stand 10 minutes before cutting.
