We transformed the regular hands-on skillet method to a very hands-off oven technique.

4 pounds russet potatoes, peeled
1 tablespoon kosher salt, plus more
2 tablespoons olive oil, plus more
2 onions, thinly sliced
1 tablespoon distilled white vinegar
Freshly ground black pepper
Flaky sea salt

Steps:

  • Parboil potatoes in a large pot of boiling salted water just until a paring knife slides into the center with some resistance, 15-20 minutes. Drain; transfer to a rimmed baking sheet and chill uncovered until cold, at least 30 minutes.
  • Place racks in highest and lowest positions in oven; preheat to 425°F. Line two 8" cake pans with parchment; brush with 2 Tbsp. oil. Toss onions, vinegar, and 1 Tbsp. kosher salt in a large bowl. Let sit until onions are softened, 5-10 minutes (massage gently to speed up process).
  • Meanwhile, grate parboiled potatoes on a box grater or in a food processor, or cut using a julienne slicer. Place prepared pans on lower rack and heat 5 minutes.
  • Add potatoes to onion mixture and toss to combine; season with kosher salt and pepper. Divide potato mixture between hot pans and press down as firmly as possible to compact (a thin flexible spatula works well). Place on lower rack and bake until potatoes are very brown around the edges, 45-60 minutes. Remove rösti from oven; let cool slightly.
  • Heat broiler. Broil rösti on upper rack until tops are golden brown all over. Cut around sides with a small knife or offset spatula to loosen and invert rösti onto a wire rack set inside a rimmed baking sheet. Carefully remove parchment paper (if potatoes stick, let cool slightly). Brush top of rösti with more oil, sprinkle with sea salt, and broil until second side is deep golden brown.
  • Do ahead
  • Potatoes can be parboiled 1 day ahead; once cold, cover. rösti can be made 3 hours ahead; store uncovered at room temperature (or keep warm in a 250°F oven up to 1 hour). Reheat in a 300°F oven for 10 minutes before serving.

Swiss Potato Rosti with Salt and Vinegar makes a nice side dish. Make it ahead and finish under the broiler. Recipe slightly adapted from Bon Appetit. Parboil and chill potatoes the day before to reduce prep time.

2 pounds russet potatoes, (peeled)
2 teaspoons Kosher salt
1 Tablespoon olive oil (plus additional for brushing on potato cake)
1 onion, (sliced thin)
1 1/2 teaspoons white vinegar ((not white wine vinegar))
1/2 teaspoons black pepper

Steps:

  • In a large pot of boiling, salted water, parboil peeled potatoes, just until knife pierces potato with some resistance, about 15 minutes. Drain and transfer potatoes to a baking sheet and chill until cold, about 30 minutes.
  • Pre-heat oven to 425 degrees F. Line 8" baking pan with parchment and brush with olive oil.
  • Toss onions with vinegar and 1 1/2 teaspoons kosher salt in a bowl and let sit about 5 minutes.
  • Grate the potatoes with a box grater or food processor. Mix onions and potatoes, black pepper and additional 1/2 teaspoon kosher salt together and press into baking pan. Press down potato mixture as tightly as possible. Bake at 425 degrees F. until potatoes are golden brown, about 45 minutes.
  • Heat broiler. Remove pan from oven and invert onto a wire rack. Place wire rack on a baking sheet to prevent drips and brush the bottom, (now the top) of the potato cake with 1 1/2 teaspoons olive oil. Broil rosti until top is golden brown. Remove from oven and flip over. Brush with additional olive oil, and brown opposite side.

1 1/2 lbs yukon gold potatoes, peeled (3-4 medium)
1/2 teaspoon salt
1 teaspoon cornstarch
ground black pepper
4 tablespoons unsalted butter

Steps:

  • Run potatoes through the large shredding disk of a food processor. (If using a box grater, shred potatoes lengthwise so you are left with long shreds.).
  • Place potatoes in a large bowl and fill with cold water. Using hands, swirl to remove excess potato starch, then drain in strainer.
  • Transfer half of potatoes from strainer to the center of a clean kitchen towl. Gather ends together and twist as tightly as possible to expel maximum moisture.
  • Wipe bowl dry. Transfer potatoes to bowl and repeat process with remaining potatoes.
  • Sprinkle salt, cornstarch, and pepper to taste over potatoes. Using hands or fork, toss ingredients together until well blended.
  • Melt half of the butter (2 tablespoons) in a 10-inch nonstick skillet over medium heat. When foaming subsides, add potato mixture and spread into even layer. Cover and cook 6 minutes. Remove cover and, using spatula, gently press potatoes down to form round cake. Cook, occasionally pressing on potatoes to shape into uniform round cake, until bottom is deep golden brown, 4 to 6 minutes longer.
  • Shake skillet to loosen roesti and slide onto large plate. Add remaining 2 tablespoons butter to skillet and swirl to coat pan. Invert roesti onto second plage and slide it, browned side up, back into skillet. Cook, occasionally pressing down on cake, until bottom is well browned, 7-9 minutes. Remove pan from heat and allow cake to cool in pan for 5 minutes. Transfer roesti to cutting board, cut into 4 pieces, and serve immediately.

1/4 cup butter or 1/4 cup margarine
1 small onion, chopped
1/2 cup diced gruyere or 1/2 cup swiss cheese
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons water

Steps:

  • Heat 1 inch salted water to boiling. Add potatoes. Heat to boiling; reduce heat. Cover and cook until tender, 30 to 35 minutes. Peel and shred potatoes or cut into 1/4 inch strips.
  • Heat butter in skillet until melted. Add potatoes, onions, and cheese.
  • Sprinkle with salt and pepper. Cook uncovered over medium heat, turning frequently, until potatoes start to brown, about 10 minutes, adding 1 to 2 Tblsp. butter to prevent sticking if necessary.
  • Press potatoes with spatula to form a flat cake; sprinkle with water. Cover and cook over low heat, without stirring, until bottom is golden brown and crusty, about 10 minutes. Place inverted platter over skillet; invert potatoes onto platter.

In Zurich, a German-speaking city, practically every bar and beer hall garnishes its big plates of meat with this kind of hash brown cake; it might be "cheese" or "onion" or "plain" Rösti, but you'll always be happy to see it. Refrigerating the whole baked potatoes overnight makes them much easier to grate. Special equipment: an adjustable blade slicer fitted with julienne blade, a food processor fitted with medium shredding disk, or a box grater. Chill time is included in total time. 1 1/2 lbs large yellow-fleshed potatoes such as yukon gold potatoes
1 medium onion
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup unsalted butter
2 tablespoons vegetable oil

Steps:

  • Put oven rack in middle position and preheat oven to 375°F.
  • Prick potatoes in several places with a fork. Bake potatoes in a large shallow baking pan until tender when pierced with a sharp knife, about 1 ½ hours.
  • Transfer to a rack to cool completely, then chill, uncovered, at least 8 hours.
  • Peel potatoes, then shred with slicer into a bowl. Coarsely grate onion on large teardrop-shaped holds of a box grater, then wrap in 2 layers of paper towels and squeeze gently to remove excess moisture. Toss together potatoes, onion, salt and pepper with a fork.
  • Heat 2 tablespoons butter and 1 tablespoon oil in a 7- to 8-inch nonstick skillet over moderately high heat until foam subsides, then add potatoes, spreading them evenly and tamping them down with a rubber spatula.
  • Reduce heat to moderate and cook Rösti until underside is a golden brown, about 5 minutes.
  • Wearing oven mitts, invert a flat plate over skillet, then invert Rösti onto plate.
  • Add remaining 2 tablespoons butter and remaining tablespoon oil to skillet and the until foam subsides, then slice Rösti (browned side up) back into skillet with robber spatula.
  • Cook until underside is golden brown, about 5 minutes.
  • Transfer to a cutting board and cut into 6 wedges.

2 lbs potatoes, quartered (1 to 2 inches in diameter)
3 tablespoons table salt
8 -10 slices smoked bacon
1 large red onion, chopped fine
2 finger sized pickles, diced (I use garlic ones)
3 -4 hard-boiled eggs, diced
1/2 a carrot, finely diced
1 teaspoon sugar
1/2 cup white vinegar
3 tablespoons whole-grain German mustard
1 teaspoon ground black pepper
1/4 cup chopped fresh parsley
1/4 teaspoon rosemary
1/4 teaspoon thyme
additional salt

Steps:

  • boil potatoes with salt until tender reserving 1/4 cup of water.
  • fry bacon until crispy then set aside reserving fat in pan.
  • add onion until tender and then add vinegar and potato water and allow to reduce a bit.
  • once reduced to desired consistency add to potatoes along with remaining ingredients folding in bits at a time.
  • served warm or cold.
