6 slices Swiss cheese
1 (10.75 ounce) can condensed cream of chicken soup
¼ cup milk
1 (8 ounce) package dry bread stuffing mix
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Arrange chicken breasts in the baking dish. Place one slice of Swiss cheese on top of each chicken breast. Combine cream of chicken soup and milk in a medium bowl, and pour over chicken breasts. Sprinkle with stuffing mix. Pour melted butter over top, and cover with foil.
  • Bake 50 minutes, or until chicken is no longer pink and juices run clear.

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup 2% milk
1 package (6 ounces) stuffing mix
2 cups cubed cooked chicken breast
2 cups fresh broccoli florets, cooked
2 celery ribs, finely chopped
1-1/2 cups shredded Swiss cheese, divided

Steps:

  • In a large bowl, combine soup and milk until blended. Add the stuffing mix with contents of seasoning packet, chicken, broccoli, celery and 1 cup cheese. Transfer to a greased 13x9-in. baking dish. , Bake, uncovered, at 375° for 20 minutes or until heated through. Sprinkle with remaining cheese; bake 5 minutes longer or until cheese is melted. Freeze option: Sprinkle remaining cheese over unbaked casserole. Cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 375°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

6 Slices Swiss Cheese
1 can Cream of Chicken Soup
1/4 cup milk
Stove Top Turkey Stuffing (about 1/2 box)
¼ c butter

Steps:

  • Cover bottom of pan with chicken.
  • Lay Swiss Cheese over chicken.
  • Mix 1 can cream of chicken soup and 1/4 cup milk.
  • Pour mixture over chicken.
  • Top with 1/2 bag (or more) of Stove Top Turkey Stuffing.
  • Drizzle 1/4 cup butter on top.

4 to 6 boneless skinless chicken breasts or thighs
1 can of cream of mushroom soup
1/3 cup of white wine
1 tablespoon of gravy master or soy sauce
6 to 8 slices of swiss cheese
salt
pepper
poultry seasoning
dried parsley
paprika
1 stick of butter

Steps:

  • Season the chicken on both sides with the salt, pepper, poultry seasoning, paprika and dried parsley , add a couple of tablespoons to a skillet and sear the chicken on both sides for just a few minutes on each side. You just want the chicken to have a golden brown color but not cooked through.
  • Add the chicken to a baking dish, then in a bowl, whisk the soup with the wine, the gravy master or soy sauce, then season to taste with the same seasonings you used on the chicken. Pour over the chicken.
  • Dot the top of the chicken with little pats of butter, then cover all the chicken with the swiss cheese. Cover loosely with a piece of foil and bake at 350 degrees for 35 minutes, then uncovered for 15 minutes. Remove from oven and let rest for 10 to 15 minutes.
  • Serve the chicken with cooked rice and a hearty serving of the delicious sauce that this dish makes.

4 tablespoons all-purpose flour (can be gluten-free)
1 ¼ cups chicken stock
2 teaspoons garlic powder
2 teaspoons onion powder

½ cup sour cream (can be light)
½ cup panko breadcrumbs (can be gluten-free)
2 tablespoons melted butter
1 teaspoon Italian seasoning
4 medium chicken breasts

Steps:

  • Preheat your oven to 400 degrees. Butter the bottom of a 9x11 inch casserole dish.
  • Heat the butter in a medium-sized pot over medium-high heat. Whisk in the flour and let it cook for 1 minute. Add the chicken stock, garlic powder, onion powder, and salt, and whisk well. Continue to whisk until the stock thickens.
  • Tear the swiss cheese slices into smaller pieces then add them to the pot and stir it into the sauce. Add the sour cream and stir once more.
  • In a small bowl, mix the melted butter, breadcrumbs, and Italian seasoning.
  • Gently pound the thickest part of the chicken using the palm of your hand until the breasts are even in thickness. Season the chicken with salt and pepper.
  • Pour half of the cheese sauce into the casserole dish. Add the chicken and top each piece with a piece of Swiss cheese. Pour the rest of the sauce around the chicken.
  • Sprinkle the buttered bread crumbs over the chicken then bake the chicken for 45 minutes, or until hot, bubbly, and cooked through. Check the chicken periodically and if the breadcrumbs are browning too quickly, cover the casserole with aluminum foil.
  • Serve the chicken with some perfectly cooked basmati rice, a big scoop of the sauce, and a little minced parsley over the top.

4 cups brown rice, cooked
4 eggs, medium
1 cup 1% milk
2 cups cheddar cheese, shredded
1 tbsp olive oil
1 cup onions, diced
½ lb boneless, skinless chicken breasts
½ lb brown mushrooms, fresh, sliced
6 cups swiss chard, fresh, sliced
¼ tsp salt
¼ cup basil, fresh, chiffonade
1 tbsp thyme, fresh

Steps:

  • Preheat oven 375°F (190°C). Oil casserole or spray with vegetable oil cooking spray.
  • Cook rice in unsalted water according to package directions. Set aside to cool.
  • Beat eggs with milk in large bowl. Add to rice.
  • Grate the cheese and add one cup to rice & egg mixture and reserve other cup (250 mL) for the top of the casserole.
  • Slice mushrooms. Shred Swiss chard across into ½ inch (1.25 cm) ribbons. The centre veins in the chard are edible. Cut chicken breast into ½ inch (1.25 cm) pieces.
  • Heat the olive oil over medium-high heat. Add diced onion with the chicken and stir and sauté for 5 minutes. Stir in sliced mushrooms and chard and sauté a few minutes more until chard is wilted. Sprinkle with salt. Mix into the egg & rice mixture along with the shredded basil and thyme leaves.
  • Pour into the prepared casserole. Cover with remaining cheese. Bake for 35 minutes in preheated oven or until cooked through and lightly browned. A knife inserted into the centre of the casserole should come out clean.
