SWISS CHEESE SCRAMBLE
A family favorite that can be prepared the day before and baked the next morning.

Steps:
- Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
- In a large bowl, Combine the bread cubes and milk. Drain after 5 minutes. In a separate bowl, beat together milk, eggs, salt and pepper.
- In a large skillet or saucepan, melt 1/4 cup butter over medium heat. Add the egg mixture and scramble until soft. Do not fully cook. Add the soaked bread cubes and turn into a greased 9x13 inch baking pan. Sprinkle shredded cheese on top of casserole. In a small bowl, stir together butter and bread crumbs. Sprinkle this mixture over the cheese and then top with the bacon. Cover and refrigerate overnight.
- The next morning, preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven for 40 minutes. Serve warm.

Steps:
- Preheat oven to 350 degrees.
- Sprinkle cheese over the bottom of a well buttered 11x7" baking dish.
- Break eggs over cheese (yolks should be intact) so they are evenly spaced throughout the pan.
- Mix cream, mustard, salt and cayenne and pour evenly over the pan.
- Dot with butter.
- Bake for 15 minutes or longer, as needed.
SWISS BAKED EGGS
Steps:
- Preheat oven to 325°F (162°C).Add oil to medium skillet and heat over medium heat. When oil begins to smoke, add chopped onion and cook, stirring occasionally until softened and they have turned a light amber color (about 20 minutes).Remove from heat and set aside.
- Line the bottom of 6 8-oz ramekins with Swiss cheese (2 slices per ramekin). Top each with about 1/4 cup of onion. Crack one egg into each ramekin and sprinkle with a little salt and pepper. Set aside.
- In a medium bowl, add cream and wine. Beat with a wire whisk until well blended (about 1 minute). Pour mixture around eggs, dividing evenly between ramekins.
- Place ramekins on a cookie sheet and bake uncovered until eggs are set to your liking using the guide below:runny yolks: 23-25 minutesset yolks: 35-40 minutesRemove from the oven and allow to cool slightly. Garnish with chopped chives. Serve with buttered sourdough toast for dipping or you can use the egg mixture as a spread.

SWISS CHEESE EGG BAKE
Try this with a fruit bowl, cinnamon rolls and sliced ham for a complete brunch. Kids always seem to love this casserole, at least mine and their friends do! This makes 2 casseroles, but it can easily be halved. I have never frozen it and wonder how it would be to freeze one casserole.

- Preheat oven to 350.
- Combine soup, milk, onion and mustard all together in a saucepan.
- Heat on medium until warm.
- Stir in cheese until melted.
- Pour 1 cup sauce into each of 2 10x6 baking dishes.
- CAREFULLY, break six eggs into the sauce in each pan, 3 down the length of each pan on each side.
- Carefully cover all BUT the yolks with the remaining sauce.
- Line each side of both pans with the bread slices.
- Bake for 20 minutes or until the eggs are to desired doneness.
- The eggs will cover themselves as they bake.

GERMAN/SWISS EGG CASSEROLE
Adapted from the "Best of Friends" cookbook, this hearty casserole takes the tradional German caraway rye bread and Swiss cheese and combines them with hard boiled eggs, that are traditionally eaten with German beer. This can be made earlier and then baked later.

- Preheat oven to 350.
- Cook onion in butter just until tender.
- Transfer to 12x8 baking dish.
- Divide the egg slices evenly over the onion/butter mixture.
- Sprinkle with the cheese.
- Beat remaining ingredients except the bread together in a large bowl well mixed.
- Pour this over the cheese.
- At this point you can refrigerate overnite but this is not necessary.
- To finish, add the bread slices by overlapping them on top of the casserole.
- Bake 30-35 minutes until heated through.
- If refrigerated overnite add the bread slices just before baking and bake an additional 10 minutes.

- Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet. Add onions to drippings in skillet; cook 15 min. or until tender, stirring occasionally.
- Layer half each of the pretzel roll slices, onions, bacon and shredded cheese in 13x9-inch baking dish sprayed with cooking spray; repeat layers.
- Microwave cream cheese in large microwaveable bowl on HIGH 30 to 40 sec. or until softened; whisk until creamy. - Grease a 9-inch baking dish.
- Cut and fit the potato patties into the bottom of the pie plate; press firmly, then brush with melted butter.
- Bake at 425 degrees for about 20 minutes; remove from oven.
- Reduce oven temperature to 350 degrees.
- Sprinkle with grated cheese, ham and mushrooms.
- In a small bowl whisk together eggs with whipping cream, seasoned salt and black pepper, then pour over the pie.
