1.5 lb Potatoes (Yukon Gold if possible, Russett potatoes will do in a pinch)
1 lb Bacon
1 med Onion (White or yellow onions work great)
1 Tablespoon Garlic (minced)
2 cups whole milk
1/4 tsp paprika
1/4 tsp dry mustard (powder, found in the spice section of the supermarket)
1 tsp Salt
1/2 tsp Pepper
3 cups Cheese (shredded-cheddar, gruyere, white cheddar)

  • Preheat oven to 350 degrees.

1 finely chopped onion
1½ cups shredded swiss cheese
6 slices cooked and diced Bacon
3 tbsp all purpose flour
to taste Salt and ground black pepper
2 lbs peeled and thinly sliced potatoes
2 cups warmed half and half

Steps:

  • Preheat oven to 350 degrees F. Butter an 8-cup casserole dish.
  • Combine onion, Swiss cheese, bacon, flour, salt, and pepper in a bowl.
  • Spread ⅓ of the potatoes into the bottom of the prepared casserole dish and top with ⅓ of the cheese mixture.
  • Repeat layering twice, ending with cheese mixture. Pour heated half-and-half over top layer. Cover dish with aluminum foil.
  • Bake in the preheated oven for 45 minutes. Remove foil and continue baking for 25 to 30 minutes more until potatoes are tender.

2 1/2 lb potatoes, russets
1 large yellow onion
4 oz gruyere cheese
4 oz mild Swiss cheese
2 c heavy cream
1 tsp thyme, dried
1 tsp granulated garlic
8-10 slice bacon
1 tsp pepper
1 tsp salt

Steps:

  • 1. Peel potatoes using your mandolin, slice potatoes and onion very thin set aside.
  • 2. In a small saucepan melt 3/4 of the grated cheese in heavy cream adding the thyme and garlic.
  • 3. Fry bacon in a skillet until crisp, but not overcooked. Crumble in pieces.
  • 4. In a baking dish, layer potatoes, onions, a small amount of bacon. Season each layer with salt and pepper.
  • 5. Continue layering until all potatoes, bacon, and onion are used.
  • 6. Pour the cream and cheese over each layer. Finish the top with the last amount of grated cheese.
  • 7. Place covered in a 350 oven for 1 hour and 15 minutes until most of the liquid has been absorbed.
  • 8. Uncover and continue cooking until the top is browned to your satisfaction!

1 tablespoon grainy mustard
2 tablespoons butter, softened
1 large roasting potato, thinly sliced
1 medium sweet onion, thinly sliced
salt and pepper
1/2 cup swiss cheese, shredded

Steps:

  • Preheat oven to 350°F.
  • Mash together the mustard and the butter with a tablespoon of buttermilk; set aside.
  • Pour enough of the buttermilk to cover the bottom of an au gratin dish. Layer onion slices and potato slices alternately; sprinkle salt and pepper to taste over each potato layer and put blobs of the butter mixture on each layer of potato; ending with a potato layer and butter mixture blobs. Pour the rest of the buttermilk over all. Open layers a little with a fork as you pour to let the buttermilk through.
  • Sprinkle Swiss cheese shreds evenly over the top. Bake for 45 minutes to 1 hour or until potatoes are fork tender and top is browned and crunchy.

4 -6 ounces Canadian bacon or 4 -6 ounces ham, julienned

  • Preheat oven to 350°F.

This is one of those stick to your ribs side dishes and it's a huge hit with my family. I make it at least once a week and I like to take it to cookouts too.

5 -8 large baking potatoes (I use Idaho Potatoes)
1 tablespoon butter
1/2 medium sweet onion (diced)
1 teaspoon minced garlic
2 tablespoons butter
3 tablespoons flour
2 1/2 cups milk
1/4-1/2 cup colby cheese (crumbled not shredded)
1/8-1/4 cup crumbled bacon (I use the "Real Bacon Crumbles" you use for salad toppings to save time)
salt and pepper (to taste)
parmesan cheese (sprinkled on top)
1/4 cup breadcrumbs
2 tablespoons melted butter

Steps:

  • Peel and slice potatoes and set aside in a bowl of cold water.
  • Saute onion with 1 tablespoons butter until golden. Add garlic and continue to saute until garlic is lightly colored. Remove from heat and set aside.
  • In small sauce pan melt 2 tablespoons butter add 3 tablespoons flour. Stir constantly until mixture begins to bubble. Slowly add milk and stir constantly bringing sauce to a boil. Reduce heat and simmer for 2-4 minutes until sauce is thickened.
  • Drain potatoes. Spray or grease 2 qt casserole dish and add potatoes, sauteed onions/garlic, and pour sauce over potatoes. Salt and pepper to taste (you can tell by tasting the sauce). Mix well. Sprinkle bacon pieces and cheese crumbles then lightly hand mix throughout dish.
  • Optional: you can sprinkle parmesan cheese on top and/or 1/4 cup bread crumbs mixed with 2 tbsp melted butter for a crispier topping.
  • Bake at 400°F for 1 - 1 1/2 hours uncovered or until top is golden brown and potatoes are tender. Cover with foil for the first 45 - 60 minutes of the cooking time if you add the bread crumb mixture or else it will burn with this high temp/long cook time.

6 ounces cream cheese with herbs
1 cup swiss cheese, grated

1 garlic clove, minced

1 pinch nutmeg
5 medium baking potatoes
1/4 cup grated parmesan cheese

Steps:

  • Melt butter in a medium saucepan; whisk in flour.
  • Cook 2 or 3 minutes without browning, stirring constantly.
  • Whisk in milk.
  • Bring to a boil.
  • Reduce heat, simmer gently for 5 minutes.
  • Add herbed cheese, swiss, cheddar, garlic, salt, pepper and nutmeg.
  • Stir until cheese melts.
  • Peel and slice potatoes into 1/4 inch slices.
  • Layer potatoes and sauce alternately in a buttered 9 inch casserole dish, ending with the sauce.
  • Sprinkle with parmesan.
  • Bake in preheated 350°F oven for 1 1/2 hours.
  • Let stand for 5 to 10 minutes before serving.

½ cup sour cream
1 tablespoon onion powder

2 cups shredded American cheese
3 tablespoons grated Parmesan cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.

I love scalloped and au gratin potatoes. I love bacon. Putting them together makes for some serious comfort food!

5 large potatoes
1 teaspoon salt
1 large onion, sliced
1/2 cup green onion, chopped
3 tablespoons butter
1/3 cup flour
3 1/2 cups milk
1 1/2 cups shredded cheddar cheese
3/4 teaspoon salt
1/8 teaspoon black pepper
6 slices bacon
garlic salt

Steps:

  • Cook bacon until done, but not crispy. Set aside on paper towels to absorb grease and pat dry. Cut into bite sized pieces when cool.
  • Wash potatoes. Bring a large saucepan of water to a boil. Add salt to the boiling water, then add the potatoes. Cook for 10-15 minutes in boiling water (the potatoes will finish cooking in the oven). Set aside and allow to cool. Once you're able to work with the half-cooked potatoes, slice them into 1/2" pieces.
  • In saucepan, melt butter. Saute the onion slices until just tender; remove from pan and set aside. Making sure you still have enough butter in your pan, stir in flour and milk, whisking until smooth. Cook over low heat, stirring/whisking constantly for 1 minute. Add cheese and continue to stir until cheese melts. Stir in 3/4 teaspoon salt and 1/8 teaspoon pepper. Mix in bacon.
  • In a buttered 9x13 quart casserole, layer potatoes, onion, and cheese mixture. Continue to add layers until about one inch from the top, finishing off the top layer with the cheese mixture.
  • Bake in a preheated 350°F oven, covered, for 45 minutes. Take the cover off of the casserole dish, sprinkle with green onions, and bake for another 5 minutes uncovered. Sprinkle lightly with garlic salt before serving, if desired.
