CHEESY SWISS CHARD AND POTATO CASSEROLE RECIPE

Is there anything more comforting than a cheesy potato casserole? I added fresh Swiss chard from the garden to create this mouthwatering casserole that's the perfect side dish for any meal and great for pot lucks!

8 medium potatoes ((about 3 lbs), peeled and cubed)
1 bunch Swiss chard (tough stems removed and coarsely chopped)
4 tbsp olive oil (divided)
1 garlic clove (finely minced)
salt and pepper
3/4 cup cubed cheese (cheddar, friulano, caciocavallo or other)

Steps:

  • In a large pot of salted water bring the potatoes to a boil and cook until tender, about 12 minutes.
  • Meanwhile, heat a large sauté pan and add the chopped Swiss chard with the water still clinging to the leaves. Cook, on medium heat, stirring, until the leaves have wilted, about 2 minutes. Add 1 tbsp olive oil and garlic and cook for one minute longer. Transfer to a bowl.
  • Preheat oven to 350F and grease a rectangular casserole with oil. When the potatoes are tender, drain and transfer them to a large bowl. Mash them, add 2 tbsp olive oil and add salt, pepper.
  • Add the cooked Swiss chard and stir to evenly distribute throughout the potatoes. Add the cubed cheese and stir.
  • Transfer to the prepared casserole and spread evenly to cover the casserole. Drizzle lightly with olive oil.
  • Bake at 350ºF for 30-40 minutes or until the top is golden and the cheese is melted. Serve immediately.

4 1/2 to 5 pounds Swiss chard or rainbow chard (6 to 8 large bundles)
Salt
1 stick butter
1/2 cup flour
5 cups whole milk
Freshly ground black pepper
Nutmeg
2 bulbs roasted garlic, cloves squeezed from skins and pasted
4 cups freshly shredded Parmigiano-Reggiano

Steps:

  • Arrange the rack in the middle of oven and preheat the oven to 400 degrees F. Bring a large pot of water to boil.
  • Stem the chard, keeping the leaves whole. Salt the boiling water and add the chard and let wilt. The pot will be packed at first. Boil the chard 10 minutes, drain in a colander and run under cool water. Let it drain and squeeze out any excess liquid in a clean kitchen towel. Chop.
  • Meanwhile, heat the butter over medium heat. Whisk in the flour and cook 1 minute, and then whisk in the milk. Season with salt, pepper and a little freshly grated nutmeg. Stir in the roasted garlic paste. Thicken the sauce to coat the back of a spoon and adjust seasonings to taste.
  • Layer half the greens in a medium casserole (8 to 10 inches long). Top with half the bechamel sauce and half the cheese. Repeat layers, ending with the cheese. Bake until bubbly and brown, 20 to 30.

SAUSAGE AND TALEGGIO CASSEROLE WITH SWISS CHARD



Sausage and Taleggio Casserole with Swiss Chard image

1 tablespoon extra-virgin olive oil
3 Italian sausage links, meat removed from casing and broken apart
1/2 onion, sliced
1 clove garlic, grated
8 ounces button mushrooms, quartered
1 bunch Swiss chard, leaves picked from stems and chopped (about 4 packed cups)
Kosher salt and freshly ground black pepper
1/2 cup fresh parsley, chopped
8 large eggs, beaten
4 ounces Taleggio cheese, cut into 1/2-inch cubes

Steps:

  • Preheat the oven to 350 degrees F.
  • In a 10-inch cast-iron or straight-sided pan, heat the olive oil over medium-high heat. Add the sausage pieces and break apart further with a wooden or firm spoon. Brown the sausage for about 4 minutes. Reduce the heat to medium and add the onion and garlic. Cook to let soften, about 2 minutes.
  • Add the mushrooms and return the heat to medium-high. Cook about 4 minutes, then add the Swiss chard. Season with salt and pepper.
  • Continue to cook the mixture until the Swiss chard is fully softened, about 6 minutes longer. Stir in the parsley.
  • Turn off the heat and fold in the eggs. Season with salt and pepper.
  • Place the pieces of Taleggio on top of the eggs and transfer to the oven to bake just until set and the Taleggio is melted and bubbling, about 10 minutes.

SWISS CHARD BRAISED IN SHIITAKE BUTTER

Swiss chard isn't exactly a bitter green, but it's not candy either. To bring out its fresh, mild, spinach-like flavor, I braise it with earthy mushrooms and thyme.

Number Of Ingredients 5

9 ounces Swiss chard, very thinly sliced crosswise (about 8 cups)
4 tablespoons (1/2 stick) unsalted butter
4 fresh shiitake mushroom caps, sliced 1/4 inch thick
1 teaspoon fresh thyme leaves
Kosher salt and freshly ground black pepper

Steps:

  • In a large bowl, cover the chard with cold water. Swish it around to remove all of the grit, then lift it out into a colander. Repeat if the chard is very dirty. (Don't spin it dry-you want the water clinging to the leaves.)
  • Heat 2 tablespoons of the butter in a large skillet over medium heat. Before the butter completely melts, add the shiitakes and thyme. Season with a little salt and cook just until fragrant, about 1 minute.
  • Reduce the heat to low and add the chard. Cook, gently stirring occasionally, until just tender and wilted, about 4 minutes. Raise the heat to high and cook, stirring occasionally, until the greens are very tender and almost all of the liquid has evaporated, about 3 minutes.
  • Add the remaining 2 tablespoons butter and cook, stirring, until the butter melts and the greens are glazed, about 3 minutes longer. Season to taste with salt and pepper and serve immediately.

CASSEROLE OF SWISS CHARD AND GRUYERE

1 pound swiss chard (kale may be substituted)
3 tablespoons extra-virgin olive oil
1 medium onion, chopped
3 cloves garlic, minced
1/4 cup chopped scallions
1 cup finely chopped well-drained canned plum tomatoes
1/2 cup freshly grated Gruyere cheese
Salt and freshly ground black pepper

Steps:

  • Rinse the swiss chard, drain it and chop it fine.
  • Heat the oil in a large, heavy skillet. Add the onion, saute over medium heat until tender but not brown, then stir in the garlic. Add the scallions and tomatoes, then add the chopped swiss chard. Cook for about 15 minutes, until the swiss chard has wilted.
  • Remove from heat, stir in all but two tablespoons of the cheese and season to taste with salt and pepper.
  • Preheat oven to 350 degrees.
  • Spoon the swiss chard mixture into a one-quart casserole. Sprinkle the remaining cheese on top. Bake for about 30 minutes, then serve.

Try baking leafy greens with garlic, cream and Parmesan for an indulgent side dish - perfect with your Sunday roast

oil or butter, for greasing
1kg Swiss chard , stems cut into 1cm pieces and leaves into quarters
200ml double cream
1 garlic clove , crushed to a paste with sea salt
2 egg yolks
200g parmesan , grated (or vegetarian alternative)
75g dried breadcrumbs
1 tsp fresh thyme leaves

Steps:

  • Put a pan of salted water on to boil and cook the chard stalks for 2 mins until tender. Remove the stalks with a slotted spoon. Add the leaves and cook for 30 secs-1 min. Drain and reserve 200ml of the cooking water. In a saucepan, bring the cream to a simmer, then add the garlic and cook for 2 mins. Whisk in the water, egg yolks and 140g Parmesan, and let them all melt together and bubble for 3 mins.
  • Heat oven to 180C/160C fan/gas 4. Add the chard to the saucepan, season, mix well and tip into a greased baking dish. Top with the breadcrumbs, thyme and remaining Parmesan. Cover with foil and bake for 15 mins. Remove the foil and cook for 15 mins more until golden and bubbling.

Here, we add handfuls of sliced Swiss chard and shiitake mushrooms for an extra boost of nutrients. And because healthy food can be delicious too, a little cheese for creaminess and diced tomatoes for brightness make this a well-rounded meal for fall and winter.

2 cups chopped shiitake-mushroom caps (5 ounces)

2 teaspoons minced garlic (from 2 cloves)
1 cup pearled barley
1 can (28 ounces) diced tomatoes
2 ounces Parmigiano-Reggiano, grated (1/2 cup)

3 ounces Gruyère or white cheddar, grated (1 cup)

Steps:

  • Heat oil in a large straight-sided skillet or braiser over medium-high. Add mushrooms and chard stems; season with salt. Cook, stirring occasionally, until mushrooms are tender and golden, 5 to 6 minutes. Stir in garlic; cook 30 seconds. Add barley and cook, stirring, until toasted, about 1 minute.
  • Stir in tomatoes and 1 cup water; season with salt and pepper. Reduce heat to medium-low, cover, and simmer, stirring occasionally, until barley is tender and creamy, 25 to 30 minutes.
  • Stir in chard leaves, Parmigiano, and lemon juice; cover and cook, stirring once, until chard is wilted, 2 to 3 minutes. Season, top with Gruyère, cover, and heat until melted, 2 minutes. Serve with basil.
