TERIYAKI MARINADE WITH ORANGE JUICE
Posted by request. Has a great flavor that goes nicely with meats, especially chicken. Also good on vegetables. The pic is of boneless chicken breast that has been marinated in this recipe for about 6 hours. Was excellent!

TERIYAKI MARINADE
Years ago I was given a recipe for homemade teriyaki marinade by a friend from Hawaii. The recipe was rich, flavorful, and surprisingly easy to make. I regretfully somehow misplaced the recipe over the years. Now that I'm married and back in the kitchen, I'm cooking more and a lot more from scratch. I've tried to recreate the recipe I had years ago and think I've done a pretty good job. Preparation time does not include two hours in refrigerator to marinate meat. Hope you like it.

Steps:
- In medium pan over low to medium heat simmer soy sauce, garlic, brown sugar, vinegar, and ginger root.
- After 15 minutes, add pineapple juice and orange juice.
- Up to 2 hours before cooking time pour the marinade into a shallow baking pan or a ziplock bag that you've placed in a bowl to avoid spillage, add strips of beef, chicken pieces, steaks, OR pork chops, etc.
- Place in refrigerator to marinate.
- It is recommended that you use the marinade only once, for one kind of meat, then discard. If you are making two kinds of meat, such as chicken and beef, divide the marinade and allow the different meats to work in different containers.
- Meat can be cooked in a variety of ways. Steak or beef strips are good placed over hot coals on a grill. Cook steaks to your preference. Beef strips will cook quickly, turn often, watch closely. Chicken is best baked or broiled until juices run clear. Pork can be cooked on the grill or in the oven until no longer pink.

SPICY TERIYAKI MARINADE
Add a little spice to your teriyaki! I use this with chunks of beef to make kabobs (with red onion, green and red peppers and button mushrooms). The crushed chili and cayenne make this just a little different than other teriyaki marinades. Adjust to your spice level.

SPICY ORANGE TOFU
Recently came across this on the Internet and want to try it soon as I love sweet/spicy combinations. Note actual nutritionals are not adjusted for discarding the marinade. Total time does not include marinading time. Posting for the 2005 'Zaar World Tour.

Steps:
- Place tofu block onto short-side and slice into 4 square wedges (they will be thin). Lay the tofu flat again, and cut the block diagonally to make 8 triangles. Without separating the pieces, place tofu on a plate. Cover with a paper towel, and place a heavy skillet on top. Set aside for 30 minutes to drain excess water from the tofu.
- In a medium bowl, whisk together the orange juice, vinegar, soy sauce, oils, garlic, ginger.
- Separate the pressed tofu pieces, and arrange in a baking dish in a single layer. Cover with the marinade, and sprinkle with the green onion, chili strips and cilantro. Cover with plastic wrap, and refrigerate for at least 30 minutes and up to overnight.
- Preheat oven to 350 degrees.
- Pour off some of the marinade, so the tofu is covered halfway. Bake for 40 to 45 minutes, without turning, until the tofu is golden and most of the marinade has been absorbed.

SPICY ORANGE MARINADE
This is a great marinade for chicken or fish, but be warned... its got a kick! I Use Melinda's hot sauce. Best to use fresh squeezed citrus juices, but if you don't have them on hand, store bought will work as well. I like to marinade for at least. If you are looking to pair a wine with this, go for a Riesling. The high sugar content and low alcohol will cleanse the pallet. A chardonnay will magnify the heat of the sauce.

- In shallow glass baking dish, combine soy sauce, orange juice concentrate, sugar, giner, lemon juice, Tabasco sauce and garlic. Marinate chicken in suce for 1 hour or oernight in refrigerator.
- Place marinated chicken in a single layerin a seperate, foil-lined baking dish.
- Bake in preheated 350* oven for about 15minutes. Turn and baste Bake an additional 15 minutes.
- Serve with orzo, rice etc.

SPICY TERIYAKI PORK
I improvised one night and this is what came of it. The combination of sweet and mild burn worked so well I decided to share.

- Heat oil in a 10-inch skillet over medium heat.
- Brown the pork in the skillet.
- While the pork is browning, combine soy sauce, orange juice, water, brown sugar, ginger, and garlic. Mix thoroughly.
- Add sauce mixture to skillet and bring to a boil. Cover and simmer until pork is fully cooked.
- Remove lid and simmer until the sauce is mostly absorbed by the pork.
- While the pork simmers, boil the green beans.
- Add green beans to the skillet, toss with the pork and sauce, and serve over rice.
