SWISS VEGETABLE CASSEROLE
Served hot and bubbly from the oven, this colorful and cheese-topped veggie casserole is good enough to steal the limelight from your favorite main dishes.

Steps:
- Stir the soup, sour cream, black pepper, vegetables, 2/3 cup onions and 1/4 cup cheese in a 2-quart casserole. Cover the casserole.
- Bake at 350 degrees F. for 40 minutes or until the vegetables are tender. Stir the vegetable mixture. Top with the remaining onions and cheese.
- Bake for 5 minutes or until the cheese is melted.
SUMMER VEGETABLES IN SOUR CREAM W/CHEESE
This is such an easy dish to make you will want to make it often- the combinations of the vegetables just makes you mouth water and the cheese and sour cream are mixed just right to tantalize your taste buds to the very last bite!

Steps:
- 1. Preheat oven to 375^. Spray a 9 x 13-inch pan with olive oil; set aside. --- In a medium skillet , heat 2 Tablespoons of olive oil and sauté the onions,and shallot over medium heat for 8 minutes, until clear. Add the garlic and cook for 1 more minute. Stir in the sour cream and flour. Remove from heat. Spread the onion mixture over bottom of prepared pan; reserving about 1/2 cup.
- 2. Slice the vegetables as directed. Layer them alternately in the dish on top of the onion mixture, very close together, and making about 3 or 4 stand up rows. Sprinkle with the salt and pepper, and sprinkle with the thyme and drizzle with the 1/2 cup reserved sour cream/onion mixture and a little olive oil.
- 3. Cover the dish with foil and bake for 35 to 40 minutes, until vegetables are tender, especially the potatoes. Uncover and sprinkle the cheese over top, and bake for another 30 minutes or until browned. Sprinkle with paprika if desired.
PASTA AND VEGETABLES WITH SOUR CREAM

Steps:
- Bring water for pasta to boil in covered pot.
- Chop whole onion.
- Heat large nonstick skillet until it is very hot; reduce heat to medium high, and add oil. Add the onion, and cook until it begins to brown.
- Meanwhile, slice and add garlic.
- Wash, trim and seed pepper, and chop and add to onion as it cooks with the thyme.
- Wash, trim and cube zucchini, and add to vegetables; cover, and cook over low heat for a few more minutes, until pasta is cooked.
- Cook pasta according to package directions.
- When pasta is cooked, drain and stir into vegetables with the sour cream. Season with salt and pepper, and serve.

SUMMER VEGETABLES IN A CREAMY CHILE CHEESE SAUCE
Steps:
- Place the zucchini in a medium saucepan with 1 cup water; season lightly with salt and pepper. Bring to a boil and simmer, covered, over medium heat for 2 minutes. Set aside without draining.
- Heat the oil in a large nonstick skillet over high heat until hot but not smoking. Reduce the heat slightly and add the garlic and onion. Cook, stirring until the onion is translucent, about 2 minutes. Stir in the tomato and cook until its liquid is partly evaporated, about 5 minutes. Stir in the corn and poblanos and simmer 5 minutes more.
- Add the zucchini and its cooking liquid along with the evaporated milk to the corn-chile mixture and bring to a boil. Reduce the heat to low, stir in the Cheddar, and cook just until it melts. Serve immediately.

CREAM CHEESY VEGETABLE CASSEROLE
A Quick, easy casserole made with frozen vegetables, soup and cream cheese. There are lots of ways to alter this recipe by using alternate soups, vegetables, etc. (update 12/08) after reading the reviews that some chefs thought this dish was too soupy, I made it again using 2 packages of frozen veggies, it wasn't soupy at all, so I've edited the recipe from 1 pkg. to 2 packages of veggies. I think this will correct the problem.

- Prepare frozen vegetables as package directs. Cook until just tender as they will continue to cook as casserole bakes in oven.
- Place cooked vegetables in a large bowl, stir in soup and cream cheese.

- In a large saucepan, bring 1/2 inch of water to a boil over high heat.
- Add the squash and onion.
- Lower the heat and simmer, covered, for 3 to 5 minutes or until squash is crisp-tender. Drain.
