I shared this impressive strata with friends at their new home. For special occasions, change up the veggies and cheese. I've used tomatoes, spinach and cheddar. -Kim Forni, Laconia, New Hampshire

10 bacon strips, chopped
1 pound Swiss chard, leaves chopped and stems julienned
1 large sweet onion, thinly sliced
1/2 cup chopped roasted sweet red peppers
12 slices white bread, toasted and cubed
2 cups smoked Gouda or smoked Gruyere cheese, shredded
2 cups Swiss cheese, shredded
10 large eggs
3-1/2 cups 2% milk
2 teaspoons prepared mustard
1 teaspoon salt
1/2 teaspoon coarsely ground pepper
1/2 teaspoon cayenne pepper

Steps:

  • In a large skillet, cook bacon over medium heat until crisp; drain on paper towels, reserving 1 tablespoon drippings. Cook chard stems and onion in reserved drippings over medium heat until tender, about 4 minutes. Add chard leaves and red pepper; cook 2 minutes. Drain., Lightly grease a 13x9-in. baking dish. Layer with half the bread cubes, half the vegetable mixture and half the cheeses. Repeat layers., Mix remaining ingredients until well blended. Pour over layers; press down slightly. Sprinkle bacon over top. Cover and refrigerate several hours or overnight., Preheat oven to 325°. Remove strata from refrigerator while oven heats. Bake until puffy, lightly browned and set, about 1 hour.

Something like a cross between an omelet casserole and bread pudding, strata is perfect for serving a crowd at breakfast or brunch as it can be made ahead of time.

1 pound bulk sweet or spicy Italian sausage
2 shallots, finely chopped
1 bunch Swiss chard (1 pound), stems diced medium, leaves torn into 2-inch pieces and rinsed
Coarse salt and ground pepper
1 day-old baguette, cut into 1/2-inch slices
2 1/2 cups whole milk
7 large eggs, lightly beaten
1 cup shredded Gruyere cheese (3 ounces)

Steps:

  • Preheat oven to 375 degrees. Heat a large skillet over medium-high. Add sausage and cook, breaking up meat with a wooden spoon, until browned, 5 minutes. Transfer sausage to a small bowl, leaving behind as much fat as possible. Add shallots and chard stems to skillet and cook over medium until shallots are translucent, 3 minutes. Add a little water to pan and cook, stirring and scraping up browned bits from skillet with spoon. Add chard leaves and cook, stirring occasionally, until wilted, 3 minutes. Season with salt and pepper.
  • Spread half the sausage in a 9-by-13-inch baking dish and top with half the chard mixture. Top with bread, overlapping slices slightly. Top with remaining sausage and chard mixture. In a large bowl, whisk together milk and eggs, season with salt and pepper, and pour evenly over top. Firmly press on strata to submerge bread in egg mixture. Cover dish tightly with foil and let sit 10 minutes (or refrigerate up to overnight).
  • Bake strata 45 minutes. Uncover, sprinkle with cheese, and bake until cheese melts and egg mixture is mostly absorbed and set in center, 6 to 10 minutes. Let cool 10 minutes before serving.

6 slices whole wheat bread
1 lb swiss chard, stems and leaves, chopped
2 cups colby cheese, grated (about 8 oz.)
4 eggs
2 cups skim milk
2 teaspoons Dijon mustard

Steps:

  • Remove crusts from bread and fit slices into a greased rectangular baking pan.
  • Cover with Swiss chard and press grated cheese firmly down on top.
  • In a separate bowl, beat together egg, milk, and mustard and pour over casserole. Cover with plastic wrap and refrigerate 3 to 4 hours or overnight.
  • Bake at 350 degrees for 45 to 50 minutes or until firm and puffy. Let stand 10 minute before serving.

I make stratas - savory bread puddings - when I find myself with a stale baguette on hand, even if it's so hard that the only way to slice it is to saw it. A strata is as comforting as macaroni and cheese, and it makes a great one-dish meal.

Number Of Ingredients 13

1/2 pound stale bread, sliced about 3/4 to 1 inch thick
3/4 ounce dried mushrooms
8 ounces Swiss chard, stemmed and cleaned
2 garlic cloves, 1 cut in half, green shoots removed, the other minced
1 1/2 cups low-fat milk
2 ounces Gruyère cheese, grated (1/2 cup, tightly packed)
1 ounce Parmesan cheese, grated (1/4 cup, tightly packed)
2 tablespoons extra virgin olive oil
1 teaspoon chopped fresh rosemary
Salt
freshly ground pepper
4 large eggs
1/2 teaspoon salt

Steps:

  • If the bread is soft, toast it lightly and rub each slice front and back with the cut clove of garlic. Cut in 1-inch dice. If the bread is stale, just rub the slices with garlic and cut them into 1-inch dice. Place in a very large bowl, and toss with 2/3 cup of the milk. Set aside.
  • Place the dried mushrooms in a bowl or a Pyrex measuring cup, and cover with 1 1/2 cups boiling water. Allow to sit for 30 minutes. Set a strainer over a bowl, line with cheesecloth, a coffee filter or paper towels, and drain the mushrooms. Squeeze the mushrooms over the strainer to extract all of the broth. Rinse, away from the strainer, in several changes of water to wash off sand. Squeeze out excess water. Chop coarsely. Measure out 1 cup of the mushroom broth, and combine with the remaining milk.
  • Preheat the oven to 350 degrees. Oil or butter a 2-quart baking dish or gratin. Heat a large skillet over medium-high heat, and add the chard. Stir until the leaves begin to wilt in the liquid left on them after washing. Cover the pan, and let the chard steam until it has completely collapsed, about two minutes. Uncover and stir. When all of the chard has wilted, remove from the pan and rinse briefly with cold water. Press or squeeze out excess liquid. Chop coarsely and set aside.
  • Add 1 tablespoon of the olive oil to the pan, turn the heat down to medium and add the minced garlic. Cook, stirring, until fragrant, about 30 seconds, and stir in the reconstituted mushrooms, the rosemary and the chard. Stir together for a couple of minutes, and season to taste with salt and pepper. Remove from the heat, and transfer to the bowl with the bread cubes. Add the cheeses, and toss together. Arrange in the baking dish.
  • Beat together the eggs in a medium bowl. Add salt to taste (I use 1/2 to 3/4 teaspoon), the remaining milk and the mushroom broth. Add a few twists of the peppermill and pour over the bread. Press the bread down into the custard mixture. Sprinkle a little Parmesan over the top, and drizzle on the remaining olive oil. Place in the oven, and bake 40 to 50 minutes, until puffed and browned. Remove from the oven, and serve hot or warm.

5 tablespoons extra virgin olive oil
2 large yellow onions, halved and very thinly sliced
4 ounces French bread, cut into 1-inch cubes
12 ounces sweet Italian sausage, casings removed
3 garlic cloves, minced
6 cups swiss chard, roughly chopped
8 eggs
2 1/2 cups half-and-half
1 1/4 cups Fontina cheese, shredded
1/2 teaspoon kosher salt
1/8 teaspoon fresh ground pepper

Steps:

  • In a large, heavy fry pan over medium heat, warm 3 Tbs. of the olive oil. Add the onions, cover and cook, stirring occasionally, until they are completely limp, 10 to 15 minutes. Reduce the heat to medium and cook, stirring frequently, until the onions are golden brown, 30 minutes. Remove from the heat and let cool. You will need 2/3 cup caramelized onions for the strata; cover and refrigerate the remaining onions.
  • Butter a 10-inch nonstick braiser. Put the bread in a large bowl. In a large sauté pan over medium heat, warm the remaining 2 Tbs. oil. Add the sausage and cook, stirring occasionally, until browned and cooked through, about 5 minutes. Using a slotted spoon, transfer to the bowl with the bread.
  • Return the pan to medium heat. Add the garlic and cook, stirring frequently, until fragrant, about 1 minute. Add the chard and cook, stirring occasionally, until wilted, 2 to 3 minutes. Transfer to the bowl with the bread mixture.
  • In another large bowl, whisk together the eggs and half-and-half. Pour the egg mixture over the bread mixture. Add the onions, cheese, salt and pepper and stir until well blended. Transfer the mixture to the prepared pan, cover with plastic wrap and refrigerate for 4 to 24 hours.
  • Preheat an oven to 350°F.
  • Remove the plastic wrap from the pan. Bake the strata until golden brown and cooked through, about 55 minutes. Let stand for 10 minutes before serving.
