I have been experimenting with bread machine recipes; and this has to be the BEST yet. I love it! Wonderful warm from the oven or toasted.

Steps:
- Put milk and egg into measuring cup.
- Add enough tepid water to make 1 cup.
- Pour into bread machine pan.
- Add the softened butter, 1/3 cup sugar, salt, bread flour and yeast.
- Set bread machine to dough cycle.
- Add raisins at the beep.
- Remove the dough at the end of the dough cycle.
- Roll dough to 10x12 rectangle.
- Brush egg white on surface of dough.
- Brush with melted butter.
- Combine cinnamon and sugar.
- Sprinkle over dough; leaving about 1 inch on each edge.
- Roll from short side.
- Pinch where it meets and roll ends under.
- Place in loaf pan.
- Cover with cloth and let rise for about an hour.
- Preheat oven to 350 degrees.
- Once the dough has risen, brush top with egg white and sprinkle with 1 1/2 teaspoon sugar.
- Bake at 350 for about 35 minutes.

- Place water, milk, shortening, salt, flour, sugar and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start.
- If your machine has a Fruit setting, add the raisins at the signal, or about 5 minutes before the kneading cycle has finished.
- Take dough out after first kneading cycle has finished. Turn dough out onto a lightly floured surface and roll out into a rectangle. Spread dough with butter, brown sugar, and cinnamon. Roll dough, and divide into two parts. Place loaves in two lightly greased 9x5 inch bread pans. Cover and let rise in a warm place until doubled in size, about 1 hour.
- Preheat oven to 350 degrees F (175 degrees C).
- Brush tops of risen loaves with melted butter and bake in preheated oven for 30 to 40 minutes, until crust is brown and loaves sound hollow when tapped.

- In a large bowl, dissolve yeast in warm water. Add 1/2 cup sugar, oil, salt, eggs and 4 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. - Begin with a very active recently fed starter. It should pass the float test.
- Set a large bowl on a digital food scale set to grams and press the tare button. The scale should read zero.
- Pour in the water to weight of 650 g. Press tare.
- Pour in 300 grams of starter. Press tare. The starter should form a floating mass on the water.
- Add the oil. Press tare
- Add the honey. Press tare.
- Whisk together the starter, oil, honey and water until they are mixed.
- Add the 1000 grams of flour.
- Mix the flour into the water/starter with a dough hook, spatula and your wet hands until you have a shaggy ball of dough.
- autolyse 1 hour.
- Sprinkle salt across dough.
- spritz with water bottle and work in the salt with wet hands.
- Rest 30 mins
- PREPARE RAISINS: Put the raisins in water and set aside. They will plump as they absorb water for a better finished baking result.
- Begin Stretch and Folds. You need 4 rounds of stretch and folds 30 mins apart. See video for technique.
- BEFORE the second stretch and fold cut the dough in half if you only want ONE loaf for cinnamon raisin bread. The other make as plain.
- Incorporate the plumped raisins into the dough in the second and third stretch and folds. Half in one then half in the other.
- Fourth stretch and fold all the raisin will be blended evenly throughout the dough.
- Refrigerate overnight.
- Remove from fridge and warm to room temperature. (ABOUT TWO HOURS)
- ( If you have not yet divided the dough for loaves) Divide the dough into two equal dough balls by weight.
- Bench rest an hour until dough is elastic.
- De-gass dough with rolling pin and shape for pans as shown in post.
- Spray the dough with water and evenly sprinkle with Half the cinnamon sugar.
- Fold the outside edges of the dough to the center and close the seam. Sprinkle remaining cinnamon sugar on the top.
- Fold the FRONT corners of the rectangle to the center seam.
- Roll the dough up tucking it as you roll to keep the roll tight.
- Flatten the seam and pinch the ends.
- Place the formed dough loaf into your oiled bread pans.
- let dough do a final rise in bread pans covered loosely with plastic until they reach the top of the loaf pans.
- Do an egg wash(optional) on top of the dough before baking.
- Score the dough with a sharp wet blade. Make one deep slash down the length of the loaf for best rise.
- Preheat oven with a pizza stone(or baking sheet) and broiler pan on oven shelf below at 400°.
- Loaf pans go on top of a sheet pan onto the stone(If you have one).
- Spritz loaves very liberally with water bottle just before going into oven.
- Pour water about 1/2 inch deep in the broiler pan. This creates steam.
- Keep steamy for first 15 mins. Spray hot oven with water as you begin baking the loaves.
- After 15 mins turn oven down to 375°.
- Bake an additional 30-35 mins.
- Turn loaves for even browning.
- Using a digital thermometer check internal Temp of loaf. It is done at 200°. If you don't have a thermometer pop loaves out to test for hollow on bottom. Or thump the loaf. Does is have a hollow sound?
- Remove from oven and cool on racks to room temperature before cutting the bread.

CINNAMON RAISIN BREAD
Steps:
- Put the raisins in a small bowl filled with hot water. Let the raisins plump up, about 10 minutes. Strain them through a fine mesh strainer but save the raisin water.
- Pour a cup of warm raising water into the bowl of a standing mixer or large mixing bowl. (Note: if the water cooled down, warm it up a little more. Water should be a little warmer than room temperature but not hot. Make sure there is 1 cup of water.)
- Add yeast to water and stir gently. Give it a about 10 minutes for the yeast to bloom and then stir.
- Stir warmed milk, melted butter, and salt into the water.
- Add 5 1/2 cups of the flour and cinnamon and mix on low to form a shaggy dough.
- Switch to a dough hook and knead in your mixer on low speed with the dough hook (or knead by hand for 8-10 minutes to form a smooth, slightly tacky dough). If the dough is too sticky, add a little more flour.
- With the mixer on low, gradually add raisins to the dough and continue kneading until they are evenly distributed.
- Cover bowl with a plastic wrap or a towel and place in the warm dry place. Let rise for about an hour.
- Divide the dough into two even pieces. Roll the dough out on the counter. Make sure that the dough is a little less wide that your loaf pan. Try to make the dough about 1/6th to 1/8th of an inch think.
- Brush the entire surface of the dough with egg.
- Combine cinnamon and sugar in a small bowl and mix completely. Sprinkle the dough generously with cinnamon and sugar mixture.
- Roll up the dough and place it in the greased loaf pan, seam side down.
- Repeat with the other half of the dough.
- Cover the pans with a towel and let the loaves rise until mounded over the top, about 30 minutes. Sprinkle with some cinnamon and sugar over the top.
- Preheat the oven to 375° while the dough is rising.
- Bake for 40-45 minutes until golden brown. You can check internal temperature of the dough in the center. Bread is ready when it reaches 190° internal temperature. (Note, bread baked in smaller pans will take a few minutes longer than wider pans.)
- Take the loaves out of the oven and let it cool to room temperature before taking out and slicing.

CINNAMON SWIRL RAISIN BREAD(COOK'S COUNTRY)
You will need a spray bottle filled with water for this recipe. Whole milk is best in the dough, although low-fat milk will work; skim milk will make the bread too dry. Do not add raisins for the cinnamon swirl version. **I let my dough rise the second time in the fridge, then took it out in the morning for an hour before baking. It did tale a little longer in the oven because of this.

- Filling/Topping: Combine the ingredients in a small bowl ,breaking up any clumps. Cover till needed.
- Dough: Spray a large bowl with cooking spray. Whisk milk, melted butter, and yolks in a measuring cup. Mix 1/4 cup of the cinnamon mixture, sugar, yeast, flour, and salt in the bowl of a stand mixer fitted with the dough hook. Turn mixer to low and slowly add the milk mixture. After dough comes together increase speed to medium and mix the dough until smooth and comes away from the bowl(About 5-6 minutes). If dough seems too sticky, add up to 1/4 cup more flour during kneading. Turn out onto an unfloured surface. Knead in the raisins by hand until evenly distributed. Form into a smooth round ball, and place in a greased bowl, turning to coat. Cover with plastic wrap and let rise for about an hour, or until doubled. (Do not place in warm oven or sugar in dough will melt.).
- Spray a 9x5 loaf pan with cooking spray. On a lightly floured surface, press dough into a 20 x 8 inch rectangle, with the short side facing you. Using a spray bottle filled with water, lightly spray the dough evenly. Sprinkle 1/2 cup of the cinnamon sugar over the dough, leaving a 2 inch border along the top to seal. Lightly spray the cinnamon sugar with the water until damp but not wet(this is to seal the sugar to the bare dough on both sides). Roll up from the edge nearest you, and ending at the sugarless end. Pinch to seal. Place in the loaf pan seam side down. Let rise another 1 to 1 1/2 hours.
- Adjust oven rack to middle position, and heat oven to 350 degrees. Melt remaining butter and brush over top of dough. Sprinkle with remaining sugar, and bake until top is deep brown and internal temperature is 185 to 190 degrees, about 45 to 60 minutes. Turn bread out and cool on wire rack before slicing. - Prepare the dough: Combine raisins and orange juice in a small bowl. Cover and refrigerate overnight. Drain raisins and place on a paper towel-lined plate to absorb excess moisture. Alternatively, combine raisins and orange juice in a small bowl and microwave for 20 seconds; let stand at room temperature for 15 minutes.
- Place cup warm water in a small bowl. Sprinkle over yeast and 1 1/2 teaspoons sugar and whisk to combine. Let stand until creamy, about 5 minutes
- Whisk together 3 1/4 cups flour, salt, and remaining tablespoon sugar in the bowl of a standing mixer. Attach dough hook, and mix on low speed, adding yeast mixture, milk, and egg. Increase to medium speed and mix until dough comes together, scraping down sides of bowl as necessary. If dough does not come together, add more flour, 1 tablespoon at a time and up to 1/4 cup.
- Continue kneading for 10 minutes. Add butter and mix until incorporated and dough is smooth, 5 to 8 minutes. (Dough may come apart before coming back together.) Add reserved raisins and knead to combine.
- Meanwhile, butter a large bowl. Turn dough onto a lightly floured work surface and shape into a ball. Transfer dough to the prepared bowl, turning to coat. Cover lightly with plastic wrap sprayed with cooking spray and let stand in a warm place until doubled in bulk, 45 to 60 minutes.
- Place dough, topside down, on lightly floured work surface to deflate. Shape dough into a ball and return to the buttered bowl. Cover lightly with plastic wrap sprayed with cooking spray, and let stand in a warm place until doubled in bulk, 45 to 60 minutes.
- Butter two 4 1/2-inch-by 8 1/2-inch loaf pans. Prepare the filling: Combine brown sugar, butter, and cinnamon in a medium bowl and stir to form a smooth paste. Cover with plastic wrap and set aside.
- Place dough, top side down, on lightly floured work surface to deflate. Pat dough into a 7-inch square using your palms and fingertips. Working from the "X", twist dough together, pinching ends and tucking under dough to form a loaf. Transfer dough, cut side-up, to prepared pan. Repeat process with the remaining dough and filling. Alternatively, the loaves may be shaped by rolling to form a tight log before pinching ends, and tucking under.
- Cover each loaf with plastic wrap sprayed with cooking spray. Let stand in a warm place until dough has risen 1 to 2 inches above edge of pan and an indentation forms when gently pressed with a fingertip, 45 to 60 minutes.
- Preheat oven to 425 degrees (or 400 degrees for a convection oven) with rack set in the center.
- Remove plastic wrap and transfer pans to oven and bake for 15 minutes. Reduce oven temperature to 375 degrees (or 350 degrees for a convection oven) and continue to bake until deep golden-brown and they reach 190 degrees on an instant-read thermometer when inserted into the center of a loaf, about 20 minutes more. If browning too quickly, tent lightly with foil.
- Transfer to a wire rack to cool slightly; turn out loaf. Brush top with melted butter and let cool almost completely before slicing.

- Mix one batch of the White Pan Loaf dough according to instructions given in recipe.
- Place the just mixed dough in a clean bowl lightly dusted with flour. Cover the bowl with a towel and allow the dough to rise at room temperature (75 degrees to 77 degrees) for 2 to 2 1/2 hours, until it doubles in volume. (An indentation made by poking your finger deep into the dough should not spring back.)
- While the dough is rising, place the raisins in a bowl or a plastic container and fill with warm water to come just below the top of the raisins. (If you use too much water, you will rinse away the natural sweetness of the raisins.)
- Place the dough on a very lightly floured surface. Gently deflate the dough and pat it into a rectangle that is about 3/4 of an inch thick, and about 6 inches by 12 inches in size. The short sides should be the top and bottom edges.
- Mix the cinnamon and sugar together, and sprinkle it evenly over the dough.
- Drain the raisins and toss them with the remaining 2 tablespoons flour. Spread the raisins evenly over the dough and gently press them into it.
- Starting at a short side, roll the dough into a log. Roll the dough tightly, keeping the skin of the dough slightly taut, and tucking in any raisins that fall out, but don't stretch the dough so tight that the skin tears. Seal the seam of the log gently but tightly using the heel of your hand against the surface of the table, or pinch it shut with your fingers.
- Place the loaf in an oiled or buttered 9 by 5 inch loaf pan, and cover with oiled plastic wrap. Let the dough rise at room temperature for 1 1/2 to 2 1/2 hours, or until the loaf has risen almost 1 inch above the sides of the pans.
- Meanwhile, preheat the oven to 450 degrees.
- Place the loaf pan on the center oven rack. Using a plant sprayer, mist the loaf 8 to 10 times, then quickly shut the oven door. Spray the bread again after 2 minutes.
- Bake for 15 minutes, then reduce the oven temperature to 375 degrees and bake for 20 to 30 minutes longer, until the crust is deep brown and the loaf sounds hollow when tapped on the bottom. The crust may color quickly because of the cinnamon and raisins in the dough; watch carefully and cover the top of the loaf loosely with foil if it is browning too fast. Let cool in the pan for 5 minutes, then remove the bread from the pan and place the loaf on a rack to cool. Let cool completely before slicing, or the bread will fall apart. This bread keeps well for at least 2 days.

- Scald the milk in saucepan.
- Remove from flame and add sugar, salt, butter and mashed potatoes. Cool.
- Dissolve yeast in the warm water in a seperate bowl; then add this to milk mixture. Add raisins and flour.
- Let it rise in a nice warm place for approximately 1 1/2 hours.
- Divide dough into 2 loaves.
- Roll out on a lightly floured surface and spread half of the filling on each roll. Roll up as for jelly roll and pinch edges together .
- Place in 2 greased 9x5 loaf pan and set in a warm place to rise for about an hour.
- Bake in loaf pans at 350* for about 45-55 minutes sounds hollow when tapped.
- Remove from oven and brush top with small amount of melted butter or margarine.
- Let cool in pans 10-15 minutes and then invert onto cooling rack to cool completely.

- Combine milk, brown sugar, and yeast in a bowl or measuring cup. Let sit for 10 minutes, until foamy. This indicates that the yeast is alive and well. Pour the yeast liquid into the bowl of a stand mixer, and add oil and eggs. Whisk to combine the wet ingredients, then add flour and salt. Use the dough hook or a spatula to roughly combine the wet and dry ingredients into a shaggy dough. Add the raisins, then fit the bowl and dough hook to the stand mixer. Knead on medium low speed for 10 minutes. Remove the dough hook, cover the bowl with plastic wrap, and let the dough rise for 1 hour, until doubled in size.Flour your countertop as lightly as possible, then spread and stretch the dough into a rectangle that is the length of your loaf pan, about 9 inches by 18 inches. I prefer to use a 9x5 loaf pan.Make the cinnamon filling by stirring together brown sugar, cinnamon, and butter. Spread this mixture all over the top of the dough rectangle, then roll the dough up as tightly as you can, rolling the long way. Place the roll seam-side down into a greased loaf pan, then cover with plastic wrap to let rise for 30 minutes. Preheat oven to 375ºF, then bake bread for 40-50 minutes until the inside reads 190ºF to 200ºF with a thermometer. Let the bread cool completely on a wire rack before slicing. Enjoy!Notes:1. Cinnamon, plump juicy raisins, and slightly sweet and nutty emmer wheat make this pan bread so tasty. It's perfect for breakfast toast or sweet-and-savory sandwiches. The ingredient list and process are simple, and with a little oil and sugar in the dough, the bread stays soft for days. You can roll in different spices and fruits, or add them at the beginning of the process if you prefer (see recipe note).

- Starter/Levain Build
- Mix the starter, flour, and water in a jar. Mark the level with a rubber band and let ripen overnight. Use cold water and/or a higher feeding ratio in summertime so the levain doesn't finish all the food before morning.
- Final Dough Mixing and Bulk Fermentation
- Measure out the raisins and soak them in water while the dough rises.
- Mix the flours, water, levain, brown sugar, oil, salt, and 1 tsp of the cinnamon in a medium bowl. Cover and let rest 30 minutes.
- Do one round of stretching and folding, or another form of gluten development.
- Let the dough rise at room temperature until it has just about doubled in size. This can take anywhere from 4 to 10 hours depending on your starter strength and room/dough temperature. My dough needed 6.5 hours in a cool kitchen.
- Shaping and Final Proof
- Drain the raisins, lightly flour your work surface, and grease your loaf pan.
- Remove the dough from the bowl, and stretch and pat it out into a rectangle approx. 7" x 12". Sprinkle the remaining 3 tsp of cinnamon on the dough, and then add the drained raisins in a layer on top of the cinnamon.
- From a shorter edge, roll the dough into a tube and place it in your pan, seam-side down.
- Cover and proof the dough for 2-4 hours. You can also retard the dough overnight or longer, but make sure it has risen in the pan some at room temperature before refrigerating it. The dough is ready to bake when it has doubled or its highest part crests about a half-inch over the lip of a 9" x 5" x 2.75" pan.
- Baking
- Preheat your oven to 375°F for about 15 minutes with your oven rack in the second-from-the-bottom position.
- Brush the dough with water and load it into the oven.
- Bake for about 60 minutes or until the interior of the loaf is over 190F. Cover with foil if the top starts to brown too much.
- When the bread has finished baking, brush the top with oil or butter to keep it soft, and let it cool on a rack on one side to discourage settling of the crumb.
- You can store this bread in a plastic bag, beeswax wrap, or linen bag.

- Add the raisins to the bread and mix for another minute, until the raisins are incorporated into the dough evenly. Cover the bowl with plastic wrap or a towel. Set aside to rise until the dough has doubled in size.

- Transfer the dough to a lightly floured work surface and knead until it’s smooth and springy, about 5 minutes. Shape the dough into a ball and transfer to a lightly buttered bowl. Cover with plastic wrap and let stand in a warm place until doubled in bulk, about 1 hour.
- Uncover the dough and punch it down. Cover with the plastic and let stand at room temperature until it doubles again, about 1 hour longer.
