This tasty chowder is suitable for babies from 7 months, but can be served as a family meal

200g Sweet potato (you can use normal potatoes if you prefer), peeled and diced
110g Cod fillet/loin/steak, skinless and boneless
300ml Milk
2 Sprigs of thyme
110g Tinned sweetcorn, drained
A few leaves of parsley

Steps:

  • In a lidded pan, boil or steam the sweet potato for 10 minutes or until tender. Meanwhile, in another smaller pan gently poach the cod in the milk and thyme for around 8 minutes until the fish breaks into flakes.
  • Add the cod mixture, sweetcorn and parsley to the boiled sweet potato and bring back to the boil.
  • Mash or blend into a blender or food processor.
  • Add 1 or 2 tablespoons of water to chowder if needed.

3 slices center-cut bacon, halved crosswise
8 scallions, thinly sliced, whites and greens separated
1 1/2 teaspoons finely chopped garlic
2 tablespoons all-purpose flour
2 medium Yukon gold potatoes, peeled and cut in 1/2-inch dice
2 cups 2 percent milk
2 cups reduced-sodium chicken broth
2 teaspoons finely chopped fresh thyme
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3/4 pound cod, skin removed, chopped
2 1/2 cups cups fresh or frozen corn kernels
1/4 cup fat-free half-and-half

Steps:

  • In a large saucepan, cook bacon over medium heat until crisp, 6 minutes. Transfer to a paper towel-lined plate; crumble. In same pan, sauté scallion whites for 2 minutes. Add garlic; sauté 1 minute. Add flour; cook, stirring frequently, 2 minutes. Stir in potatoes, milk, broth, thyme, salt and pepper; bring to a boil. Reduce heat to medium-low; simmer 10 minutes. Stir in fish, corn and 2/3 bacon; simmer 5 minutes. Stir in half-and-half and 3/4 scallion greens; simmer 2 minutes. Ladle into bowls and garnish with remaining scallion greens and bacon.

2tbsp sunflower oil
1 onion, finely chopped
½ to 1 green chilli, trimmed, deseeded and finely chopped
400g potato, peeled and finely diced
250g frozen sweetcorn
600ml full fat milk
300ml fish stock
Salt

Steps:

  • Heat the oil in a large heavy base pan and fry the onion with the chilli (use as much or as little chilli as you like) until softened (about 5 mins).
  • Add the potato and sweetcorn and mix well, then add the milk and fish stock, stir gently and bring to the boil, then reduce to a simmer for 10 mins, or until the vegetables are tender, stirring occasionally. Season to taste with salt.
  • Meanwhile, in a non-stick frying pan, heat the oil, add the cubes of fish and fry, turning carefully until the fish is cooked.
  • Stir the cooked fish into the potato and sweetcorn mixture, mix gently, and simmer for another minute or so, then spoon into warm bowls and garnish with parsley.

4 cups chicken stock, low-sodium
1 teaspoon kosher salt
1 teaspoon freshly cracked black pepper
1/4 cup roughly chopped garlic cloves
1 Anaheim pepper, roughly chopped
1 cup roughly chopped cilantro stems
2 shallots, peeled and roughly chopped
3 stalks celery, roughly chopped
2 cups red potatoes, peeled and diced (1/2-inch)
4 tablespoons butter, plus 1 tablespoon
1 sweet onion, diced
1 Anaheim pepper, small dice
1/4 cup diced poblano peppers
1 tablespoon minced garlic
3/4 cup diced bacon
1/2 teaspoon salt
1/2 teaspoon freshly cracked black pepper
1/2 cup heavy cream
1/2 cup freshly minced cilantro leaves

2 teaspoons chipotle paste

1/4 cup fresh cilantro leaves, minced
1 stick butter, room temperature
1 tablespoon granulated garlic
1/4 teaspoon dry mustard
1/4 teaspoon cayenne pepper
1/4 teaspoon fine grain sea salt
1/8 teaspoon ancho chili powder
1/8 teaspoon hot paprika
1/8 teaspoon white pepper
1 sleeve saltine crackers, unsalted (about 30)

Steps:

  • Preheat the grill to medium-high heat. Put the corn on the grill and cook for 5 to 6 minutes, turning as needed to evenly brown. Remove the corn from the grill and when cool enough to handle, then put corn, stem down in a large bowl and with a sharp knife, remove the kernels, set aside.
  • Put the corn cobs into a large stock pot, add the water, chicken stock, salt, pepper, garlic, peppers, cilantro stems, shallots and celery. Put the pot over high heat and bring it to a strong boil. Cook for 45 minutes, then strain the solids. Cool.
  • In a medium saucepan, cover the diced potatoes with 3 cups of the cooled stock and bring to a boil over medium heat. Cook until fork tender, about 15 minutes. then remove from heat and set aside.
  • In a large stock pot over medium-high heat, add the 4 tablespoons of butter, and once melted, add the diced onions, half of the corn kernels and the peppers. Saute until a golden fond starts to form on bottom of pan, about 6 to 8 minutes. Add the garlic and cook for 1 minute more, stirring frequently. Stir in 3 cups of the stock and simmer for 30 minutes. Cool the mixture for about 5 minutes, then carefully add it to a blender and puree.
  • Wipe the stock pot clean, put it over medium-high heat and add the bacon. Cook until crisp, then drain on a paper towel lined plate. Add the remaining 1 tablespoon of butter to the bacon fat, along with the remaining corn. Season with the salt and pepper and saute for 4 to 5 minutes. Add the stock and potatoes and combine well. Stir in the heavy cream, add the corn puree mixture. Heat through and adjust seasoning, if necessary.
  • Serve garnished with the cilantro and a dollop of the Chipotle Cream and Spicy Saltines.
  • In a small glass bowl, add the cream and beat with an electric mixer until stiff, about 3 to 4 minutes. Add the chipotle, salt and pepper, to taste, zest and lime juice beat until incorporated. Add the cilantro and season with salt, if necessary. Refrigerate covered until ready to use.
  • Preheat the oven to 300 degrees F. Fit a baking sheet with a rack.
  • Combine all of the spices in a small bowl and mix well. In a separate small bowl, beat the butter with an electric mixer until fluffy. Add the spices and beat until incorporated.
  • Spread about 1/2 teaspoon of the mixture gently onto each cracker and set them on the rack in the baking sheet. Once all are done, bake for 5 minutes. Remove and cool. Store in an air tight container.

1 cup chopped onion
4 bacon strips, chopped
3 cans (12 ounces each) evaporated milk
1 can (15-1/4 ounces) whole kernel corn, undrained
1 can (6-1/2 ounces) chopped clams, undrained
3 medium potatoes, peeled and cubed
3 tablespoons butter
1 teaspoon salt
3/4 teaspoon pepper
1 pound fish fillets (haddock, cod or flounder), cooked and broken into pieces
Crumbled cooked bacon, optional
Minced chives, optional

Steps:

  • In a large saucepan, cook onion and bacon over medium heat until bacon is crisp; drain. Add milk, corn, clams, potatoes, butter, salt and pepper. Cover and cook over medium heat, stirring occasionally, until potatoes are tender, about 20 minutes., Stir in fish and heat through. Ladle into bowls. If desired, top with bacon and chives.

knob of butter
2 rashers of streaky bacon , copped
1 onion , finely chopped
500ml milk
350g potato (about 2 medium) cut into small cubes
300g frozen smoked haddock fillets (about 2)
140g frozen sweetcorn
chopped parsley , to serve

Steps:

  • Heat the butter in a large saucepan. Tip in the bacon, then cook until starting to brown. Add the onion, cook until soft, then pour over the milk and stir through the potatoes. Bring to the boil, then simmer for 5 mins.
  • Add the haddock, then leave to gently cook for another 10 mins. By now the fish should have defrosted so you can break it into large chunks. Stir through the sweetcorn, then cook for another few mins until the fish is cooked through and the sweetcorn has defrosted. Scatter over parsley, if using. Serve with plenty of crusty bread.

1½ lb. skinless, boneless cod or halibut fillets
2½ tsp. kosher salt, divided, plus more
5 Tbsp. ghee or unsalted butter, divided
2 medium leeks, white and pale green parts only, halved lengthwise, thinly sliced crosswise
6 garlic cloves, thinly sliced
1 (3") piece ginger, peeled, cut into matchsticks
¾ tsp. ground turmeric
¾ tsp. ground coriander
½ tsp. ground cardamom
1 serrano chile, thinly sliced
12 oz. baby Yukon Gold or red potatoes, halved
2 (13.5-oz.) cans unsweetened coconut milk
2 celery stalks, thinly sliced, plus leaves for serving (optional)
1½ cups oyster crackers
1 tsp. paprika
2 limes, divided

Steps:

  • Season cod all over with 1½ tsp. salt; set aside. Heat 3 Tbsp. ghee in a medium Dutch oven over medium. Cook leeks, garlic, and ginger, stirring occasionally, until softened but not browned, about 3 minutes. Add turmeric, coriander, and cardamom and cook, stirring, until fragrant, about 30 seconds. Add chile, potatoes, coconut milk, 1 tsp. salt, and ¾ cup water; bring to a boil (still over medium). Immediately reduce heat so soup is at a bare simmer. Cover, leaving lid slightly askew, and cook until potatoes are barely fork-tender, 10-12 minutes.
  • Carefully nestle reserved fish into pot, spoon some broth over, and cover, leaving lid slightly askew. Cook at a bare simmer 4 minutes, then stir in celery. Cook until fish is opaque and flakes easily, about 5 minutes. Taste chowder and season with more salt if needed.
  • Meanwhile, heat remaining 2 Tbsp. ghee in a small skillet over medium-low. Add crackers and stir well to coat. Cook, stirring often, until golden brown, about 5 minutes. Remove from heat and add paprika; toss to evenly coat.
  • Slice 1 lime in half and squeeze juice into chowder. Taste and season with more salt if needed. Ladle into bowls, breaking fish into large pieces. Scatter celery leaves over chowder if using and top with crackers. Slice remaining lime into wedges and serve alongside.

3 celery sticks , chopped
200g baby new potatoes , halved
500ml chicken stock
400ml semi-skimmed milk
300g frozen sweetcorn (or drained weight from a can)
400g undyed smoked haddock fillets, skinless and boneless
small pack flat-leaf parsley , leaves only, chopped

Steps:

  • Heat the butter in a large saucepan until melted. Add the onion, celery and potatoes, and cook gently for 10 mins until the onion is really soft.
  • Pour in the chicken stock followed by the milk and stir well. Bring to a simmer and cook for another 15 mins, stirring occasionally. Season to taste. Add the sweetcorn, then place the haddock fillets on top. Let the mixture simmer very gently for 5 mins or until the haddock just starts to break up.
  • To serve, carefully stir in half of the parsley, ladle the chowder into individual bowls and scatter with the remaining parsley at the table.

1 tablespoon butter or 1 tablespoon margarine
1/2 cup chopped onion
1/2 cup diced celery
1 carrot, peeled and diced
4 small mushrooms, sliced
1 cup finely diced potato (, peel or not, up to you)
1/4 cup water
2 cups milk (preferably not skim)
1 cup corn kernel (frozen or canned)
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 lb cod, cut into large chunks (fresh, or if frozen, thawed)

Steps:

  • In a large saucepan, over medium-low heat, melt butter and saute onion, celery, carrots and mushroom slices until veggies are tender; stir occasionally, will take from 5 to 10 minutes.
  • Add potato and water; cover and cook for 5 minutes or until potatoes are just tender.
  • Add milk and corn to the pot, along with salt and pepper; bring to a boil.
  • Reduce heat to a simmer and add fish; cover and cook for about 5 minutes or until fish easily flakes with a fork; do NOT let it return to a boil.

1 lb salt cod fish
1/4 cup fat salt pork, finely diced
1 medium onion, thinly sliced
3 cups raw potatoes, diced
1 cup raw carrot, diced
3 cups boiling water, or chicken broth
1 teaspoon salt, to taste
1/2 teaspoon freshly ground pepper
1 cup canned corn niblet, or hominy ((I prefer hominy))
3 cups whole milk, heated

Steps:

  • Freshen salt cod by soaking it overnight in cold water to cover.
  • Drain, place in a stewing pot, and cover with fresh water.
  • Bring to simmer with low heat.
  • Check to see if the fish is still too salty - if so, drain, add fresh cold water, and bring to simmer again, and drain.
  • Fry salt pork in stewing pot until crisp; remove fried pork scraps and reserve for garnish.
  • Cook onion in pork fat until tender.
  • Add potatoes, carrots, water, salt, and pepper and cook covered for about ten minutes, or until vegetables are tender.
  • Add corn or hominy, heated milk, and freshened salt cod.
  • Bring chowder to a simmering temperature, but do not boil.
  • Garnish with the pork scraps.
  • Serve hot, with freshly baked home made bread or rolls and butter.
