2 bacon strips, cut into 1-inch pieces
2 tablespoons strong brewed coffee
4 teaspoons brown sugar
1 teaspoon cider vinegar
1/4 teaspoon ground mustard
1/8 teaspoon salt
1 can (8.3 ounces) baked beans, undrained
1/2 cup chopped onion

Steps:

  • In a small skillet, cook bacon over medium heat until partially cooked but not crisp. Drain on paper towels. Meanwhile, in a small saucepan, combine the coffee, brown sugar, vinegar, mustard and salt. Bring to a boil; cook and stir for 2-3 minutes or until sugar is dissolved. Stir in beans and onion. , Divide the bean mixture between two 6-oz. ramekins or custard cups coated with cooking spray. Top with bacon. Bake at 350° for 25-30 minutes or until bubbly.

1 lb dry navy beans (or pinto beans)
6 cups water
2 tablespoons salt
1 tablespoon vegetable oil
1/2 lb uncooked bacon (diced)
2 cloves garlic (minced)
1 medium onion (diced)
1/4 cup tomato paste
1/4 cup dark molasses
1/4 cup coconut sugar (or brown sugar)
2 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
2 teaspoons chili powder
Salt and pepper to taste

Steps:

  • Place dry beans in a large pot. Pour water over top and stir in salt. Cover the pot and allow the beans to soak overnight.
  • The next day, drain beans reserving 4 cups water. Rinse beans and set aside.
  • Meanwhile, heat oil in a large saucepan over medium-high heat until shimmery. Add diced bacon, garlic, and onion to pan and stir frequently until bacon begins to crisp, about 8-10 minutes.
  • Reduce heat to medium and whisk tomato paste, molasses, sugar, vinegar, sauce, and chili powder into mixture. Bring to a simmer, stirring constantly and then stir in rinsed beans and 4 cups reserved water.
  • Cover beans and bring to a low boil over medium-high heat. Remove from heat and transfer to a 4-qt slow-cooker. Cook beans on high 4-5 hours until beans are soft and sauce begins to thicken. Keep beans in slow-cooker on "warm" until ready to serve. (beans will thicken up even more the longer they sit)

1 small onion, chopped

1 cup packed dark brown sugar
⅓ cup molasses
2 tablespoons Dijon mustard

4 slices thick bacon (chopped)
1 large onion (chopped)
4 garlic cloves (minced)
2 - 15 oz can unsalted cannellini beans (drained)
2 - 15 oz can unsalted pinto beans (drained)
2 cups peaches (chopped (See Note 1))
1/2 cup ketchup
1/2 cup chicken stock
1/4 cup pure maple syrup
2 tbsp balsamic vinegar
1 tbsp Dijon mustard
3 tsp chopped canned chipotle chiles in adobo sauce
1 tbsp chili seasoning
1 tsp paprika
1/4 tsp salt
1/4 tsp freshly ground black pepper

Steps:

  • Over medium high heat in a large skillet or in Instant Pot/Slow cooker cook and render bacon until crispy. Remove bacon and set aside on a paper towel, leaving bacon fat in pan.
  • Add onion and cook for 5 minutes, stirring. Add garlic and cook another 3 minutes.
  • Add the remaining ingredients and mix to incorporate thoroughly. Close lid on Instant Pot and push Beans setting. If using a slow cooker cook on low for 4 hours.
  • Serve with more diced peaches, crumbled bacon and sour cream if desired (See Note 2).

  • Add dry beans to a large container and fill with cold water. Soak overnight. The following day, add beans and their soaking water to a large pot and bring up to a simmer. Cook until tender, between 1 and 2 hours. Drain the beans while reserving the liquid.
  • Preheat your oven to 325 degrees F.
  • Pour your beans into a large casserole dish and spread evenly, layer bacon and onion on top.
  • In a small saucepan add the molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce, and brown sugar. Slowly bring the sauce up to a boil, simmer for a minute or two. Pull sauce off the heat and pour over the beans. Pour in reserved cooking water from the beans until beans are just covered. Tightly cover the casserole dish with aluminum foil.
  • Bake in preheated oven for 3 to 4 hours. Remove the aluminum foil halfway through cooking time and add in a small amount of extra liquid if the beans start to get dry. Remove from the oven once beans are tender, cool, and serve.

1 pound jalapeno peppers

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the bacon in a large ovenproof saucepan or Dutch oven until the fat is rendered and the bacon is crisp, about 7 minutes, then set aside to drain on a paper towel. Add the onion to the pan and cook until softened, 8 to 10 minutes.
  • Add the beans, molasses, tomato sauce, brown sugar, mustard, garlic powder, 1/4 cup water and salt and pepper to taste and stir to combine well. Let the mixture simmer for a minute or so. Transfer the pan to the oven and bake, uncovered, until the beans are very tender and dark and the sauce is thick, 1 1 /2 to 2 hours.
  • Transfer to a serving dish and top with Candied Jalapenos and bits of bacon.

  • Thinly slice the jalapenos and place in a single layer on the prepared baking sheets.
  • Combine the brown sugar, granulated garlic, mustard, cayenne pepper and salt in a small bowl. Brush the slices of jalapeno with the olive oil. Sprinkle the sugar and spice mixture over the top. Bake until the jalapenos are crispy, 20 to 25 minutes. Set aside to cool.
