1/4 teaspoon salt

Steps:

  • Combine the brown sugar, mustard, soy sauce, paprika, ginger and oil in a small saucepan. Bring to a boil. Cook and stir until brown sugar is dissolved., Place salmon skin side down on a greased broiler pan. Sprinkle with pepper and salt., Broil 6 in. from the heat for 10-15 minutes or until fish flakes easily with a fork, brushing glaze over salmon during the last 1-2 minutes of cooking.

The decadent-tasting "good" fat in salmon complements the sweet-spicy Buffalo glaze. The skin gets caramelized and crisp on the grill as the sauce drips onto it. It's delicious, but can be discarded to save fat and calories. (The numbers below include the skin.) A crisp and refreshing celery slaw is dressed with the same sauce, made creamy with light mayo, and brightened with onions and chives.

2 Tbsp hot sauce, such as Frank's
1 Tbsp packed dark brown sugar
1 tsp smoked paprika
¼ tsp cayenne pepper
2 Tbsp light mayonnaise
1 Tbsp snipped chives
8 stalks celery, very thinly sliced in half moons on an angle
½ small red onion, very thinly sliced
4 (5-oz) center-cut ski-non salmon fillets, about 1 inch thick
Kosher salt and freshly ground black pepper
Vegetable oil, for oiling the grill

Steps:

  • Preheat an outdoor grill or grill pan on medium high.
  • Mix together the hot sauce, brown sugar, paprika and cayenne in a small bowl. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce. Add the chives, celery and onions to the bowl with the mayonnaise and toss well.
  • Sprinkle the salmon with salt and pepper. Brush the grill grate lightly with oil. Lay the salmon on the grill, skin-side up, and cook until distinct grill marks appear and the salmon releases easily from the grate, 2 to 3 minutes. Turn and brush the fish with some of the reserved sauce. Continue to cook the fish, brushing the pieces periodically with the sauce, until the salmon fillets are glazed and just cooked through, 13 to 15 minutes more.
  • Transfer the fillets to individual plates and serve with the celery slaw.

I looked for a recipe for glazed salmon and didn't find one that used the ingredients I had on hand. So I threw together what I had and came up with this tangy, spicy sweet marinade that adds flavor, but doesn't mask the flavor of the salmon. My kids and sister loved it. They said it was better than 'restaurant salmon' It's great served with wild rice and stir fried veggies.

1 ½ pounds fresh salmon fillet with skin removed
¼ cup red wine vinegar
¼ cup olive oil
¼ cup soy sauce
¼ cup water
1 tablespoon lemon juice
½ teaspoon red pepper flakes, or to taste
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoons chopped fresh cilantro
⅓ cup brown sugar, packed
salt and ground black pepper to taste

Steps:

  • Place salmon in a shallow, flat dish, and set aside. Combine the vinegar, olive oil, soy sauce, water, lemon juice, red pepper flakes, onion powder, garlic powder, cilantro, and brown sugar in a blender. Blend until brown sugar dissolves. Pour the marinade over the salmon to cover evenly. Cover the dish, and refrigerate at least 2 hours.
  • Line a broiling pan with foil. Remove salmon from marinade, and place on prepared broiling pan; season to taste with salt and pepper. Transfer remaining marinade to a saucepan.
  • Turn on broiler to low.
  • Broil salmon about 6 inches from the heat for 5 minutes; brush with remaining marinade. Broil an additional 5 to 10 minutes, brushing 2 or 3 more times with additional marinade. Salmon is done when fish is no longer bright red and can be flaked with a fork.
  • Meanwhile, cook the remaining marinade over low heat until it thickens and reduces by one-third, 5 to 10 minutes. Use cooked marinade as a dipping sauce or drizzle over salmon just before serving.

1 tablespoon chili powder
1 teaspoon ground cumin
1/8 teaspoon salt

6 (6-ounce) salmon fillets, skin and any pin bones removed
1 tablespoon olive oil

Steps:

  • Coat your grill or a grill pan with cooking spray and preheat over medium heat. While the grill is heating, combine the brown sugar, chili powder, cumin, salt, and pepper. Brush each salmon fillet with 1/2 teaspoon of the oil, then rub each fillet with about 1/2 tablespoon of the spice mixture.

3 canned chipotle chiles in adobo
1 clove garlic, crushed
1/2 cup tamarind concentrate
1/2 cup packed dark brown sugar
Kosher salt, plus more as needed
2 tablespoons sherry vinegar
1 tablespoon extra-virgin olive oil, plus more for grilling
4 six-ounce center-cut boneless salmon filets

Steps:

  • 1. Chop chipotles and garlic in a food processor. Add tamarind, brown sugar, and salt and puree. Add vinegar, 2 tablespoons water, and oil, and puree until smooth. Pour about 1/4 cup of glaze into a small bowl. Reserve remaining glaze for serving.
  • 2. Preheat a grill to medium.
  • 3. Brush salmon filets with oil and season with 1 tablespoon salt, to taste. Place fillets, top-side (rounded side) down, on grill. Cook until distinct grill marks appear, about 4 minutes. Turn fish over, lightly brush with glaze, and cook, brushing occasionally with more glaze, until firm but slightly pink, about 6 to 8 minutes. Transfer to a cutting board and brush with more glaze. 4 dried Szechuan chiles (about 1 inch long), seeded
1/4 cup water
1 teaspoon sesame oil
4 cloves garlic, finely chopped
1 pint blueberries
4 teaspoons apple cider vinegar
1 teaspoon sugar
1/4 teaspoon salt
4 grilled 6-ounces wild salmon fillets

Steps:

  • Place chiles and water in a skillet and simmer until soft, about 2 minutes. Add sesame oil and garlic; cook until fragrant, 1 to 2 minutes. Stir in blueberries, apple cider vinegar, sugar and salt. Bring to a boil and cook, mashing berries with a wooden spoon until a thick sauce forms, 5 minutes. Remove from heat. Divide sauce over salmon fillets.

I set off the fire alarm at for the first time in our new place when I got to the broiling part of this recipe. We learned that the fire alarm is wired in to the hall ceiling- no battery. This means husband has to fan at the thing while attempting to tolerate the noise. The sauce ran all over the pan and burned. This is why I HIGHLY recommend bringing up the foil around the fish to make a pool, have not tried it yet but you would not have quite the thin layer all over the pan to burn quickly.

3 tablespoons brown sugar
2 tablespoons low sodium soy sauce
2 teaspoons wasabi (us less if you prefer less spicy)
3 -4 teaspoons mustard (I used brown mustard)
2 teaspoons rice vinegar
1 -1 1/2 lb salmon fillet (multiple fillets or a side fillet)
cooking spray
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Combine the brown sugar, soy sauce, wasabi, mustard and rice vinegar in a small sauce pan, bring to a boil then set aside.
  • Line a baking sheet with foil, spray with cooking spray, place salmon on foil.
  • Carefully scrunch the foil up around the salmon to create a wall all the way around. (This is important in the broiling part).
  • Bake at 425 for 13-14 minutes.
  • Take salmon out of oven, move oven rack to broil position (In my experience thats the top position in the oven) and turn oven temperature to Broil.
  • Pour sugar and soy sauce mixture over fish, hopefully it all stays in the walls you created.
  • Broil for 3 minutes or until flaky. Hopefully you do not set off the fire alarm.

1 large mango
8 -12 ounces salmon (two 4-6oz filets)
1 tablespoon soy sauce
1 teaspoon fresh minced ginger
1 teaspoon fresh minced garlic
1 tablespoon lemon juice
1 1/2 tablespoons brown sugar
1 teaspoon cinnamon
1 tablespoon sugar
1/2 tablespoon crushed red pepper flakes

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Cut mango in to halves (watch for the pit) and peel off the skin. Julienne the mango in to long strips.
  • 3. As sizes and amounts will vary, take aprox. 1/4 of the mango strips and place them in to a food processor or blender and puree them until a thick liquid is formed. Set the remaining 3/4 of the mango strips aside.
  • 4. Mix together the mango puree, soy sauce, ginger, garlic, lemon juice, and brown sugar in a small bowl to form the sauce for the salmon.
  • 5. Place the salmon filets in a shallow baking pan lined with foil. Heavily baste the salmon filets with the sauce, and pour remaining sauce around filets.
  • 6. Mix together remaining mango strips, cinnamon, and sugar. Make sure that all mango strips are evenly coated.
  • 7. Place mango strips around the salmon filets.
  • 8. Sprinkle the filets and mango strips wit hthe crushed red pepper.
  • 9. Fold up the sides of foil so that all ingrediants remain touching throughout the baking process.
  • 10. Bake for 12-15 minutes, or until salmon flakes with a fork.
  • *larger filets may need longer cooking time.
