SAVORY BUTTERMILK MEATLOAF

Savory Buttermilk Meatloaf image

This meatloaf recipe is very flavorful, and as the proverbial description goes, 'melts in your mouth.' As far as vegetables, I only used onions, but their sweetness, along with the simple brown sugar glaze, were a great counterpoint to the others flavors.

Categories     Main Dish Recipes     Meatloaf Recipes

Time 2h

Yield 6

Number Of Ingredients 16

2 tablespoons butter
1 yellow onion, diced
2 ½ pounds ground chuck
1 cup dry bread crumbs
¾ cup buttermilk
½ cup ketchup
2 eggs, beaten
1 tablespoon Worcestershire sauce
2 ½ teaspoons salt
1 teaspoon ground black pepper
1 teaspoon hot sauce
½ teaspoon dried tarragon
½ teaspoon Italian seasoning
¼ cup brown sugar
1 tablespoon Dijon mustard
1 teaspoon cider vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone baking mat.
  • Melt butter in a skillet over medium-high heat. Saute onion in hot butter until soft and translucent, 6 to 7 minutes. Cool to room temperature.
  • Combine cooled onion, beef chuck, bread crumbs, buttermilk, ketchup, eggs, Worcestershire sauce, salt, black pepper, hot sauce, tarragon, and Italian seasoning in a bowl; mix together with a fork and let sit until breadcrumbs absorb moisture, about 10 minutes.
  • Turn meatloaf mixture out into the center of the prepared baking sheet and form into a 9x5-inch loaf.
  • Bake in the preheated oven for 45 minutes. While meatloaf is baking, whisk brown sugar, mustard, and cider vinegar together in a small bowl. Spread brown sugar glaze over the top of the meatloaf and continue baking until no longer pink in the center, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

SWEET AND SPICY MEATLOAF

Categories     main-dish

Time 2h30m

Yield 6 servings

Number Of Ingredients 20

2 tablespoons olive oil
2 green bell peppers, diced small
2 red bell peppers, diced small
1 large yellow onion, diced small
3/4 cup panko breadcrumbs
1/2 cup whole milk
2 heads garlic, roasted and mashed into a paste
2 heads garlic, roasted and mashed into a paste
1 cup ketchup
1/4 cup steak sauce
1/4 cup sriracha
1/4 cup maple syrup
1 tablespoon Montreal steak seasoning
2 pounds 80/20 ground beef
1 pound sweet Italian sausage, casings removed
3 eggs, beaten
1 bunch fresh Italian parsley, chopped
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Mashed potatoes, for serving

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Saute the green peppers, red peppers and onions until very soft and browned, 10 to 12 minutes. Transfer to a plate or baking sheet and refrigerate until cold. (This can be done a day ahead.)
  • Preheat the oven to 350 degrees F.
  • Mix the breadcrumbs, milk and roasted garlic in a bowl; it should have an oatmeal-like consistency. Set aside.
  • In another bowl, mix the ketchup, steak sauce, sriracha, maple syrup and steak seasoning. If the sauce is too spicy for you, add a little more ketchup to mellow the heat. Set aside.
  • In a bowl, combine the ground beef, sausage, parsley, eggs, pepper-onion mixture and two-thirds of the meatloaf sauce. Mix well, but don't overwork. Take a small ball of the mixture and make a bite-size patty. Saute the patty in a pan until cooked through, then taste. Add salt and pepper to the meatloaf mix as needed.
  • When you are happy with the flavor, place the meatloaf mixture in a greased loaf pan, or form it into a log and place it on a parchment-lined baking sheet. Bake until the internal temperature reaches 155 degrees F, 1 to 1 1/2 hours. Remove from the oven; adjust the oven to a low broil. Brush the top of the loaf with half of the remaining sauce, then return to the oven to caramelize the sauce, 2 to 3 minutes. Let rest for 20 minutes before slicing. Serve with mashed potatoes and a drizzle of the remaining sauce.

MEATLOAF WITH CHILI SAUCE

Meatloaf With Chili Sauce image

Covering the cooked meatloaf with chili sauce then returning it to the oven for a few minutes gives a slightly sweet, mildly spicy glaze on top.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes     Ground Beef Recipes

Time 1h15m

Number Of Ingredients 11

1/2 cup milk
4 slices white sandwich bread, torn into pieces

Time 1h30m

Number Of Ingredients 15

1/2 cup Panko Breadcrumbs ((may substitute Italian breadcrumbs))
1/2 cup Milk, any type
1 small White Onion, quartered
6 ounces Carrots, chopped into large pieces
2 cloves Garlic
1 Tablespoon Butter
1 1/2 pounds Ground Beef ((80% lean))
1 Egg, whisked
1 Tablespoon Fresh Parsley, curly or flat-leaf, chopped ((optional))
2 teaspoon Worcestershire Sauce ((may substitute soy sauce or Tamari))

1/2 cup Ketchup
2 Tablespoon Dark Brown Sugar
1 teaspoon Mustard ((I like to use stone ground Dijon Mustard))

  • Combine breadcrumbs and milk in a large bowl and set aside to soak.

  • Melt butter in a large saute pan over medium heat.
  • Add onions, carrots, and garlic with a pinch of salt.
  • Saute until vegetables are soft, about 5 minutes.
  • Set aside to cool for 5 minutes.
  • To breadcrumbs and milk, add beef, egg, parsley, Worcestershire sauce, salt, and black pepper.

  • Gently shape the meat mixture into a loaf shape and transfer to loaf pan or sheet pan.
  • Transfer meatloaf to oven and bake for 55 to 60 minutes (use an instant read thermometer if you have it - the center will register 155°F when the meatloaf is done).
  • While meatloaf cooks, whisk together ketchup, brown sugar, and mustard.
  • Remove meatloaf when it has about 20 minutes left to cook and spread glaze over top.
  • Rest meatloaf for 10 minutes then slice and serve.

SWEET & SPICY GLAZED BUTTERMILK MEATLOAF

Sweet & Spicy Glazed Buttermilk Meatloaf image

Panko bread crumbs really make the difference here. When the Panko is soaked with the buttermilk, it forms a squishy texture that is different from regular bread crumbs. The meatloaf will have a light consistency while, at the same time, a rich flavor from the buttermilk. Panko is Japanese breadcrumbs and available in most grocery stores. Note: Leftovers make great meatloaf sandwiches.

  • Pre heat your oven to 325 degrees. Making meat loaf is pretty simple, everything goes in the bowl and you mix it up. Some people like the veggies diced really small and will use the food processor, I just give a good chop with the knife. Don’t over work the meat when you are mixing. If it feels to dry a splash of olive oil can help it come together.
  • The sauce is simple too. I mix the honey and ketchup together first and pop into the microwave for 20 seconds to make it easier to stir. Then mix in the rest of the ingredients taste the sauce and adjust to your liking. I use a lot of Cholula hot sauce in my glaze but I like it hot so do whatever tastes good to you. Don’t forget to apply the glaze after the loaf has baked for about 20 minutes.
