GINGER TURKEY LETTUCE WRAPS
Pile stir-fried turkey mince, carrots and crunchy water chestnuts into lettuce leaf cups for an Asian inspired sharing starter or light lunch

- In a large wok or frying pan, heat the oil and fry the turkey mince until browned and cooked through. Transfer to a bowl and set aside.
- Tip the carrots, water chestnuts and beans into the pan and stir-fry for 2 mins. Add the ginger and garlic, drizzle over the soy and stir-fry for 1-2 mins more. Add the mince and stir-fry until hot. Season to taste.
- To serve, pile the turkey and veg into lettuce leaf 'cups' and drizzle over the plum or chilli sauce.

- MAKE THE FILLING: Heat the oil in a large skillet over medium-high heat. Add the garlic, ginger, scallion whites, and seafood seasoning. Cook until the vegetables start to brown, about 5 minutes. Add the turkey and cook, breaking up with a wooden spoon, until golden, about 5 minutes. Stir in the fish sauce and scallion greens and cook until the liquid is almost completely absorbed, about 5 minutes. Stir in the pineapple, cilantro, and lime juice. Remove from the heat.
- SERVE: Spoon the filling over the hot cooked rice and serve with lime wedges and lettuce leaves to make lettuce wraps.

TURKEY LETTUCE WRAPS ( PF CHANG )
A copycat recipe from Damn Delicious with very few changes . So easy to fix at home, I was amazed ! This smells so great cooking that is it a good thing it is ready in less than 10 minutes. Instead of Butter Lettuce leaves, I use Large Romaine leaves that you can easily load and enjoy ! I serve with brown rice , which helps you make sure you get every little bit of this awesome filling.

- Heat olive oil in a saucepan over medium high heat. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the turkey as it cooks; drain excess fat.
- Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha until onions have become translucent, about 1-2 minutes. Stir in diced chestnuts and green onions until tender, about 1-2 minutes; season with salt and pepper, to taste.
- To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style.

- For the filling: Brown the turkey in the oil in a large saute pan over medium-high heat until no longer pink. Add the mushrooms, scallions, garlic and water chestnuts, and cook until the mushrooms soften. In a small bowl, mix the soy sauce, brown sugar and vinegar, pour over the turkey mixture and cook 1 minute. Remove from the heat.
- For the drizzling sauce: In a small bowl, whisk together the soy sauce, vinegar, honey, mustard, Sriracha, sesame oil and 1/4 cup water.
- Serve the turkey mixture with the lettuce leaves, drizzling sauce and vegetables for lettuce wrap assembly.

My boyfriend found this recipe on the Food Network website and we tweeked it to our taste. It is low fat, low calorie, low carb and delish!!! It can be made with ground turkey, ground chicken or ground beef. We liked it so much that we've had it a couple nights in a row before. There are never any leftovers!

- Filling:.
- Brown the turkey in the oil in a large saute pan over medium heat until the turkey is no longer pink. Drain oil off the meat. Return the meat to the pan and add the mushrooms, green onions, garlic, water chestnuts, and bean sprouts, and cook until the mushrooms soften, or 3 to 4 minutes.
- In a small bowl, mix the soy sauce, brown sugar and vinegar, stirring until the brown sugar is dissolved. Pour into the turkey mixture and cook an additional 1 minute.
- Drizzling Sauce:.
- In a small bowl, thoroughly mix the ingredients. This is a very runny sauce. You can either leave it runny or add cornstarch and heat to thicken. Either way, thick or runny, you can add it to the turkey mixture at the end of cooking, or serve with the wraps to be added by individuals being served.
- Serve:.
- Place the turkey meat, sauce and vegetables in the center of the lettuce leaf, roll up and eat.

Steps:
- Mix sauce ingredients together and set aside.
- Cook meat until done. Add garlic and ginger and saute for about a minute.
- Add mushrooms, bell pepper, water chestnuts and scallions and continue to stir fry another minute or two.
- Add sauce to meat and vegetables and toss to coat.
- Serve meat on a platter, along with lettuce leaves, and optional herbs and lime wedges for squeezing. Enjoy!
GROUND TURKEY LETTUCE WRAPS
This easy one pot meal is hard to mess up. I use Iceberg lettuce but you can use your favorite. If you don't care for sesame oil, you can substitute with Kikkoman Mirin Style Sweet Cooking Seasoning. It has a different flavor but it works out well. Also, fresh ginger may be used in place of the pickled ginger. Just thought I'd mention that the chili sauce is hot. You may want to start with less and add to your taste. The total prep/cooking time is around 30 minutes...I was prepping as I was cooking (adding to the pan as I went along.

- Rinse lettuce leaves and pat dry. Set aside.
- Brown ground turkey in the oil in a medium skillet over high heat, stirring often. Drain excess liquid. Add cornstarch mixture; mix in well. Continue cooking, over med heat.
- Add chopped onion.
- Add garlic, soy sauce, hoisin sauce, ginger, wine vinegar, and chili sauce.
- Add water chestnuts, green onions, and sesame oil.
- Continue cooking until onions are transluscent in appearance (about 2 minutes or so).
- Arrange lettuce leaves around the outer edge of a large serving platter and place the meat mixture in a separate container in the center.
- To serve, allow each person to spoon 2 portions of meat onto a lettuce leaf ... wrapping the lettuce around the mixture like a burrito.
