Noodle kugel is a traditional Jewish sweet or savory casserole made with noodles. This sweet kugel has the perfect blend of fruits and spices and can be served warm or cold. While traditionally served as a side dish, try serving as a dessert with a scoop of plant-based vanilla ice cream on the side or even as a breakfast treat.

8 oz wide whole-grain ribbon noodles, cooked
12 oz silken firm tofu
½ cup date syrup
½ tsp vanilla extract
1 tsp cinnamon
¾ tsp ground cardamom
¾ tsp ground ginger
1 cup raisins or dried cherries
3 apples, cut into cubes
¼ cup applesauce
1 Tbsp freshly squeezed lemon juice

Steps:

  • Preheat oven to 425 degrees F.
  • Process tofu, date syrup, vanilla, cinnamon, cardamom, and ginger in a blender until smooth.
  • Pour the mixture in a large bowl and add the noodles, raisins, apples, lemon juice and applesauce. Mix well.
  • Place the mixture in 9 x 13 baking pan lined with parchment paper.
  • Bake for 25 minutes or until top is lightly browned.

1 (16 ounce) package cottage cheese
1 egg
2 egg whites

¼ teaspoon ground nutmeg
2 firm, tart apples - cored, quartered, and thinly sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square pan.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
  • Beat cream cheese and brown sugar together in a bowl using an electric mixer until smooth and creamy; beat in cottage cheese, egg, egg whites, vanilla extract, cinnamon, and nutmeg until well combined. Fold noodles and apples into cheese mixture by hand; spread into the prepared pan.
  • Bake in the preheated oven until kugel is lightly browned and firm, 45 to 50 minutes.

Defined as a baked pudding or casserole (usually from noodles or potatoes) this one is my own version of kugel, which is adapted from a few recipes to make one that we really love. This is a rich and sweet kugel although they also come in a savory version.

1 (12 ounce) bag egg noodles
1 (16 ounce) container sour cream
12 ounces farmer cheese
1 cup white sugar
1 cup unsalted butter, melted and cooled
6 large eggs, beaten
1 large apple - peeled, cored, and diced
¼ cup golden raisins, or to taste
½ teaspoon ground cinnamon, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13-inch baking pan.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain and set aside.
  • While noodles are cooking, mix sour cream, cheese, sugar, and butter together in a large bowl. Add eggs, apple, and raisins. Add drained egg noodles and cinnamon; stir until well combined. Pour into the prepared pan.

I love kugel, a Jewish noodle pudding. I used the ingredient list for RSC#18 to inspire this one. Instead of raisins, I used mango. The allspice & ginger add a nice little kick. This is very easy to assemble. My family really loved this & I hope you do, too!

6 ounces dried mango, diced
1 cup 10% cream
1 tablespoon fresh ginger, grated

8 eggs, beaten
1 tablespoon sugar
1/2 tablespoon cinnamon
1/2 teaspoon ground allspice

Steps:

  • Preheat oven to 350°F Grease a 9x13 pan.
  • Cook noodles until al dente, drain. Place in a large bowl, add butter & stir until melted.
  • Combine diced mango, cream, ginger & 1t allspice in a small saucepan. Bring to a boil. Turn off heat & allow to steep.
