4 (6 ounce) swordfish steaks
1 tablespoon canola oil

Steps:

  • Combine spices in small bowl.
  • Sprinkle mixture evenly over swordfish steaks, then lightly rub it in.
  • Heat oil in large skillet over medium high (maintain this heat throughout cooking).
  • Add fish and cook 3 to 4 minutes on each side, or until fish is no longer translucent in center.
  • Remove from the pan and serve immediately.

Cooking Notes: Ask your local fish monger to cut out as much of the bloodline as possible. Swordfish is best carved with an electric knife or very sharp serrated knife.

3 pounds boneless, skinless center-cut swordfish loin
1 tablespoon sea salt
2 tablespoons Fennel Spice Rub, recipe follows
1/4 cup extra-virgin olive oil
1 cup fennel seeds
3 tablespoons coriander seeds
2 tablespoons white peppercorns
3 tablespoons kosher salt

Steps:

  • Preheat oven to 350 degrees F.
  • Set a rack inside a baking sheet.
  • Season the swordfish with sea salt and the Fennel Spice Rub, pressing the spices into the flesh. Tie the swordfish crosswise at 3 evenly spaced places (not imperative but it will hold together a little easier).
  • Heat the olive oil in a 12-inch skillet over medium heat. Brown the swordfish on all sides, turning occasionally, about 15 minutes total.
  • Place the swordfish on the rack inside the baking sheet and roast until the internal temperature reaches 120 degrees F, or about 30 minutes. Allow the fish to rest at room temperature for 10 minutes before carving. Cut the strings to remove, and carve the swordfish crosswise into 1/2-inch slices.
  • Put the fennel seeds, coriander seeds, and peppercorns in a heavy pan over medium heat, tossing frequently so the seeds toast evenly. Watch carefully as they can easily burn.
  • When light brown and fragrant, pour the seeds onto a plate to cool. They must be cool before grinding, or they will gum up the blades.
  • Pour the seeds into a blender and add the salt. Blend to a fine powder, shaking the blender occasionally to redistribute the seeds. Store in a tightly sealed glass jar in a cool, dry place, or freeze.
  • Yield: about 1 1/4 cups

Kosher salt and freshly ground black pepper
1/4 pound fresh wax beans
1/4 pound fresh green beans
1/2 pound fingerling potatoes
Olive oil
Red and yellow sweet 100 tomatoes or cherry tomatoes, halved
1 medium red onion, thinly sliced
Spice Rubbed Swordfish, recipe follows
Vinaigrette, recipe follows
1/4 cup torn parsley leaves
2 tablespoons fennel seeds, toasted and ground
2 teaspoons mustard seeds, toasted and ground
2 teaspoons coriander seeds, toasted and ground
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 (8-ounce) swordfish steaks
Olive oil
1/4 cup red wine vinegar
1 tablespoon honey
1 clove garlic, finely chopped
1 tablespoon anchovy paste
Salt and freshly ground black pepper
1/2 cup extra-virgin olive oil

Steps:

  • Prepare a large bowl with ice water and set aside.
  • Bring a medium pot of cold water to a boil then season with a tablespoon of salt. Add the beans and cook for approximately 3 to 4 minutes or until just crisp tender. Drain and immediately plunge into the ice water to stop the cooking. Let sit in the ice water for a few minutes, and then drain well.
  • Place potatoes in a medium saucepan, cover with cold water and season with 1 tablespoon of salt and cook until almost cooked through (a knife or skewer inserted into the center goes in with a little resistance). Drain well and place on a baking sheet to cool slightly. Once cool enough to handle, slice potatoes lengthwise, brush with olive oil and season with salt and pepper. Place on the grill, cut side down and cook until golden brown, about 2 to 3 minutes, turn over and grill until just cooked through, about 1 to 2 minutes longer.
  • Place cooked beans, grilled potatoes, tomatoes, and onions, in a large bowl. Add the vinaigrette and gently toss to combine; season with salt and pepper. Cover and let sit at room temperature while you prepare the swordfish.
  • Add swordfish cubes to salad, toss to combine, and divide among 4 plates. Garnish each serving with 1 tablespoon torn parsley.
  • Heat grill to high.
  • Combine spices and salt and pepper in a bowl. Brush both sides of swordfish with oil and season with a little salt. Rub 1 side of each steak with 1/4 of the spice mixture. Place swordfish on the grill, spice side down and cook until slightly charred and a crust has formed, about 4 to 5 minutes. Flip the fish over and continue cooking for 2 to 3 minutes or until just cooked through. Remove from the grill and let rest 5 minutes. Dice swordfish into bite-size pieces.
  • Whisk together vinegar, honey, garlic and anchovy paste and season with salt and pepper. Slowly whisk in the olive oil and set aside.

1 large garlic clove, minced
Spice Rub
1/2 cup chopped onion
2 garlic cloves, chopped
2 teaspoons caraway seeds
2 teaspoons ground coriander
1/2 teaspoon cayenne pepper
6-ounce swordfish steaks (about 3/4 to 1 inch thick)
1 tablespoon olive oil
Lime wedges

Steps:

  • For Yogurt Sauce:
  • Whisk yogurt, chopped cilantro and minced garlic in small bowl to blend. Season with salt and pepper.
  • For Spice Rub:
  • Combine chopped onion, chopped garlic cloves, caraway seeds, ground coriander and cayenne pepper in bowl of processor. Process until onion and garlic are very finely chopped and past forms.
  • Spread spice rub on each side of swordfish steaks, dividing equally. (Yogurt sauce and spice rub-coated fish can be prepared 4 hours ahead. Cover separately and refrigerate.)
  • Prepare barbecue (medium-high heat) or preheat broiler. Brush grill or broiler pan and 1 tablespoon olive oil. Grill or broil swordfish steaks until fish is just cooked through, about 4 minutes per side. Transfer fish to plates. Top with dollop of yogurt sauce; garnish with lime wedges and serve.

2 teaspoons finely chopped onion
½ teaspoon ground black pepper
1 teaspoon Cajun seasoning
1 teaspoon chopped fresh cilantro
1 pinch cayenne pepper, or to taste
4 (8 ounce) swordfish steaks

Steps:

  • Combine olive oil, lemon juice, Dijon mustard, onion, black pepper, Cajun seasoning, cilantro, and cayenne pepper in a shallow glass baking dish. Add swordfish steaks, turning to coat with marinade. Cover and refrigerate for at least 30 minutes, turning occasionally.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Grill swordfish steaks for 5 to 6 minutes on each side until the fish flakes easily with a fork.
