This sweet potato, sausage and apple casserole is perfect for brunch or dinner. The crunchy top of the toasted bread combines winningly with a custardy filling studded with apples, sweet potatoes and savory sausage.

1 pound sweet potatoes, peeled and cut into 3/4-inch pieces
2 tablespoons water
1 tablespoon extra-virgin olive oil
1 medium Gala apple, cored and cut into 3/4-inch pieces
6 ounces mild Italian turkey sausage, casings removed (about 2 links)
1 small yellow onion, chopped
1 tablespoon finely chopped garlic
1 tablespoon fresh thyme leaves, plus more for serving
8 ounces day-old whole-grain bread, cut into 1-inch pieces (about 4 cups)
½ cup shredded Gruyère cheese
6 large eggs, lightly beaten
1 (12-ounce) can evaporated milk
2 teaspoons Dijon mustard
½ teaspoon ground pepper

Steps:

  • Preheat oven to 350°F. Coat a 9-by-13-inch baking dish with cooking spray.
  • Place sweet potatoes and water in a microwaveable bowl. Cover tightly and microwave on High until tender, about 3 minutes. Drain and let cool, about 10 minutes.
  • Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add apple, sausage and onion; cook, stirring often, until the sausage browns and the apple softens, about 6 minutes. Add garlic and thyme; cook, stirring constantly, until fragrant, about 1 minute. Remove from heat and let cool in the pan, about 10 minutes.
  • Combine the cooled sweet potatoes and the sausage mixture in a large bowl; add bread and Gruyère and toss gently. Whisk eggs, milk, mustard and pepper together in a medium bowl. Pour over the bread mixture and toss gently. Transfer to the prepared baking dish and cover with foil. Bake until the custard is mostly set, about 30 minutes. Remove the foil and continue to bake until the topping is golden brown and the custard is set, about 20 more minutes. Let stand for 10 minutes before slicing. Garnish with thyme leaves, if desired.

1 tbsp olive oil or avocado oil
1/2 tsp salt
1 medium sweet potato (peeled and cut into 1/2 inch cubes)
1/2 medium yellow onion (chopped)
2 apples ( cut into 1/2 inch pieces. I like to use Fuji or Granny Smith)
4 large pre-cooked chicken sausage links (if Whole30/Paleo is important, make sure sausage is compliant)
2 tsp fresh thyme (or 1/2 tsp dried thyme)
3 cloves garlic
1/2 tsp ground cinnamon
3/4 cup broth

Steps:

  • Heat oil in a large skillet over medium high heat. Once the oil is hot, add onions, sweet potatoes and salt. Cook, stirring occasionally until the onions are translucent and potatoes are fork tender. About 10 minutes
  • Stir in the apples, garlic, thyme, cinnamon and sliced sausage. Cook for 5 minute.
  • Add broth to skillet and bring to a boil. Cook until broth has evaporated. About 5 minutes
  • Serve and enjoy warm. Allow leftovers to cool and store in fridge for up to 3 days.

1 lb bulk pork sausage (regular, not hot or sage flavored)
1/2 cup onion, chopped
1/4 cup celery, chopped
1/4 cup green pepper, chopped
1 garlic clove, minced
1 (3 ounce) package cream cheese, cubed
2 tablespoons green onion tops, chopped
2 tablespoons fresh parsley, minced
1 (8 ounce) package refrigerated crescent dinner rolls
1 egg, lightly beaten

Steps:

  • In a skillet over medium heat, cook sausage, onion, celery, green pepper, and garlic unil meat is no longer pink and vegetables are tender; drain.
  • Add cream cheese, green onion and parsley.
  • Cook and stir over low heat until cheese is melted; set aside.
  • Unroll crescent dough on a greased baking sheet; press perforations together.
  • Roll into a 12 inch by 10 inch rectangle.
  • Spread sausage mixture in middle of dough, leaving 3 inches of dough free on long sides, and 1 inch free on end of dough.
  • On each long side, cut 3/4 inch wide strips 3 inches into center of dough.
  • Starting at one end, fold alternating strips at an angle, forming a braid over the filling.
  • Crimp ends of dough to close ends of braid.
  • Brush dough with egg.
  • Bake at 350F for 20-25 minutes, or until golden brown.

2 (2 2/3 ounce) Italian sausages
1 (16 ounce) package refrigerated pizza dough
1 1/2 cups marinara sauce
1/2 cup canola oil, divided

Steps:

  • Oil a large bowl with 2 tablespoons oil, place pizza dough in bowl turning once, let warm to room temperature.
  • In a 12 inch skillet on medium heat, heat 2 tablespoons of oil.
  • Remove casings from sausage links, break up meat into small pieces, and brown in skillet for 5 minutes.
  • Add diced potatoes, stir, and cover, Cook for 12 minutes, stirring every 3 minures. Cover skillet between stirring.
  • Prepare 15 1/2 inch by 10 1/2 inch rimmed baking pan by oiling pan with 2 tablespoons oil.

2 tablespoons butter
1 lb onion, thinly sliced
3/4 lb granny smith apple, peeled,cored & thinly sliced
3 tablespoons flour
1/2 cup chicken stock
3/4 cup fresh breadcrumb
3/4 cup sharp cheddar cheese, coarsely grated
6 slices bacon, cooked and crumbled

Steps:

  • Preheat oven to 350 degrees.
  • Butter 13X6 inch oval baking dish.
  • Melt butter in heavy large skillet over medium heat.
  • Add onions and saute until tender, about 10 minutes.
  • Toss apples with flour in medium bowl.
  • Arrange half of sweet potatoes in bottom of prepared dish.
  • Top with half of apple slices.
  • Arrange remaining potatoes and then remaining apples.
  • Cover with sauteed onions.
  • Pour stock over all.
  • Bake until sweet potatoes are tender, about 45 minutes.
  • Mix breadcrumbs, cheese and bacon in small bowl, then sprinkle mixture over potatoes.
  • Bake an additional 20 minutes.
  • Broil until topping browns, if needed.

2 (20 ounce) bags Simply Potatoes® Shredded Hash Browns
1 (8 ounce) package cream cheese
1/2 lb cooked sliced deli ham
12 slices bacon
3 cups shredded cheddar cheese

Steps:

  • Using a Large nonstick muffin tin press shredded potatoes into a large size muffin tin on the bottom and up the sides. Preheat oven 350 degrees place in oven for 10 minutes. Remove and let cool.
  • Crack 12 eggs whisk add 1 brick of softened cream cheese, 3 cups shredded cheddar cheese & 1/2 lb finely diced cooked deli ham, . Pour egg mixture into all 12 simply potato baskets & bake at 350 degrees for 30 minutes until eggs are done. Using a tooth pick test when it comes out dry they are ready to serve.
  • While baskets are cooking cook 12 strips of bacon place on papertowel pat dry then hang over a rack to bend into basket handles. When your Easter Egg Baskets are done remove from oven place 1 piece of bacon on each basket to look like a handle to a basket. Now just serve and enjoy! Yummy!

1 tablespoon salted butter
1 red bell pepper
1 (24 ounce) package Simply Potatoes Homestyle Slices
1 (12 ounce) package pepper bacon
4 eggs

Steps:

  • Pre-heat oven to 350 degrees. Use 1/2 tablespoon of butter to grease an 8 x 8 glass baking dish and set aside.
  • Cook peppered bacon until crispy and set aside to cool on a plate lined with a paper towel.
  • Julienne red bell pepper into 1 inch long slices. Heat 1/2 tablespoon butter in a non-stick skillet over medium-high heat. When pan is hot, add red pepper slices and sautee until they start to brown but aren't soft (about 3-4 minutes).

I wanted to make a brunch dish to serve to friends that was not filled with milk and cheese. This is the recipe I came up with!! It is a welcome addition to any weekend brunch. Enjoy!

1 apple pie (store bought)
1 lb maple breakfast sausage
1 1/2 cups egg substitute
4 cups Simply Potatoes Diced Potatoes with Onion
2 cups French bread, cut into 1/2 inch cubes

Steps:

  • Spray a shallow 3 quart casserole dish with a non stick cooking spray.
  • In a large skillet, cook the sausage, until cooked through.
  • Remove from heat and drain the sausage on paper towel, set aside.
  • Break apple pie into one inch pieces.
  • Place on the bottom of prepared casserole dish.
  • Top with cooked sausage.
  • In a large bowl, combine Simply Potatoes diced potatoes and bread cubes.
  • Pour egg substitute over all. Stir till just combined.
