10 cups air-popped popcorn
1 tablespoon butter
5 tablespoons instant vanilla pudding mix
1/3 cup light corn syrup
1 teaspoon vanilla extract
Dash salt

Steps:

  • Place popcorn in a large bowl. In a small microwave-safe bowl, melt butter; whisk in the pudding mix, corn syrup, vanilla and salt until smooth. , Microwave, uncovered, for 45 seconds or until bubbly. Pour over popcorn; toss to coat. Spread in two 15x10x1-in. baking pans coated with cooking spray., Bake at 250° for 25-30 minutes or until crisp, stirring once. Remove popcorn from pans to waxed paper to cool. Break into clusters. Store in airtight containers.

10 cups popped popcorn
1 cup broken miniature pretzels
1 cup candies of your choice, such as Almond Joy pieces or milk chocolate M&M's
1 cup chopped dried pineapple
10 ounces white candy coating, coarsely chopped

Steps:

  • In a large bowl, combine popcorn, pretzels, candies and pineapple. In a microwave, melt candy coating; stir until smooth. Pour over popcorn mixture; toss to coat., Immediately spread onto waxed paper; let stand until set. Break into pieces. Store in airtight containers.

You're just four ingredients and five minutes away from a fresh batch of homemade kettle corn! This salty-sweet popcorn recipe is dangerously snackable and quick enough to make on a whim.

2 tablespoons sugar
1/2 teaspoon salt
1 1/2 tablespoons vegetable oil
1/4 cup popcorn kernels

Steps:

  • Mix the salt and sugar, set aside: In a small bowl, combine the sugar and salt, and stir with your finger to combine. Set aside.
  • Heat oil, pop test kernels: Place a medium to large stockpot (at least 5 quarts) with a tight-fitting lid over medium high heat. Add the vegetable oil and 3 to 4 kernels of popcorn. Secure the lid.
  • Add popcorn and seasonings, stir to coat: Once the test kernels begin to pop, add the rest of the popcorn, along with the sugar and salt mixture. Stir quickly with a wooden spoon to combine (skip this step and you risk the sugar burning).
  • Shake the pot: Quickly replace the lid and continue cooking, constantly shaking the pot. At first there won't be any popping, but in less than a minute, the popcorn will begin to pop. Remove from heat when you smell a whiff of caramel, or the popping slows to 1 second between pops.
  • Empty kettle corn into bowl, let cool briefly: Moving swiftly, turn the popcorn into a serving bowl and let it cool a few minutes. If there's some melted or burned sugar residue in the pot, add a few cups of water, bring to a boil, and simmer, covered, for 5 minutes to dissolve the sugar; dump the hot water down the sink, and your pot should be in much better shape.
  • Pick out unpopped kernels, then enjoy: Before you dig in, sort through the kettle corn and pick out as many unpopped kernels as you can. A few stragglers often stick to clusters of the popped kernels. Serve warm, or, for maximum crunch and flavor, at room temperature. The kettle corn will keep three to four days in a tightly covered container.

2 tbsp vegetable oil
100g popcorn kernels
250g caster sugar
50g salted butter , cubed

Steps:

  • Put the oil in a large saucepan with a tight-fitting lid over a medium heat. Toss the popcorn kernels in the oil to coat. Put the lid on, and keep over a medium heat until you hear the first popcorn pop, then turn the heat to medium-low. When you begin to hear lots of popping, give the pan a shake. Continue to shake frequently until the popping stops. Turn off the heat and leave in the pan.
  • Line a large baking tray with baking parchment. Put the sugar and 60ml water into a medium heavy-based saucepan and bring to the boil. Stir until the sugar has dissolved, then leave over a medium heat, without stirring, for 6-8 mins. It should start to turn into a golden caramel, swirl it around and add the butter - stand back as it may spit a little. Stir well until combined.
  • Pour the caramel over the popcorn in the pan and stir immediately to coat the popcorn, being careful not to touch the hot caramel. Carefully transfer onto the lined baking tray and press down with the back of a spoon to spread evenly. Leave to cool for 5 mins, then break apart and eat.

3 quarts popped popcorn
4 cups Cheerios
4 cups Corn or Rice Chex
2 cups salted peanuts
1 cup packed brown sugar
3/4 cup corn syrup
1/4 cup butter, cubed
2 teaspoons vanilla extract
1/2 teaspoon baking soda

Steps:

  • In a large greased roasting pan, combine the popcorn, cereal and peanuts. In a large saucepan, combine brown sugar, corn syrup and butter; bring to a rolling boil. Boil for 6 minutes, stirring occasionally. , Remove from the heat; quickly stir in vanilla and baking soda until mixture is light and foamy. Immediately pour over popcorn mixture; mix well. Bake, uncovered, at 250° for 1 hour, stirring every 15 minutes. Cool completely.

1 tablespoon vegetable oil
4 tablespoons popcorn
1 teaspoon salt
1 tablespoon sugar

Steps:

  • Measurements are approximate. Use the quantities on your package of popcorn. Adjust salt and sugar to your taste.
  • Heat oil over medium high heat until shimmery in a 2 quart, heavy pot. (Make sure the pot has a lid!).
  • Add popcorn kernels to pan and put lid on.
  • Shake pan periodically until popping comes nearly to a stop.
  • Remove pan from stove.
  • Transfer popcorn to a big bowl, sprinkle on salt and sugar. Toss carefully, or put a lid over the bowl and shake.
  • Enjoy!
  • Variation: leave out the salt and toss in a tablespoon of cocoa powder!
