- Place sweet potatoes in 13x9-inch baking dish sprayed with cooking spray.
- Toss apples with apple juice and cinnamon until evenly coated; spoon over sweet potatoes. Cover.
- Bake at 375°F for 45 minutes. Uncover; sprinkle with walnuts. Bake an additional 15 minutes or until sweet potatoes are tender.

ROASTED SWEET POTATOES AND APPLES

Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
- Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes. When done, the apples should be soft and cooked through but still hold their shape. Sprinkle the walnuts over the apples during the last 5 minutes in the oven.
- Transfer the sweet potatoes to a large bowl and coarsely mash them with a potato masher. Stir in the cooked apples and walnuts. Taste and adjust the seasoning if needed.
- Serve immediately or keep in a warm oven and serve hot.

- Place sweet potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 30 minutes or until just tender. Drain and cool slightly. - In a large soup pot, boil potatoes until soft. Add sliced apples just 5 minutes before potatoes are done. Remove from heat. Drain.

- In a greased 1 1/2 quart baking dish, layer half of the sweet potatoes and apples.
- Combine brown sugar, nutmeg, allspice, salt, pepper, and walnuts (if desired); sprinkle half over apples.
- Dot with half the butter.
- Repeat layers.
- Cover and bake at 350° for 15 minutes.
- Baste with pan juice.

- Preheat the oven to 375°F. Line a baking sheet with foil. Prick some holes in the sweet potatoes with a fork and place them on the baking sheet. Bake sweet potatoes until very soft, about 1 ½ hours.
- While sweet potatoes are baking, in a food processor, combine the orange juice, coconut milk, vegan butter, cinnamon, nutmeg, salt, and pepper (I go heavy with the salt and pepper). Once the sweet potatoes are cooked and cool enough to handle, scoop out the flesh and add it to the food processor as well. Pulse the sweet potato mixture until totally smooth and evenly combined. Taste the mixture and adjust seasoning if necessary.
- Make the crunchy rosemary walnuts (preferably while the sweet potatoes are baking to save time). Line a baking sheet with parchment paper. Spread the chopped walnuts out on the baking sheet and toast in the oven (still at 375°F) for about 8-10 minutes, or until fragrant and golden brown. While walnuts are toasting, in a small bowl, stir together the rosemary, avocado oil, maple syrup, salt, and pepper.
- As soon as you remove the walnuts from the oven, pour the rosemary mixture over the top and carefully stir it in to combine with all of the chopped walnuts. Spread the rosemary walnuts out in a single layer and allow them to cool thoroughly.
