SWEET POTATO WALDORF SALAD
This Sweet Potato Waldorf Salad is a twist on the classic with the addition of sweet potatoes and cranberries providing a contrast of colors and textures.

Steps:
- Steam sweet potatoes until just tender, about 6 to 7 minutes. Do not overcook as you want the sweet potato pieces to hold its shape. Plunge into cold water. Drain.
- In a large bowl, toss apples and lemon juice. Add celery, raisins, cranberries, walnuts, and sweet potatoes. Sprinkle nutmeg over fruits and vegetables. Add mayonnaise and toss to coat.
- Chill for at least an hour before serving.
- To serve, place baby greens on a plate. Spoon salad onto baby greens.

- Toast walnuts in oven at 350 degrees until golden, about 10 minutes. Cool. Place walnuts, sweet potatoes, apple celery, grapes and blue cheese (if desired) in a large bowl.
- To make dressing, whisk apple juice, oil, vinegar, sugar and salt until blended. Pour over salad and toss well. Serve on a platter lined with red leaf lettuce.

- In a bowl, mix together the cornichons or relish, mustard, honey, celery, lemon zest and juice and red onion. Season with salt and pepper and let sit while the potatoes cook.
- Put the potatoes in a large saucepan and add enough cold water to cover by 1 inch. Season the water generously with salt. Bring to a boil over medium-high heat. Reduce the heat to a simmer and cook until the potatoes are tender, about 10 minutes.
- Drain the potatoes in a colander, put back in the saucepan, add the vinegar and, using a rubber spatula, toss gently to combine.
- Add the mayonnaise, chives and parsley to the celery-onion mixture and stir to combine. Add the warm potatoes to the dressing and toss. Season to taste. Garnish with extra chives and parsley.

Steps:
- Wash & peel the sweet potatoes, (Sometimes I peel 'em, sometimes I don't!) then cut them into 1-inch cubes & put them in a vegetable steamer.
- Steam over boiling water 10 to 15 minutes or until tender but still firm. Set them aside to cool.
- Scrub the apples, then core & cut them into 1-inch cubes. Put the cubed apples in a container with a lid, then add the lemon juice & sugar, tossing to coat the apples.
- In a large bowl, combine the raisins, nuts, salt, sweet potatoes & apples.
- In a small bowl, mix the yogurt & mayonnaise to make a dressing, then toss the dressing with the sweet potato-&-apple mixture before chilling & serving.

JENNY'S SWEET WALDORF SALAD
I couldn't ever find the perfect Waldorf salad - one that wasn't too mayonaise-y tasting, yet one that still held enough of the original flavor to be called a Waldorf. So I mixed and matched and experimented, and finally came up with a perfect twist on the classic Waldorf Salad recipe. Now I get requests for it at every family get together!

"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.
