Steps:
- Prepare stuffing mix according to box directions. Cool completely.
- Preheat oven to 350°F.
- Season pork chops with salt and pepper. Use a knife to butterfly the pork open and create a pocket for the stuffing.
- Place 1/3 cup stuffing into each pork chop and place in a casserole dish or 9x13 pan. If you have extra stuffing, place in the pan with the pork.
- Season each pork chop with pepper and top with condensed mushroom soup.
- Bake for about 35* minutes or until the pork is cooked and reaches 145°F with a thermometer.

- Cut a pocket in each chop by slicing almost to the bone. Fill each chop with 1/2 cup stuffing; secure with toothpicks if necessary. Sprinkle with pepper., In a large ovenproof skillet, brown chops in oil. Bake, uncovered, at 350° for 25-30 minutes or until a thermometer reads 160°. Remove pork chops and set aside. Keep warm., In the same skillet, cook garlic and thyme in pan drippings over medium heat for 1 minute. Add wine, stirring to loosen browned bits from pan. In a small bowl, combine flour and broth until smooth. Gradually add to pan. Bring to a boil; cook and stir for 2 minutes or until thickened., Remove toothpicks from pork chops; serve chops with gravy.

These amazing pork chops are stuffed with a delicious mixture of mushrooms, Italian sausage, Parmesan cheese and sage.

- Preheat the oven to 350°F.
- In a large bowl, toss the bread chunks with 1/2 cup of the olive oil and salt and pepper to taste. Spread on a baking sheet and toast in the oven, shaking the pan several times to insure even browning, for 5 to 6 minutes, until lightly browned. Let the bread cool for about 10 minutes, then transfer to a large bowl.
- In a large skillet, heat 2 tablespoons of the oil over medium heat. When hot, sauté the onion and garlic for about 3 minutes, or until the onion softens. Take care so the garlic does not burn. If it appears to be scorching, lower the heat.
- Add the sausage, sage, and marjoram and cook, stirring with a wooden spoon to break up the sausage meat, for about 10 minutes, or until the sausage is cooked through. Transfer to the bowl with the bread and set aside.
- Add 2 tablespoons of the oil to the skillet and heat over medium heat. When hot, add the mushrooms and cook, uncovered, for about 5 minutes, or until the mushrooms give off their juices, the juices evaporate, and the mushrooms begin to brown.
- Transfer the mushrooms to the mixing bowl. Add the Parmesan and parsley and mix well. Slowly add the stock, stirring to mix, and season to taste with salt and pepper. Cover the bowl and refrigerate until chilled. The stuffing can be made and refrigerated up to 2 days in advance.
- Meanwhile, prepare a clean, well-oiled charcoal or gas grill so that the charcoal is medium-hot or the heating elements are hot.
- Using a sharp knife, cut pockets into the chops by slicing horizontally into the thickest side, working the knife through the meat nearly to the other side. Wiggle the knife in the meat to make the pockets.
- Using your fingers or a spoon, stuff the pockets with the sausage mixture until overflowing. Tie the chops like a package with kitchen twine to hold the stuffing in place. Rub both sides of the chops with the remaining 2 tablespoons olive oil and season well with salt and pepper.
- Grill the pork chops, turning once with tongs, for a total 10 to 15 minutes, until browned and cooked through. If you are not sure the meat is done, insert an instant-read thermometer into the stuffing; it should read 165°F. Remove the string, let the chops rest for about 5 minutes, and serve.

- Trim fat from chops.
- Cut a 2 inch pocket in each chop.
- Sprinkle inside of each pocket lightly with salt and pepper.
- Set aside.
- Melt butter in a large skillet over medium heat.
- Add onion and mushrooms; saute until tender.
- Remove from heat.
- Stir in sage, salt, pepper, and bread crumbs.
- Add 1/3 cup sour cream or plain yogurt to mixture.
- Add enough broth/water to moisten and hold stuffing together.

MUSHROOM AND SAUSAGE STUFFING

- Preheat the oven to 375 degrees F.
- Coat a large wide pot with olive oil and toss in the celery and onions. Season with salt and cook the veggies over medium-high heat until soft and very aromatic, 8 to 10 minutes. Add the garlic and cook for an additional 1 to 2 minutes. Add the mushrooms and cook for 3 to 4 minutes.
- Add the sausage and cook, breaking it into really small pieces with a metal spoon or spatula, until it's really brown and yummy, 12 to 15 minutes.
- Add the white wine and cook until it has evaporated by half. (The mix will be pretty soupy, and that's okay.)
- Combine the bread with the sausage mixture in a large bowl. Toss in the walnuts and sage and pour about half the chicken stock into the bowl. Using your hands, work to combine everything well -- really get in there and squish it up; it's fun! Add the remaining stock as needed to create a really moist mix. Taste and season with salt, if needed.
- Transfer the mixture to a 9-by-13-inch baking dish and cover with foil. Bake until the stuffing is hot all the way through, about 30 minutes, then remove the foil and bake to brown the top, another 15 minutes.
ITALIAN SAUSAGE STUFFED PORK CHOP
Steps:
- Stuffing: In large a rondeau or heavy bottomed pot over medium-low heat, add butter and olive oil, then sweat onion, celery and garlic until translucent, about 3 minutes. Add sausage, and allow it to cook through, stirring often. Add spinach and toasted croutons. Mix well then add chicken stock, cream and parsley. Cook until thickens. Add cheese and season with kosher salt and freshly ground black pepper. Allow stuffing to cool.
- Pork Chops: Preheat oven to 400 degrees F.
- Make a 1-inch incision with a knife right next to the bone of the pork chop. Work the knife inside the pork chop to make a pocket for the stuffing. With a piping tool or simply with your hands, stuff the pork chop with the stuffing mixture until the pocket is packed well. Season the pork chop with salt and black pepper. Heat a large skillet and add oil. Sear both sides, about 1 minute. Place skillet in oven to roast for about 10 to 12 minutes, turning chops over half way through so as not to burn. Cook pork chop to medium, and the internal temperature registers 165 degrees F on an instant-read thermometer. Anything more than medium may dry out the chop.
STUFFED PORK CHOPS IN MUSHROOM CREAM SAUCE
These chops are stuffed with mozzarella cheese and fresh basil. They are lightly pounded to tenderize and cooked in a mushroom cream sauce with white wine. Serve with buttered egg noodles. This dish is inspired by an episode of Lidia's Italy (she made veal chops) that my husband saw. As you may know (or experience with your own DH) he didn't remember the ingredients or cooking times, but he wants what she made!

- Preheat oven to 350 degrees F.
- Cut a pocket in each pork chop by slicing the meat in half almost to the bone; pound lightly, with a kitchen mallet, on both sides to elongate pockets.
- Lightly season inside of pockets with salt and pepper; stuff with mozzarella cheese and fresh basil leaves.
- Secure pocket with wooden toothpicks, then pound edge to close edge.
- Heat a skillet over medium high heat; add oil and butter, then brown chops on both sides.
- Remove chops to a baking dish.
- Reduce heat to medium low and cook onions and mushrooms for 3 to 5 minutes; season with salt and pepper.

My husband wanted stuffed pork chops for dinner, but I had plans to use my oven. So I came up with a way to make them in my crock pot. I have an OVAL-shaped crock, and this worked well.

Steps:
- Flatten pork chops thin using either a meat hammer or rolling pin. You don't need them like paper, but just stretched enough that you can fold them in half.
- Pour stuffing mix in a bowl and add water.
- When stuffing has soaked up the water, mold into small balls and lay on half of pork chop.
- Fold pork chop over stuffing, and carefully lift into crock.
- Continue stuffing the other chops the same way.
- When all the chops are in the crock, go around lifting open the chops and adding more stuffing until all the stuffing is used. use toothpicks to hold pork chop halves together.
- Season tops of chops with Creole Seasoning to taste.
- Pour Cream of Mushroom Soup over top.
- cook on low 6 - 8 hours until done.
