Sweet Potato Smoothie image

This smoothie tastes just like sweet potato pie! It's healthy, filling, easy to make and so, so delicious you'll be wanting it every morning. I love drinking this smoothie through a glass straw but it's even better poured into a bowl, topped with granola and eaten with a spoon.

1 1/2 cups almond or cashew milk
1 cup cubed, peeled cooked frozen sweet potato (125 g)
1/2 frozen banana (60 g)
1/2 cup fresh or frozen zucchini pieces (75 g)
1 serving vanilla plant-based protein powder (30 g)
1/2 tsp cinnamon
1/2 tsp sea salt
1/4 tsp nutmeg
1 tbsp almond butter (15 g, optional)

Steps:

  • Add all ingredients to a blender in the order listed in the ingredients section.
  • Start blending on low then slowly increase speed and blend for about 30 seconds until completely smooth and creamy.
  • Pour into a glass and enjoy.

1 large sweet potato
1 banana
2 cups soy milk
¼ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake sweet potato in the preheated oven until tender and cooked through, about 1 hour. Remove peel from cooked sweet potato and cool in the refrigerator 8 hours or overnight.
  • Blend sweet potato, banana, soy milk, and cinnamon together in a blender until smooth.

My version of a recipe from Oxygen magazine. This tastes a lot like pumpkin pie! The cook time is the time to chill the potato.

1 small sweet potato
1 1/2 cups skim milk or 1 1/2 cups unflavored light soymilk
1 scoop vanilla whey protein powder
1 dash pumpkin pie spice

Steps:

  • The night before you want to make the smoothie, cook the sweet potato. I find the easiest way to do one potato is wash it well, prick it with a fork and microwave for 8-10 minutes, flipping over once. Let cool and store in the refrigerator over night.
  • When ready to make your smoothie, pull off the potato peel.
  • Blend all ingredients together until the mixture is smooth.
  • Enjoy!

1 1/2 cups cooked sweet potatoes
1 cup vanilla yogurt
1 cup apple cider (can also use 1 cup apple juice plus cider spices)
3 tablespoons ground flax seeds (optional)
cinnamon (to taste)

Steps:

  • Blend all ingredients well.
  • Freeze any portion you won't consume in the next day or two.
  • Serve warm or cold and ENJOY!
