1/4 cup oil (I'm using olive)
2 cloves garlic, sliced
1 onion, cut into large dice (I'm using yellow)
4 sweet potatoes, cut into large dice
2 tablespoons ground turmeric
1 tablespoon ground coriander
1 tablespoon coarse black pepper
One 28-ounce can tomato product, such as sauce, diced, crushed, etc. (I'm using crushed)
One 15-ounce can beans, rinsed (I'm using black)
1 can unsweetened milk (I'm using coconut milk)
1 cup liquid (I'm using vegetable stock)
1 cup nuts (I'm using walnuts)
Salt
1 lime, cut into wedges
Fresh cilantro, if you have it, for serving
Couple shakes favorite hot sauce, optional

Steps:

  • Heat a large saucepan over medium heat and add the oil. When hot, add the garlic and onions and cook until beginning to soften, about 2 minutes. Add the potatoes, turmeric, coriander and pepper and cook for 2 minutes. Add the crushed tomatoes, beans, coconut milk, vegetable stock and nuts and bring to a simmer. Cook until the potatoes are tender and the liquid thickens, 20 to 30 minutes. Taste and season with salt if needed.
  • Serve the stew in bowls with lime wedges for squeezing. Garnish with cilantro and hot sauce if using.

We have four grown children and will soon celebrate our 50th wedding anniversary!

3 cups water
4 medium potatoes, peeled and cut into chunks

2 small onions, cut into wedges
1/4 cup Worcestershire sauce
1 teaspoon dried oregano
1/2 teaspoon each dried basil, thyme and rosemary, crushed
1 bay leaf
Salt and pepper to taste
3/4 cup ketchup
1/2 large green or sweet red pepper, cut into chunks
1 tablespoon minced fresh parsley
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • In a Dutch oven, over medium heat, brown sausage; drain. Add the water, potatoes, carrots, celery, onions, Worcestershire sauce and seasonings. Bring to a boil. Reduce heat; cover and cook over low heat for 1 hour or until sausage is no longer pink and vegetables are tender. , Add the ketchup, green pepper and parsley; cook 12-15 minutes longer or until pepper is tender. Discard bay leaf. , Combine cornstarch and cold water until smooth; gradually stir into stew. Bring to a boil; cook and stir for 2 minutes or until thickened.

3 tablespoons olive oil, divided
8 good-quality sausages (Italian style if possible)
1 onion, sliced into thin half-moons
1 carrot, finely chopped
1 stick celery, finely chopped
Kosher salt and freshly cracked black pepper
4 cloves garlic, roughly chopped
2 sprigs fresh rosemary, finely chopped
8 new potatoes, halved or quartered, skin on
One 28-ounce can peeled plum tomatoes
Two 15-ounce cans butter beans, drained and rinsed
Sugar, to taste
Crushed red pepper flakes, to taste
One 5-ounce bag baby spinach
10 fresh basil leaves, cut into chiffonade
Zest of 1 lemon
Rosemary and Cheddar Soda Breads, recipe follows, for serving
Neutral oil, for oiling the baking sheet, optional
1 1/4 cups whole-wheat flour
1 1/4 cups self-rising flour, plus more for dusting
1/2 teaspoon baking soda
1/2 teaspoon salt
1 packed cup grated Cheddar (grated on the large holes of a box grater)
1 tablespoon finely chopped fresh rosemary
1 1/4 cups buttermilk

Steps:

  • In a large, heavy-bottomed Dutch oven, heat 1 tablespoon olive oil over medium-high heat. Add the sausages and sear on all sides until golden brown, 8 to 10 minutes. Remove from the pot and set aside.
  • Add the rest of the olive oil to the pot, turn the heat down to medium and add in the onions, carrots and celery. Add a pinch of salt, which will help draw some moisture out of the vegetables and keep them from browning too much. Cook gently, stirring often, until slightly softened, about 5 minutes, being sure to scrape up all the caramelized sausage bits on the bottom of the pot.
  • Add the garlic and rosemary and continue to sweat until the garlic is fragrant and translucent, about 5 minutes more. If the vegetables begin to brown, turn down the heat.
  • Add in the sausages, potatoes and plum tomatoes, breaking apart the tomatoes with a wooden spoon or your hands as they go into the pot. Fill the empty tomato can halfway with water, then add this water to the pot. Stir well and let simmer for 15 to 20 minutes, until the potatoes are cooked through, adding a few tablespoons of water if the sauce begins to look dry. Add in the butter beans and stir gently so as not to break up the beans. Taste the casserole and add salt, pepper, sugar and red pepper flakes to taste.
  • Just before serving, add in the spinach and stir until just wilted. Plate into individual bowls and garnish with basil and lemon zest. Serve with the Rosemary and Cheddar Soda Breads.
  • Preheat the oven to 400 degrees F. Lightly oil a baking sheet or line with parchment paper.
  • Sift the flours, baking soda and salt together in a bowl. Stir in the Cheddar and chopped rosemary. Make a well in the middle. Add the buttermilk and, using a fork, mix until just combined. This will give you a soft, sticky dough, which makes a nice moist loaf. With floured hands, divide the dough into 4, scrape each one onto the prepared baking sheet and pat into a light round. Using a chef's knife, deeply score each soda bread with a cross on top (this will allow the heat to penetrate the center of the dough).
  • Bake until the breads are dark golden all over and sound hollow when you tap the bottoms, about 30 minutes.

2 red bell peppers, chopped

salt and pepper, to taste

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, 12 to 15 minutes. Drain and set aside.
  • Heat oil in a large skillet over medium heat. Crumble sausage into skillet and cook, stirring frequently, until browned and no longer pink, about 7 minutes. Remove sausage with slotted spoon and drain on paper towels.
  • Pour off all but 1 tablespoon oil from the skillet. Heat oil over medium heat and add bell peppers, onion and garlic and cook until softened, about 7 minutes.

Steps:

  • Add the spice ingredients in a bowl. Mix Well. Set aside.
  • Add the red onion and red bell pepper in a Dutch Oven.
  • Saute on medium-high heat for 5-7 minutes.
  • Add the minced garlic.
  • Continue on medium heat for 30 seconds. Continue on medium-high heat and saute for 1-2 minutes.Add the mixed spice ingredients, sauteing for 30 seconds.
  • This will release the fragrance.
  • Slowly add the broth and water. Stir to mix. Add the diced tomatoes and tamari. Bring it to a boil. Stir well. Immediately lower the heat to a low simmering boil.
  • Stir in the cubed sweet potatoes, sausage, and the first can of the butter beans. Continue to simmer for 18 minutes. Add the parsley and miso. Stir to combine. Add the last can of butter beans. Stir well. Continue to simmer. Check to see if the sweet potatoes are tender. Taste Remove the bay leaf.
  • Garnish each bowl of stew with parsley before serving

This is an unusual combination, but my family really loved it and it became a "comfort food" overnight. The FRESH rosemary makes the difference. I haven't tried the recipe with dried rosemary. I had bought some fresh at the store recently and decided to try new things using it; that's how this recipe was born.

2 large sweet potatoes, fresh
4 slice bacon, chopped
8 oz turkey breakfast sausage, crumbled
1 medium onion, chopped
2 Tbsp olive oil
2 Tbsp butter
3/4 tsp salt
1/2 tsp pepper
2 clove garlic, minced
1 Tbsp fresh rosemary, finely chopped
1 1/2 c chicken or vegetable stock

Steps:

  • 1. Use a very large skillet. Peel and dice the sweet potatoes (about 1/2-inch dice). Chop the bacon and crumble the sausage. Dice the onion and mince the garlic.
  • 2. Cook the bacon, sausage and onion in the olive oil over medium high heat until bacon begins to crisp and sausage is cooked.
  • 3. Add the butter and the sweet potatoes. Saute the sweet potatoes until they are slightly browned in the butter, but do not let the butter get too brown or burn.
  • 4. Stir in the salt, pepper, garlic, rosemary, and chicken stock. Combine well, cover, and simmer about 15-20 minutes or until sweet potatoes are done to your liking. Taste for seasoning before serving.

SAUSAGE STEW

This recipe is simple and flexible because you can substitute ingredients you have on hand, and it still turns out delicious. I didn't have dry white wine but substituted a bottle of beer. I didn't have enough potatoes so I added some cubed frozen hashbrowns. Surprisingly, I used half the onions (and I love onions), but maybe we just grow our onions bigger in Idaho. I also added a couple cups of white beans just for flavor and used linguica sausage instead of sweet Italian because it's what I had. I left the cheese out of the pot to add separately so there wasn't a cheese covered pot to clean. You could add zucchini or whatever vegetable you felt like if you didn't want to use green beans. Steps:

  • Heat oven to 425F / 218C degrees.
  • Heat a Dutch oven over medium-high heat. Add cooking oil and then onions, kale stems and a pinch of salt. Saute for 2 to 3 minutes, until softened.
  • Add potatoes and sausage and saute to break sausage apart and allow it to release oil, 3 to 4 minutes more.
  • Pour in tomato paste, stock and bay leaves. Simmer stew until potatoes are tender, 8 to 10 minutes.
  • While stew simmers, place toast on a sheet pan. Brush with olive oil and top with cheese slices. Bake in the oven until toast is golden around the edges and cheese is melted, 5 to 6 minutes.
  • Slice cheese toast into quarters.
  • When stew is done, remove from heat and stir in kale leaves and lemon juice. Taste and season with some salt and pepper and more lemon juice, if needed.
  • Ladle stew into bowls and top with yogurt. Serve with cheese toast on the side and enjoy!

1 lb hot Italian sausage
2 sweet potatoes (peeled and cubed)
1/4 cup sweet onion (minced)
2 garlic cloves (minced)
1 (28 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
4 cups water
1/2 teaspoon beef bouillon powder (1/4 cube)
1 (16 ounce) bag fresh spinach
2 sprigs fresh thyme (left intact)
1/2 teaspoon oregano
salt and pepper

Steps:

  • Brown the sausage and onions in a stock pot. Add in the garlic and stir for 2 minutes or until fragrant.
  • Add in sweet potatoes, tomatoes, beef bouillon powder tomato sauce, thyme sprigs, oregano and water. Bring mixture to a low boil and cover cooking for 30 minutes.
  • Add in the spinach, salt and pepper to taste and cover cooking for an additional 2 minutes.
  • Ladle in large shallow bowls and serve with corn bread or corn muffins.

6 links sweet sausage or 6 links hot sausage, sliced about 3/4
2 small green bell peppers, chopped coarse
1 large onion, sliced 1/2 thick
2 potatoes, peeled and cubed about a 1/2 inch
1 (28 ounce) can diced tomatoes
1 (28 ounce) can tomato sauce
4 ounces tomato paste
2 teaspoons oregano
2 teaspoons basil
2 teaspoons parsley
4 tablespoons olive oil
2 -3 garlic cloves, peeled and chopped fine
3 tablespoons of grated romano cheese
1 cup water

Steps:

  • Heat olive oil to a medium high heat in Dutch oven or heavy pot. Add the sausage and cook on all sides. About 15 minutes.
  • Add garlic and stir for a minute or two. Add peppers and onions, stirring to coat with oil. Add tomato paste, diced tomato, potatoes and tomato sauce. Stir to combine.
  • Add seasonings, cheese, and water. Stir once more. Bring to a simmer and cook for about 45 minutes.
  • Potatoes should be tender. Sprinkle liberally with Romano cheese. Serve with garlic bread and a salad. Makes 6 servings.

1 1/2 pounds veal or pork sausages
3/4 pounds sweet Italian sausages
4 onions, sliced
2 bell peppers, chopped
6 garlic cloves, chopped
1 cup dry white wine
1 pound boiling potatoes, peeled, cubed
1 16-ounce can stewed tomatoes
1 14 1/2-ounce can chicken broth
1/4 cup tomato paste
1 10-ounce package frozen green beans
1 teaspoon dried oregano, crumbled
1 teaspoon dried basil, crumbled
1 teaspoon dried marjoram, crumbled
1 cup shredded mozzarella
1 cup shredded cheddar
1/4 cup grated Parmesan

Steps:

  • Heat heavy 4-quart saucepan over medium-high heat. Add sausages and cook until brown, turning occasionally, about 30 minutes. Transfer sausages to plate; cool slightly. Cut into 1-inch pieces.
  • Remove all but 2 tablespoons fat from saucepan. Add onions to saucepan and sauté over medium heat until tender, about 15 minutes. Add bell peppers and garlic and continue cooking until bell peppers just begin to soften, about 5 minutes. Pour in wine and boil 1 minute. Add potatoes, tomatoes, broth and tomato paste. Simmer until potatoes are tender, stirring occasionally, about 10 minutes. Stir in green beans, sausages and herbs. Cover and cook 15 minutes. Add all cheeses and stir.
