6 Chicken drumsticks
7:2:2 Seasoning or salt and pepper (to taste)
cayenne pepper (optional - to taste)

Steps:

  • Preheat grill to get a surface temp of about 450°. That is medium-high on a standard gas grill and medium on a hot gas grill. Clean and oil.
  • Pat dry the drumsticks. Trim off excess skin and any loose bones/tissue especially in the joint area.
  • Season to taste. You can use my 7:2:2 spice mix. A little cayenne is nice. You may want to skip the cayenne if cooking for little ones. Or use the seasoning of your choice.
  • Let rest at room temperature until grill is ready.
  • Check grill temp if possible and place chicken on the grill. Flip about every 5 minutes until internal temp of 180°-185° degrees. About 30-35 minutes.
  • Let rest for 5-10 minutes before serving. They are way too hot anyway.

¾ cup Gochujang
2 tbsp olive oil
2 garlic cloves (crushed )
2 tsp lemon juice
2 tsp honey
3 tbsp soy sauce

Steps:

  • Whisk together gochujang, oil, soy sauce, honey, lemon juice and crushed garlic.
  • Pour 3/4 of the marinade/glaze over the chicken and rub in, making sure every piece is coated. Set the remaining marinade aside for grilling.
  • Cover and allow to marinate for at least 30 minutes but up to 24 hours in the fridge.

1 Scotch bonnet chile
2 garlic cloves (chopped)
1/4 cup brown sugar
1 lime (juice of)
1 2" piece fresh ginger (peeled and chopped)
1 tbsp allspice
1 tbsp Chinese five-spice powder
1 tbsp black pepper
1 tbsp fresh thyme leaves
1 tsp nutmeg
1 tsp salt
1/2 cup soy sauce
1 tbsp vegetable oil
12 chicken drumsticks

Steps:

  • Put all ingredients except the chicken in a food processor and process until smooth.
  • Put the chicken into a re-sealable plastic bag and pour the marinade over it.
  • Seal the bag and massage it to make sure all of the chicken is covered. Refrigerate overnight or 6-8 hours
  • Heat barbecue grill to high and spray with cooking spray
  • Remove drumsticks from marinade and transfer to a platter. Discard marinade.
  • Place chicken drumsticks on the grill and allow to sear, about 2 minutes per side.
  • Turn grill heat to low, close the lid and grill the chicken, turning occasionally, until internal temperature at the thickest part of the drumstick reads 170°, about 40 minutes. Serve hot, with lime wedges.

10 fresh thyme sprigs
1/4 cup vegetable oil, plus more for the grill

Steps:

  • Combine the chile, scallions, thyme, vegetable oil, brown sugar, vinegar, allspice and cloves in a large bowl and mix until the sugar dissolves.   • Pat each chicken drumstick with a few paper towels to fully dry the skin. Drizzle the chicken with oil and season with the spice blend. Mix well to coat each piece of chicken thoroughly.
  • Gas grill: Preheat your grill to medium-high heat (about 400°F). Add the chicken drumsticks to clean, well-oiled grates, and cook. Turn each piece after a few minutes, until the skin is browned and crispy on all sides. Lower the heat to medium low (about 300°F), and close the grill. Cook for about 25 minutes, stopping halfway through to turn the chicken once.Charcoal grill: Create two heat zones (one with medium high heat and one with medium-low heat) by moving most of the charcoal to one side of the grill. ¼ cup brown sugar
6 garlic cloves, minced
1 tablespoon onion powder
2 teaspoons smoked paprika
1 teaspoon dry mustard

¼ cup olive oil
¼ cup apple cider vinegar
Grill spray

1 cup dark brown sugar, packed

  • Bring wine, sugar, soy sauce, ginger, and garlic to a boil in a saucepan.

6 chicken drumsticks (skinned)
For the marinade:
1 tablespoon full-fat yogurt
1 teaspoon Kashmiri chilli powder (see notes)
1/2 teaspoon turmeric powder (haldi)
1/3 teaspoon chaat masala
1/2 teaspoon garam masala (see notes)
Juice of half a lime
1 teaspoon ghee (can be replaced with melted butter)
salt to taste
1 teaspoon ginger and garlic paste (see notes)
For the yogurt dip:
Finely diced cucumber
1/3 cup Greek yogurt
1/4 teaspoon cumin seeds
1 tablespoon goats cheese (can be replaced with sour cream)
For the roasted vegetables:
3 medium sized potatoes (skinned and cut into cubes)
2-3 asparagus stalks (cut into 1" pieces)
1 carrot (skinned and cut into cubes)

Steps:

  • Clean the chicken drumsticks and pat them dry on a kitchen towel.
  • Combine all the ingredients listed under marinade and transfer to a large food-safe zip lock bag.
  • Add the chicken legs to the bag and seal the bag.
  • Toss the marinade with the chicken, making sure the chicken is well coated in the marinade.
  • Keep the bag with the marinated chicken in the fridge for at least 30 minutes.
  • In the mean time, preheat your oven to 190 C, and prepare the roasted vegetables.
  • In a baking pan lined with foil, add the potatoes and oil.
  • Toss the potatoes in the oil and let it bake for 10 minutes.
  • After the 10 minute mark, add the asparagus, carrots, paprika, salt, and toss it with the baked potatoes.
  • Return to the oven for 10 minutes more, until the potatoes are golden, and the carrots are just baked.
  • Serve the roasted vegetables with a finish of truffle oil.
  • Prepare the yogurt dip:
  • In a pan on the stive top, lightly roast the cumin seeds for a minute.
  • In a mixing bowl, mix together all the ingredients for the dip and garnish with the roasted cumin.
  • Prepare the chicken:
  • Preheat your grill (I used a stove-top grill pan).
  • Add the marinated chicken and cook on all sides for a total of 30 minutes on medium heat, until done.
  • Let the chicken rest before serving.
  • Serve with a side of roasted vegetables and yogurt dip.

¾ teaspoon kosher salt
½ teaspoon ground black pepper
¼ teaspoon garlic powder (optional)
2 lbs chicken drumsticks ((6 drumsticks - see note))
High-heat oil (for oiling grill grates)
½ cup BBQ sauce ((your favorite variety))

Steps:

  • Add salt, pepper, and garlic powder, if using, to a small bowl and stir to combine evenly.
  • Pat chicken drumsticks dry with a paper towel, then seasons all sides evenly with the spice mix.
  • Dip a paper towel into a high-heat, neutral-flavored oil such as canola, vegetable, or corn, and using tongs, rub it along the grill grates to prevent sticking. It's easier to do this before turning the grill on.
  • Heat one side of the grill to the 400-425°F range, then arrange drumsticks close together on the turned off side of the grill to cook over indirect heat. Alternating the fat and thin sides of the drumsticks allows them to fit on the grill more compactly.

1 lb. chicken legs (~6 legs)
2 tablespoons garlic powder
2 teaspoons onion powder
2 teaspoons coconut sugar
1 teaspoons paprika
1 teaspoon chili powder
1/2 teaspoon ground chipotle powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground mustard seed
1/2 teaspoon table salt
1/4 teaspoon ground pepper
Optional: 1/2 cup bbq sauce, for serving

Steps:

  • Preheat grill to 425ºF.
  • Then, prepare chicken dry rub by mixing together all of the spices in a small bowl. You should get around 4.5 tablespoons of dry rub.
  • Prep chicken legs (leave the skin on) by fully coating each leg with 1-2 teaspoons of dry rub. Use your hands to pat the spices into each part of the leg and make sure that every part is fully coated. You may have leftover dry rub. This is okay! Store it in an airtight container for up to 3 months.
  • Spray your grill grates with nonstick cooking spray (or rub with olive oil) and then grill chicken legs over direct heat at 425ºF (medium-high heat) for around 15-20 minutes or until the legs have reached an internal temp of 160ºF - 165ºF. Rotate the legs every 5 minutes.

1 (1 ounce) package ranch dressing mix
1 pinch cayenne pepper, or to taste
salt and ground black pepper to taste

Steps:

  • Place chicken drumsticks into a resealable bag; add olive oil to coat. Add ranch dressing mix, cayenne pepper, salt, and black pepper. Close the bag and mix until drumsticks are covered. Let marinate in the refrigerator, 30 minutes to 1 hour.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken from the bag; discard marinade.

If you love to grill, this simple meal is perfect for you! No need to even measure, just mix up your favorite seasonings, season however many drumsticks you want to make, and grill.

chicken drumsticks (skin on, enough to fill half of your grill)
Salt and pepper to taste
Garlic to taste
Parsley to taste
Paprika to taste
Cumin to taste

Steps:

  • Heat your entire grill to high. If using charcoal you'll want your grill to be as hot as possible.
  • Rinse and pat dry drumsticks.
  • Season your chicken generously. No need to be shy here, if for some reason you over season or use a flavor combination you don't care for, just remove the skin when you sit down to eat it.
  • Lubricate your grill with oil by using a well saturated piece of paper towel and grill tongs, or half an onion dipped in oil. Be careful of flames.
  • Arrange the chicken on one half of the grill. Do not over crowd.
  • Let it cook on the high heat for 3 minutes. Turn off the burners directly below the chicken, leaving the other half of the burners on high. The chicken will cook by indirect grilling.
  • If your grill is charcoal rake the coals to one side. Cook the chicken above the hot coals for 3 minutes then move the chicken to the other side of the grill. Make sure your grill vent is set for high heat.
  • Close the lid and leave the chicken alone for 30 minutes.
  • After 30 minutes flip the chicken, and rotate the chicken from the far side of the grill to be nearer to the flame or coals. You're not putting the chicken over the heat, you're just moving around the chicken on the one side of the grill.
  • Cook the chicken for an additional 15 minutes.
  • At this point it should be done, however check with a meat thermometer in the thickest part of the meat.
  • If it needs additional cooking time close the lid and check back in 5-10 minutes. If you'd like to speed up the cooking time you could finish the chicken over your heat source, but I highly recommend continuing with indirect grilling.

1 cup orange juice
1 teaspoon black pepper
1 tablespoon cornstarch

  • In a gallon freezer bag, combine first 4 ingredients. Toss to coat. 2 hours or up to overnight. Prepare grill to medium heat. Remove chicken from bag; set aside. Place marinade in small saucepan over medium heat. Bring to a boil. In small bowl, whisk together cornstarch and water; slowly whisk into marinade until it reaches desired consistency. Set aside. Place chicken on grill. Grill chicken, brushing with marinade and turning occasionally, until internal temperature reaches 165°F on an instant-read food thermometer, about 25-30 minutes.
